Grilled Jamaican jerk chicken wings are crispy, bold, and oh-so-memorable. The homemade marinade makes for a fantastic snack or appetizer.

4 lbs chicken wings, broken down into drumettes and flats
4 cloves garlic, minced
1 small white onion, chopped (about 1 cup)
1 tsp grated fresh ginger (about one ½-inch knob)
1 medium jalapeno, seeded and diced
1 Tbsp soy sauce
2 Tbsp honey
Juice of 3 limes (about 1/3 cup)
1/4 cup orange juice
2 tsp salt
2 tsp freshly ground black pepper
2 tsp smoked paprika
2 tsp dried thyme
1 tsp ground allspice
1/2 tsp ground nutmeg
1/2 tsp ground cinnamon
1/2 tsp cayenne pepper
2 bay leaves
1/2 cup olive oil

Steps:

  • Add chicken to a large resealable plastic bag.
  • Add garlic, onion, ginger, jalapeno, soy sauce, honey, lime juice, orange juice, salt, pepper, paprika, thyme, allspice, nutmeg, cinnamon, cayenne, bay leaves, and oil to a medium-sized bowl. Stir to combine. Transfer marinade to the bag.
  • Seal the bag and place in the refrigerator for at least 2 hours, up to overnight.
  • When ready to cook, preheat grill to 400˚F.
  • Remove wings from marinade and discard the excess. Transfer chicken to the grill and cook for 30-40 minutes, flipping every 10-15 minutes, until skin is crispy and chicken registers 165˚F internally on a meat thermometer.

1/2 cup Caribbean jerk seasoning
2-1/2 pounds chicken wingettes and drumettes
2 cups honey barbecue sauce
1/3 cup packed brown sugar
2 teaspoons prepared mustard
1 teaspoon ground ginger

Steps:

  • Place jerk seasoning in a large bowl; add chicken, a few pieces at a time, and toss to coat. In a small bowl, combine the barbecue sauce, brown sugar, mustard and ginger; set aside. , Moisten a paper towel with cooking oil; using long-handled tongs, lightly coat the grill rack. Grill chicken wings, covered, over medium heat or broil 4 in. from the heat for 12-16 minutes, turning occasionally. , Brush with sauce mixture. Grill or broil 8-10 minutes longer or until juices run clear, basting and turning several times.

1 yellow onion (, chopped)
6 stalks green onions (, chopped)
3/4 cup low sodium soy sauce
1/4 cup vegetable oil
1/2 cup white vinegar
2 tablespoons brown sugar
1 jalapeno pepper (, seeded, deveined and halved)
1 tablespoon fresh thyme leaves
1/2 teaspoon kosher salt
1/2 teaspoon ground allspice
1/2 teaspoon ground cinnamon
1/2 teaspoon ground cloves
3 pounds chicken wing drumettes
cooking spray

Steps:

  • In a food processor add the green onions, onion, jalapeno, soy sauce, vinegar, vegetable oil, brown sugar, thyme, kosher salt, cinnamon, cloves, and allspice and puree until smooth.
  • Place chicken in a large ziplock bag with half the marinade and reserve the rest of the marinade in the refrigerator.
  • Marinate in the refrigerator for at least 8 hours.
  • Preheat oven to 425 degrees and spray a baking sheet with cooking spray.
  • Place chicken drumettes on prepared baking sheet and reserve marinade left in the bowl.
  • Bake in the preheated oven for 25 minutes.
  • Brush 1/2 the reserved marinade onto the chicken wings and bake an additional 20 minutes.
  • Flip the chicken and brush the rest of the marinade on the chicken and cook and additional 10 minutes.

Okay, I didn't mean that, but these really are amazing; a perfect balance of sweet, sour, salty, and spicy. I'm usually pretty casual about you changing my recipes, but I'm going to have to insist you not change any of the key ingredients, which are, every one of them.

½ yellow onion, chopped
½ cup green onions, sliced
6 cloves garlic
3 habanero peppers, seeded and chopped
2 tablespoons fresh thyme leaves
1 tablespoon kosher salt
2 teaspoons ground black pepper
2 teaspoons ground allspice
1 teaspoon dried thyme
½ teaspoon ground cinnamon
½ teaspoon ground cumin
½ teaspoon freshly grated nutmeg
2 tablespoons vegetable oil
3 tablespoons soy sauce

⅓ cup lime juice
3 pounds chicken wing drumettes

Steps:

  • Put yellow onion, green onions, garlic, habanero peppers, fresh thyme, kosher salt, black pepper, allspice, dried thyme, cinnamon, cumin, nutmeg, vegetable oil, soy sauce, brown sugar, and lime juice, respectively, in a blender and blend until marinade is completely smooth.
  • Place chicken in a large bowl. Pour marinade over chicken and toss to coat completely. Cover the bowl with plastic wrap and marinate in the refrigerator for at least 8 hours or overnight.
  • Preheat oven to 450 degrees F (230 degrees C). Line a baking sheet with aluminum foil and spray with cooking spray.
  • Place chicken drumettes on prepared baking sheet and reserve marinade left in the bowl.
  • Bake in the preheated oven for 25 minutes.
  • Brush 1/2 the reserved marinade onto chicken and turn wings over. Bake for 15 minutes.
  • Turn chicken and brush on remaining 1/2 the reserved marinade. Bake until tender and caramelized, 10 to 15 minutes more. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C). Rest wings on baking sheet for 5 minutes before removing to a serving platter.

2 pounds chicken wings (separated and tips removed)
4 tablespoons salt
4 tablespoons Jamaican Jerk Rub/Seasoning ((see recipe notes))
½ cup Jamaican Jerk Sauce
5-6 Scotch Bonnet chili peppers (chopped (habanero peppers are a good substitute))
1/2 cup brown sugar
1/2 cup white vinegar
1 teaspoon dried thyme
1 teaspoon cinnamon
1 teaspoon nutmeg
2 tablespoons soy sauce
1 tablespoon fish sauce
2 teaspoons minced garlic
1 teaspoon ground allspice
Salt and pepper to taste

Steps:

  • Prepare your sauce first by combining all sauce ingredients in a food processor. Process until smooth. Refrigerate until ready to use.
  • Set the chicken wings into a large bowl. Add salt and cover with water. Cover and refrigerate about 3 hours to brine.
  • Remove and pat the wings dry.
  • Set them into a large bowl and rub the Jamaican Jerk rub into the skins. Get it in there!
  • Heat a grill to medium-heat and grill the wings for 20 minutes, turning once half way through. Keep an eye on them so the skins do not overcook.
  • Once cooked through, toss the wings with the Jamaican Jerk sauce and serve.

1/2 medium onion (chopped)
1 1/2 cups mango (sliced and cubed)
1/4 cup lime or lemon juice
2/3 cup mango nectar or orange juice
2 tablespoons brown sugar
1 tablespoon honey
1 1/2 teaspoons allspice
1 teaspoon ginger
1 teaspoon cinnamon
1/2 teaspoon paprika
1/4 teaspoon cayenne
1 teaspoon ground nutmeg
1/4 teaspoon ground cloves
2 teaspoons garlic powder
1 1/2 pounds chicken wings (disjointed)
Salt and pepper to taste

Steps:

  • Add olive oil to pan then cook onion until tender.
  • Next saute mango until tender.
  • Add mango, lime or lemon juice and mango nectar or orange juice, brown sugar, honey and all spices to blender or food processor and grind until smooth. If it needs to thin a bit more, add a little bit more juice.
  • Pour marinade into a large ziploc bag and submerge chicken in marinade. Seal and refrigerate for at least 4 hours and up to 8 hours.
  • Preheat oven to 425 degrees and line a baking sheet with non stick foil or parchment paper.
  • Remove chicken from marinade and season on both sides with remaining salt and pepper.
  • Bake chicken on first side for 15 minutes then turn over. For more flavor, feel free to baste chicken with marinade during cooking. Cook for another 10-15 minutes or until chicken is completely done, marinade is sticky on chicken and it is browned.

5 pounds wings
4 ounces plus 2 tablespoons jerk rub
12 ounces barbecue sauce
2 tablespoons honey
1 tablespoon browning

Steps:

  • Apply all-purpose seasoning to the wings in a bowl and mix. Add 4 ounces jerk rub and mix thoroughly. Marinate, refrigerated, for 24 hours minimum, or up to 3 days
  • Make Island BBQ sauce: Place barbecue sauce, honey, browning, remaining 2 tablespoons rub and 4 ounces water in a small saucepot. Whisk and heat until sauce starts to bubble. Turn it off and set it to the side.
  • Preheat a grill for cooking at medium heat. Preheat the oven to 350 degrees F.
  • Par-grill wings to about 145 degrees F, 20 to 25 minutes. Transfer to a baking pan and add the Island BBQ sauce.
  • Bake, uncovered, until wings reach 165 degrees F, about 30 minutes.
