LAYERED JELL-O CUPS
Individual cups with five layers of Jell-o makes for a really cute treat!

- For colored layer: Combine 1 package flavored Jell-o with half a package unflavored gelatin in a small heat proof bowl. Add 1 cup boiling water and stir until dissolved. Let stand until cooled to room temperature, then divide among the 6 cups. Refrigerate until set, about 15 minutes.
- For white layer: Mix 1 can of sweetened condensed milk with 1 cup boiling water in a small heat proof bowl. In another small heat-proof bowl, add 1/2 cup cold water. Sprinkle 2 packages unflavored gelatin over cold water and let stand for a few minutes. Now add 1/2 cup boiling water and stir until dissolved. Add that gelatin mixture to the milk mixture and stir to combine. Cool to room temperature and divide half of the milk mixture among the cups. Refrigerate cups until set, about 15 minutes. (Save the other half for the second white layer)
- Repeat colored layer instructions (Step #1), layering with the remaining half of the white (milk) layer. Repeat until there are 3 layers of the colored layer and 2 layers of the white layer. Refrigerate until set. Top with Cool Whip and serve. Enjoy!
JELLO PARFAIT (STRAWBERRY)

- Prepare a regular sized muffin tin: use 9 small balls, or wad up balls of foil (or paper) and place in the muffin tin. Place 9 clear plastic cups on top of the balls at an angle (see video at top of this page!) The small balls help to keep the cup at an angle.
- Next prepare the strawberry jell-o (both packets) according to package directions (not for quick set, but for regular set). Fill up the cups evenly with the strawberry jell-o (be careful as you pour and ensure the cups stay at an angle).
- Hull and slice the strawberries and then place a few slices of strawberries into each jell-o cup. Carefully transfer the muffin tin into the fridge and allow the strawberry jell-o to completely set up.
- When the jell-o layer is nearly set up, you can begin on the mousse.
- Place 1 and 1/2 cups Sprite in a microwave safe bowl or cup and microwave just until the mixture comes to a boil. Whisk the packet of strawberry jell-o into the Sprite.
- Transfer the mixture to a high powdered blender and add in the cream cheese. Blend until completely smooth. And in remaining 1 cup of (COLD) Sprite and blend again until smooth.
- Add in the completely thawed Cool Whip and blend just until smooth. (You can leave out about 1/2 cup for optional garnish at the end if desired).
- Pour this mixture evenly over the jell-o layers (you shouldn't use as much of this mousse as you did of the jell-o or it tends to be overpowering).
- Place in the fridge and allow to set completely.
- If desired, garnish with fresh whipped cream (or 1/2 cup extra cool whip) and garnish with fresh mint and a small strawberry.

FRUIT JELLO CUPS
I'd like to preface this recipe by saying that I am posting Recipe #249803 too. I prefer it even though we are not vegans, but certainly gelatin is easier to find than the ingredient used to 'set' in the vegan recipe. I make either recipe depending upon what I have available to substitute for the store bought fruit Jello cups. It's easy and much more affordable. I like to use those mini-ziplock containers with the lid because they are perfect in size and can stack in the fridge. You could also save a few pudding, jello or applesauce containers and just use foil to cover. You will need 8 for this recipe. This recipe is easy enough that the kids can help too (just take care with the boiling liquid) and each cup has two servings of fruit! For my bigger kids (4 and older)I like to drop my soft gummy vitamin(s) in before setting in fridge to gel. My kids call them the "treats" in the middle! You can customize this for smaller kids by pureeing the fruit (puree the vitamin too!) before adding to the cups. I love being sneaky!

- If using fresh fruit, clean and peel hard skinned fruits (apples, bananas, pears, oranges, etc, melons, etc) and cut into small chunks. Use your choice of anti-browning agent and sprinkle, then toss to coat well the cut fruit. Set aside.
- Boil fruit juice and sugar in a microwave safe container in the microwave until boiling. don't allow to much liquid to be lost to steam. Cover in microwave if you can. Stir well, making sure all sugar has dissolved. If using Splenda, do not add at this point.
- Meanwhile, open can of fruit and drain juices into a separate medium sized non metal bowl.
- Pour drained juices into a measuring cup, add Splenda and fill to 1 cup mark with fruit juice of your choice (remember, no real pineapple or kiwi juice.artificial flavoring is ok).
- In the non metal bowl you already used, pour boiling fruit juice mixture and sprinkle gelatin in slowly while stirring until gelatin is dissolved.
- Line up your cups and pour mixture to about half (using the cups I mentioned above). When all mixture is poured in, add 1 tiny drop to each container you want to color and mix with a spoon. The extreme colors are very bright/dark and I think the pink and green/yellow turn out the prettiest with the fruit. Don't use big drops or you wont be able to see the fruit as well. Sometimes I split one drop between two by putting one drop in one container and then pouring the mixture back and forth in the separate containers till desired color is achieved. The regular food coloring has nice Christmas colors. The kids love this part!
- After you are happy with your colors, add about 2 TB of the chunked fruit to your cups. It will sink to the bottom and raise the level of the gelatin to within 1/4" of the top.
- Cover and chill about 1 hour.
- Feel free to use different kinds of juice and fruit. Each container has about 2 servings of fruit. This makes a firm set.if you prefer a softer set, add 1/8 cup more cold fruit juice.

- To prep your cups, use a pair of scissors to poke two holes on opposite sides of the smaller cup right at the top. Stick a skewer through both.
- You should have two bowls with one flavor in each. Split the boiling water into two and add to each bowl. Stir quickly, so there aren't any lumps.
- Pour a small amount into the larger cups (about 1/3 of the way full) and push the smaller cup down on top of it so that the skewers are resting on the top of the large cup.
- Pour the cold water almost all the way up into the small cup so it weighs the cup down and holds the jello in the shape of a cup beneath it. You can use tape to stick the skewers to the big cup for further protection.
- Put the cups in the fridge for about 3-4 hours until firm.
- When they're done, start by wriggling out the inside cup first, so you have the jello stuck in the big cup.
- Use the scissors to make cuts at the top of the big cup. Peel the strips you've made down slowly, making sure not to tear the jello. Detach the bottom of the jello cup from the big cup.
RAINBOW JELLO CUPS

- For each layer, add 1 cup of boiling water to each package of Jello one at a time. Stir and dissolve Jello.
- Set half of it aside. Using a whisk, stir 1/2 cup sour cream or yogurt into the other half of the Jello.
- Pour the creamy Jello layer into clear plastic cups (I used 7 cups with 5 colors of Jello). To the other half of Jello, add 3 Tbsp. water and set aside.
- When the first layer is set, pour second layer on it. Repeat process for remaining packages of Jello.

- Clear a space in your refrigerator for 2 regular size muffin pans. Lay cups in the muffin tin on an angle.
- In a large measuring cup with a spout, add 1 cup of boiling water and stir in 1 package of blue jello.
- Mix well, for about 2 minutes, or until completely dissolved.
- Add 1 cup of cold water and mix well.
- Pour a small amount into each cup and lay on an angle in the muffin tin.
- Refrigerate until firm, about an hour.
- In a measuring bowl with a spout, add 1/2 cup of cold water and 2 packages of unflavored gelatin. Let set for about 5 minutes or until thick.
- Stir in 1-1/2 cups boiling water and mix until smooth.
- Pour in sweetened condensed milk and mix well.
- Let set to cool.
- Remove cups from refrigerator and tilt the cups in the opposite direction.
- Fill each cup with sweetened condensed milk and return to the refrigerator until firm, about an hour.
- Remove cups from the refrigerator and stand them up on a flat surface, or place them, right side up, into a 9x13 baking pan.
- In a large measuring cup with a spout, add 1 cup of boiling water and stir in 1 package of red jello. Mix well, for about 2 minutes, or until completely dissolved.
- Add 1 cup of cold water and mix well.
- Pour into cups, filling to the top.
- Refrigerate until firm, about an hour.
- Before serving, top with whipped topping and sprinkles.
