Ali's Amazing Bruschetta image

This bruschetta will turn out every time you make it. Use small slices of bread for a unique appetizer, or serve with Italian dishes.

2 large tomatoes, coarsely chopped
½ sweet onion, chopped
2 tablespoons olive oil
1 tablespoon chopped fresh oregano
1 teaspoon chopped fresh basil
2 teaspoons chopped fresh parsley
½ (1 pound) loaf Italian bread, cut into 1 inch slices
¼ cup freshly grated Parmesan cheese

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • In a medium bowl, combine tomatoes, onion, olive oil, oregano, basil and parsley. Place bread on a baking sheet, and top with tomato mixture. Sprinkle with Parmesan.
  • Bake in preheated oven for 8 to 10 minutes, or until bottom of bread is browned. Allow to cool 5 minutes before serving.

1 loaf Italian bread, cut into 1/2-inch diagonal slices
6 cloves garlic, halved
6 medium tomatoes, seeded and cut into 1/2-inch pieces
1 (4 ounce) package ricotta salata, cut into 1/2-inch pieces
2 tablespoons extra-virgin olive oil
2 tablespoons balsamic vinegar
1 tablespoon finely chopped red onion
1 tablespoon chopped fresh basil
¼ teaspoon salt
¼ teaspoon ground black pepper

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Place bread slices on a baking sheet.
  • Bake in the preheated oven until toasted, about 5 minutes. Rub 1 side of the bread with the cut garlic.
  • Toss tomatoes, ricotta salata, olive oil, vinegar, onion, basil, salt, and pepper together in a bowl. Divide evenly over bread.

1 loaf French bread, sliced
½ sweet onion, finely chopped
2 cloves garlic, chopped
1 (2.25 ounce) can sliced black olives, drained
3 tablespoons extra virgin olive oil, divided
1 tablespoon chopped fresh oregano
2 teaspoons chopped fresh basil
2 teaspoons chopped fresh parsley
2 large fresh tomatoes, diced
1 cup crumbled feta cheese
¼ cup grated Parmesan cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Arrange the bread slices in a single layer on a baking sheet. In a bowl, mix the onion, garlic, olives, 2 tablespoons olive oil, oregano, basil, and parsley. Gently toss in the tomatoes. Top bread slices with the tomato mixture. Sprinkle with feta cheese and Parmesan cheese. Drizzle with remaining olive oil.
  • Bake 10 minutes in the preheated oven, or until cheese is melted and bread is lightly toasted.

1 teaspoon dried basil
4 tablespoons grated Parmesan cheese
2 tablespoons olive oil
1 clove garlic, crushed
seasoning salt to taste

Steps:

  • In a medium bowl, mix tomatoes, dried basil, Parmesan cheese, olive oil, garlic, seasoning salt and ground black pepper. Cover and chill in the refrigerator 8 hours, or overnight, before serving.

1 large bunch of arugula (about 1/4 pound), coarse stems discarded and the leaves washed well and spun dry
1/2 pound smoked mozzarella, chopped fine
2 tomatoes (1/2 pound total), seeded and chopped fine
12 diagonally cut 1/2-inch-thick slices of Italian bread (about 1 1/2 loaves)
2 garlic cloves, halved
1/4 cup extra-virgin olive oil

Steps:

  • Chop the arugula fine and in a bowl stir it together with the mozzarella, the tomatoes, and salt and pepper to taste. Grill the bread on a rack set 4 inches over glowing coals, turning it once, until it is golden. (Alternatively, the bread may be toasted on a rack in a preheated broiler about 4 inches from the heat, turning it once.) Rub the toasts with the garlic on one side and brush the same side with half the oil. Spoon the arugula mixture onto the oiled sides of the toasts and drizzle the remaining 2 tablespoons oil over it.

6 large tomatoes, diced
½ large sweet Bermuda onion, diced
2 cloves garlic, minced
1 ½ tablespoons fennel seed
⅓ cup minced fresh basil
⅓ cup extra-virgin olive oil
salt and pepper to taste
1 (20 ounce) loaf French bread, sliced 1/2-inch thick
¼ cup extra-virgin olive oil, for brushing

Steps:

  • In a bowl, mix together the tomatoes, onion, garlic, fennel seed, basil, 1/3 cup olive oil, salt, and pepper. Chill for at least 1 hour to blend the flavors.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Brush both sides of bread slices with some of the 1/4 cup of olive oil; place slices onto a baking sheet. Toast the bread until golden brown and crunchy on the outside, about 3 minutes per side. To serve, spoon the tomato mixture onto the toasted bruschetta and arrange on a serving platter.
