2 cups Basic Cookie Dough
Assorted jellies or jams

Steps:

  • On a lightly floured surface, roll out dough to 1/8-in. thickness. Cut with a 2-1/2-in. round cookie cutter. Using a 1-1/2-in. cookie cutter of your choice, cut out the center of half of the cookies., Place whole cookies 2 in. apart on greased baking sheets. Spread with 1 teaspoon jelly or jam; top with cutout cookies. Pinch edges with a fork to seal. Bake at 375° for 10-12 minutes or until edges are golden brown. Remove to wire racks to cool.

Do not be fooled by this little recipe. So few ingredients but believe me! It-is-a one right after another pop it in your mouth oh I cannot stop eating these. Before you know it, you will have to make another batch for the rest of your family. I got this from my best friend Robin who got it form her Taste of Home Cookbook.

1 cup butter, no substitutes
2/3 cup sugar
1/2 teaspoon almond extract or 1/2 teaspoon vanilla extract
2 cups all-purpose flour
1/2 cup jam, for the centers

Steps:

  • Cream butter and sugar
  • Beat in extract
  • Gradually blend in flour
  • Cover and refrigerate for an hour
  • Roll into one-inch balls and place one inch apart on un-greased cookie sheet
  • With the end of a wooden spoon make a indention in the ball and fill with jam
  • I have used Variety of jams and jellies Raspberry being the best! but Apricot is yummmie too, along with apple, blackberry, blueberry the possibilities are endless.
  • Bake at 350 for 14 to 18 minute.

1/2 cup butter, softened
1 egg
1 box (4-serving size) Jell-O™ gelatin strawberry-flavored
1 box (4-serving size) Jell-O™ gelatin berry blue-flavored
1 box (4-serving size) Jell-O™ gelatin lime-flavored
1 box (4-serving size) Jell-O™ gelatin orange-flavored

Steps:

  • Heat oven to 375°F. Line cookie sheet with cooking parchment paper.
  • In large bowl, beat cookie mix, softened butter and egg with spoon or electric mixer on medium speed until well combined. Separate dough into 4 small bowls.
  • Add a half packet of each color gelatin per bowl; knead dough to work color in until well combined. Roll each bowl of dough into 5 small balls of dough each.
  • Pour remaining gelatin onto 4 small plates; roll each ball of dough in its corresponding color. Place on cookie sheet 2 inches apart.
  • Bake about 12 minutes or until lightly golden on edges. Cool completely before serving.

This cookie recipe has been in my mother's family for more years than I've been alive. It's my favorite cookie; my comfort food!

¾ cup butter, softened
½ cup white sugar
2 egg yolks
1 ¾ cups all-purpose flour
½ cup fruit preserves, any flavor

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • In a medium bowl, cream together the butter, white sugar and egg yolks. Mix in flour a little bit at a time until a soft dough forms. Roll dough into 1 inch balls. If dough is too soft, refrigerate for 15 to 20 minutes. Place balls 2 inches apart onto ungreased cookie sheets. Use your finger or an instrument of similar size to make a well in the center of each cookie. Fill the hole with 1/2 teaspoon of preserves.
  • Bake for 8 to 10 minutes in the preheated oven, until golden brown on the bottom. Remove from cookie sheets to cool on wire racks.

½ cup white sugar
½ cup packed brown sugar
1 egg
1 teaspoon baking powder
1 teaspoon vanilla extract
¼ cup raspberry preserves
⅓ cup confectioners' sugar for decoration

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease baking sheets.
  • Cream the butter with the white sugar and brown sugar. Beat in the egg and vanilla.
  • Mix the flour and baking powder together. Stir in the flour mixture into the butter mixture and combine.
  • Form dough into 1 inch balls and place on the prepared baking sheet. Make an indentation in each cookie and fill with jam. Bake at 350 degrees F (175 degrees C) for 12 to 15 minutes. Let cool completely and sprinkle with confectioners' sugar.

1 cup creamy peanut butter, plus 1/4 cup, divided
1/2 cup butter, room temperature
1/4 cup granulated sugar
3/4 cup light brown sugar
1 large egg
2 teaspoons vanilla extract
1 teaspoon baking soda
1/4 teaspoon kosher salt
1 1/2 cups all-purpose flour
1/2 cup peanut butter chips, plus 1/4 more for optional garnish
1/4 cup strawberry preserves or jelly

Steps:

  • Preheat oven to 350°F. Line a baking sheet with parchment paper and set aside.
  • Reserve 1 cup of peanut butter for the cookie dough. Set aside.
  • Line a plate with wax or parchment paper. With the remaining 1/4 cup peanut butter, scoop out 3/4 teaspoon portions and place them onto the prepared plate. You will need 15 small "dollops" of peanut butter. They don't need to be exact. Place the plate in the freezer while you prepare the cookie dough.
  • In the bowl of your stand mixer fitted with the paddle attachment mix together 1 cup of peanut butter and the butter until smooth. Add in both types of sugars and mix for 2 minutes on medium speed.
  • Add the egg, vanilla, baking soda, and salt and mix for 30 seconds, until combined, scraping the sides of the bowl as necessary.
  • Turn the mixer to low and add in the flour, mixing until just incorporated. Stir in the peanut butter chips.
  • Using a large cookie scoop (3 1/2 tablespoons) portion out the dough. Remove the plate with the peanut butter dollops. Make a large well in the cookie dough. Scoop out 3/4 teaspoon of the strawberry preserves and place this into the well of the cookie dough. Top this with one of the frozen peanut butter dollops. Form the dough into a ball carefully around the peanut butter and jelly, doing your best to seal it in. Repeat the process with remaining dough, peanut butter and jelly. If working in batches, place the peanut butter scoops back into the freezer to remain firm.
  • Place the dough onto the prepared baking sheet 2- inches apart. Bake for 12 minutes, or until the edges are lightly golden and the tops start to crack.
  • Remove the cookies from the oven and press additional peanut butter chips onto the tops as a garnish, if desired.
  • Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
