I am a beef jerky lover. I noticed that Recipezaar does not have too many choices and when I look for ones using Google, it is overwhelming to find one out of millions.....So I decided to create my own and let me tell you...this is the best jerky I have ever had and am glad I can share it with all of you. Plus, this was made in a conventional oven! Please let me know your thoughts by commenting after you make it. Thank you.

Number Of Ingredients 16

5 lbs beef flank steak (or cut of your choice, just ensure you trim the fat)
2 cups Worcestershire sauce
1 1/2 cups teriyaki sauce
3 teaspoons liquid smoke
1 cup soy sauce
4 teaspoons onion powder
2 teaspoons garlic powder
1 teaspoon cayenne powder
4 teaspoons black pepper
1 tablespoon sea salt
1 1/4 tablespoons red pepper flakes
4 tablespoons brown sugar
2 tablespoons honey
1 tablespoon maple syrup
3 bamboo skewers
aluminum foil

Steps:

  • Flash freeze beef for 20 minutes on cookie sheet during ingredient mixture.
  • Mix ingredients in extra large bowl with whisk until completely blended.
  • If beef is more than one inch thick, slice across to create equal thickness.
  • Cut beef between 1/8 - 1/ 4 inch thick slices, in addition to trimming as much fat off the meat as possible.
  • Incorporate beef into ingredients to cover.
  • Marinate beef overnight.
  • Pat dry beef slices and skewer beef onto bamboo, ensuring small space between slices for thorough dryness and leaving one inch on each end.
  • Hang beef skewers across oven rack so beef hangs freely.
  • Cover entire oven rack with skewers of meat.
  • Place aluminum foil on oven rack #2 at very bottom of oven to help catch drippings.
  • Set oven to lowest temperature (170 degrees in my case) and leave door ajar on hinge, letting beef sit for approximately 5-6 hours or until dry.
  • Check beef a few times throughout to ensure it is not actually baking, but simply drying out.
  • Once finished,
  • Let beef skewers rest for 10 minutes after drying, and then remove skewers from oven rack and let sit on tray until cool.
  • Remove beef strips from skewers and store them in an airtight container.

¾ cup soy sauce
1 tablespoon smoked paprika, or to taste

2 pounds beef top round, thinly sliced

Steps:

  • Whisk Worcestershire sauce, soy sauce, paprika, honey, black pepper, red pepper flakes, garlic powder, and onion powder together in a bowl. Add beef to bowl and turn to coat beef completely. Cover the bowl with plastic wrap and marinate in the refrigerator, 3 hours to overnight.
  • Preheat oven to 175 degrees F (80 degrees C). Line a baking sheet with aluminum foil and place a wire rack over the foil.
  • Transfer beef to paper towels to dry. Discard marinade. Arrange beef slices in a single layer on the prepared wire rack on the baking sheet.
  • Bake beef in the preheated oven until dry and leathery, 3 to 4 hours. Cut with scissors into bite-size pieces.

The following beef jerky recipes are for 2 pounds of beef steak, sliced into ¼ thickness, and presoaked for 10 minutes in 5% strength white vinegar to reduce bacterial contamination. Then drained. The ideal beef steak to use is a marinating steak that is 1 to 1 ½ inches thick with low fat, to reduce waste. Smoked salt gives the jerky a smoky flavor without the need for a smoker. You can also use liquid smoke in this recipe instead of the smoked salt. Use 1 teaspoon of liquid smoke per recipe.

Steps:

  • Mix all the ingredients together until the salt is dissolved in the liquid.
  • Place prepared jerky meat in a glass container with a tight-fitting lid. Pour the marinade over the jerky in the container. Ensure that the meat is fully covered. Add more water if necessary to completely cover the meat. Place the meat in the container in a refrigerator for 4 hours or overnight.
  • Drain the meat from the marinade, discarding the marinade. Place the meat evenly on dehydrator trays and dry at 165F for 4 to 6 hours until jerky tests done.
  • Place the jerky in a 225 F oven for 10 minutes to kill any pathogens on the meat. Cool completely. Store in an airtight container.

2/3 cup Worcestershire sauce
2/3 cup soy sauce
1 tablespoon honey

Steps:

  • Trim the flank steak of any excess fat, place in a zip-top bag, and place it in the freezer for 1 to 2 hours in order to firm up.
  • Remove the steak from the freezer and thinly slice the meat with the grain, into long strips.
  • Place the strips of meat along with all of the remaining ingredients into a large, 1-gallon plastic zip-top bag and move around to evenly distribute all of the ingredients. Place the bag into the refrigerator for 3 to 6 hours.
  • Remove the meat from the brine and pat dry. Evenly distribute the strips of meat onto 3 of the air filters, laying them in the grooves and then stacking the filters on top of one another. Top these with 1 empty filter. Next, lay the box fan on its side and lay the filters on top of it. Strap the filters to the fan with 2 bungee cords. Stand the fan upright, plug in and set to medium. Allow the meat dry for 8 to 12 hours. If using a commercial dehydrator, follow the manufacturer's directions.
  • Once dry, store in a cool dry place, in an airtight container for 2 to 3 months.

I have been making jerky for years. This is my recipe concocted by trial and error. Everyone who has tried it says it is the 'best jerky' they have ever had! My dehydrator is designed for jerky. It takes me about 4 hours to dry the meat. This could also be done in the oven or using other dehydrators. Please check your manual for correct times as each machine is different. I hope you enjoy this jerky as much as me and my family do.

¼ cup soy sauce

Steps:

  • In a small bowl or cup, mix together the onion powder, garlic powder, and some cracked black pepper. Season the meat lightly, using only part of the mixture. Reserve the remaining spices. Place into an airtight plastic container or bowl, and refrigerate.
  • In a saucepan over medium heat, mix together the brown sugar, soy sauce, teriyaki sauce, Worcestershire sauce, balsamic vinegar, liquid smoke flavoring and pineapple juice. Heat until the brown sugar has completely dissolved. Refrigerate marinade until cool.
  • Pour cooled marinade over the seasoned meat, and mix by hand to coat. Seal the bowl, and refrigerate for at least 3 hours.
  • Arrange the beef strips on the rack of a dehydrator, and sprinkle with a little bit more of the spice mixture and red pepper flakes if using. Dry for 5 hours, or to your desired dryness.

This is the best homemade beef jerky recipe, and it's easy to make without any special equipment.

One 3-pound eye of round roast (see note), trimmed of fat and silver skin
1 cup (packed) dark brown sugar
1 cup soy sauce
3 tablespoons Worcestershire sauce
1 tablespoon smoked paprika
1 teaspoon unseasoned meat tenderizer (see note)
1 teaspoon freshly ground black pepper
1 teaspoon red pepper flakes
1 teaspoon onion powder
½ teaspoon garlic powder

Steps:

  • Slice the meat between ⅛ and ¼ inch thick with the grain. (If the roast is too thick to slice easily, cut it in half horizontally before slicing.)
  • Make the marinade: In a medium bowl, combine the brown sugar, soy sauce, Worcestershire sauce, smoked paprika, meat tenderizer, black pepper, red pepper flakes, onion powder, and garlic powder. Whisk until evenly combined and the sugar is dissolved.
  • Add the meat to the marinade and toss until all of the pieces are evenly coated. Cover with plastic wrap or transfer to a large ziplock bag and marinate in the refrigerator for at least 12 hours or overnight. Toss the meat (or flip the bag) once or twice to be sure the meat marinates evenly.
  • Line two baking sheets with aluminum foil for easy clean-up. Place a wire rack over each pan. Preheat the oven to 175°F and set two oven racks in the centermost positions.
  • Arrange the marinated meat on the wire racks in a single layer. Bake, rotating the pans from front to back and top to bottom midway through, until the meat is dried out, 3 to 4 hours. To determine if the jerky is thoroughly dried out, take a piece out of the oven and let it cool to room temperature. It should be dry to the touch, leather-like in appearance, and chewy but still somewhat tender.
  • Store the jerky inside an airtight plastic container, Ziploc bag, or airtight glass jars. Properly dried jerky will keep at room temperature for about one week. Refrigerate or freeze for longer storage.
  • Note: Pop the meat in the freezer for 1 to 2 hours before slicing; it will be easier to cut.
  • Note: Meat tenderizer contains bromelain, an enzyme that breaks down meat tissue. You can find it in the spice section of your supermarket. (I use McCormick.)

  • Slice the pan of beef into jerky strips 4-5" long and 1" thick
  • Dry with your favorite jerky making method. I used a dehydrator at 160F for 3 1/2 hours
  • Ground jerky is finished when it first starts becoming dry to the touch. It should bend without breaking in half. If it cracks in half when bent a little bit, it was over dried

1 lb Beef Eye of Round or Venison
1 1/2 tsp pickling salt (or sea salt)
1 1/2 tsp brown sugar
1 1/2 tsp ground black pepper
1/2 tsp onion powder
1/2 tsp garlic powder
1/4 tsp coriander (ground)
1/2 cup cold water
1/4 tsp Prague Powder #1 (curing salt)
1/2 tsp liquid smoke (mesquite)

Steps:

  • Trim all visible fat from the beef and place in freezer for an hour or two to partially freeze.
  • While the meat is in the freezer, combine the pickling salt, curing salt, coriander, onion powder, garlic powder, liquid smoke, black pepper, sugar, and cold water in a medium size bowl or ziplock bag. Mix well.
  • Remove the meat from the freezer and slice 1/4" strips with the grain. Or skip the freezing phase and use a jerky slicer for evenly sliced strips.
  • Tenderize the beef strips with a tenderizing mallet to prevent the jerky from being too tough.
  • Add sliced beef to the mixture and marinate for 6-24 hours in the refrigerator.
  • After the meat has finished marinating, remove from refrigerator and pat dry with paper towels.
  • A Dehydrator was used with this recipe and dried for 7 hours at 160 degrees. You can also use a smoker or your oven.

1/4 cup soy sauce
2 tablespoons worcestershire sauce
2 tablespoons brown sugar
2 teaspoons salt

1 teaspoon smoked paprika
1 teaspoon black pepper
1 teaspoon meat tenderizer (*optional)

Steps:

  • Thinly slice the meat* and cut off all visible fat.
  • Pound slices with a meat tenderizer mallet until pieces are uniform thickness (aprox nickel width).
  • Place the beef strips in a zip-top bag. Mix remaining ingredients and pour over beef.
  • Cover & marinate for 12-36 hours. Shake the bag a few times as it's marinating to make sure the beef is evenly coated.
  • Spread the meat in a single layer, shaking off any excess marinade, on the dehydrator trays.
  • Dry at 165F/74C for 4-6 hours, occasionally blotting off any fat droplets that appear on the surface. Test using a cooled piece. Properly dried jerky, when bent, should crack but not break.
  • Package jerky in and air-tight container or vacuum seal (*see storage notes below). Store in a cool, dark & dry place.

1/2 teaspoon granulated sugar

Steps:

  • Trim all fat from the beef, then freeze for 1-2 hours.
  • Slice beef against the grain in long, thin strips no thicker than ¼ inch.

  • Start with a lean piece of meat. The goal is to find a piece of meat that has as little fat as possible.
  • Trim off the fat cap and other visible fat from the meat. Fat will make meat spoil faster, so removing as much fat as possible now will extend the shelf life of your finished beef jerky.
  • Place the beef in the freezer for 1-2 hours to partially freeze for easier uniform slices. Your meat should be hard to the touch but not fully frozen.
  • Finish slicing all of your meat and set aside. Now it's time to get the marinade ready. Mix all of the ingredients together in a bowl or ziplock bag and stir well.
  • Add the beef strips and shake the container so all the meat is evenly covered with the marinade. Marinate in the refrigerator anywhere from 6 to 24 hours for great flavor, the longer the better.
  • After marinating, drain and pat dry the jerky strips to remove any excess marinade before dehydrating. This helps in speeding up the dehydration process.
  • It's time for the easy part! As I mentioned above, I used my Excalibur Dehydrator for this batch. Place the beef strips on the racks making sure that they are not touching or overlapping.
  • Beef jerky takes around 4-5 hours to dry when dehydrating. Turn the dehydrator to 165° and let it run for about 4 hours until the internal temperature of the jerky reaches a safe 160° as per guidelines from the USDA.
  • Make sure you check your beef jerky throughout the drying process to avoid over drying. The jerky will be done when it bends and cracks but does not break in half.
  • Now it's time to either store the beef jerky in ziplock bags, vacuum sealed bags, glass jars, or my favorite; your stomach! Beef jerky will stay good for 7-10 days if kept in ziplock bags.
