Jeow is a lot of things, but mainly any sort of dipping sauce, typically made with char-grilled veggies. Sometimes spicy. Sometimes not. It could be vegetarian or it could be made with crushed beetles. Or anything in between. Great for dipping balls of sticky rice into. A Laotian staple. This is a good base sauce, feel free to add flavors and experiment. Laos is a landlocked country in Southeast Asia, bordered by Burma and China to the northwest, Vietnam to the east, Cambodia to the south, and Thailand to the west.

3 tomatoes
3 thai bird chilies (can use a milder chili like jalapeno for a milder sauce)
1 head garlic
1 pinch cilantro
fish sauce (will not be vegan if you use this) (optional)

Steps:

  • Roast tomatoes, chilies, and garlic over a campfire, on a grill(I used a grill pan), in a comal (flat pan available at Latino markets) over medium heat or in the oven until blackened and soft. Be sure to continually turn the garlic so it cooks evenly.
  • Peel and puree with cilantro, fish sauce(if using) and salt.

4 cloves garlic
pinch salt
2 Thai chili peppers, thinly sliced
6 medium tomatoes, grilled over an open flame until the skin is blistered and blackened
5 green onions
1/2 cup cilantro, chopped
1/2 tsp. soy sauce
1 T lime juice
sugar, to taste
cooking oil
optional: 2 diced shallots

Steps:

  • 1. In mortar or processor, combine garlic, chili, and salt. Add tomatoes and blend. 2. Fry chopped green onion in oil in a pan for 1-2 minutes. Add tomato mixture to pan and cook until tomatoes break down and become liquidy. Add cilantro, soy, lime juice, and sugar and stir to combine. 3. Allow mixture to cool and eat with sticky rice.

  • Arrange the tomatoes, shallots, chilies, and two of the green onions over a grill pan or on a rimmed baking sheet. Cook, turning occasionally, on a heated grill or under a broiler until blistered and charred on all sides (but not completely burnt). Remove the green onions, chilies, and shallots if they become charred before the tomatoes. Set aside until cool enough to handle.
  • Using a large mortar and pestle, mash the garlic cloves into a paste. Remove the stems (and seeds for less heat) from the chilies, chop, and add to the garlic. Chop the shallots and charred green onions, then mash with the garlic and chilies. Roughly chop, and mash the tomatoes with the rest of the vegetables to form a chunky sauce. Mix in the lime juice, fish sauce, and cilantro. Adjust seasonings to taste.
  • Thinly slice the remaining green onion and sprinkle over the sauce for garnish. Serve with sticky rice, grilled meat, and vegetables.

  • Soak bamboo skewers for at least 20 minutes to prevent burning. Put all the vegetables on a skewer. Do not peel the garlic and shallots.
  • Roast the vegetables on the grill. Flip the vegetables to get them evenly charred. Once charred set aside to cool.
  • In a mortar, add the garlic, chilies, shallots, green onions and salt. Smash until you get a smooth paste.
