ASIAN SLAW - CRUNCHY ORIENTAL CABBAGE SALAD WITH ASIAN DRESSING
Recipe video above. A light, healthy, CRUNCHY Asian salad that is a great side for all types of Asian foods. Dressing is a great salty / sour / spicy lime dressing reminiscent of Thai and Vietnamese food. Add CHICKEN if making this as a meal. Serves 8 - 10 as a side, 4 as a meal with chicken.

Steps:
- Combine the dressing ingredients in a jar and shake well.
- Combine the salad ingredients, except the Asian Fried Shallots.
- Pour over dressing and toss to combine.
- Garnish with Asian Fried Shallots. Serve!

Steps:
- Combine cabbage, slivered almonds, sunflower seeds and crushed Ramen noodles in a large bowl. Stir to combine.
- In a medium bowl or pint sized mason jar, combine dressing ingredients. Whisk well (or shake in a covered jar) until dressing comes together.
- Refrigerate for at least an hour before serving.

"MILLION DOLLAR" CHINESE CABBAGE SALAD
This recipe is always a hit...with kids too! I used to call it my 'Million Dollar Salad' because buying the sesame seeds was so expensive. Now I buy the sesame seeds in bulk at a health food store and it's much more affordable.

Steps:
- In a bowl, whisk together vegetable oil, sugar, wine vinegar, and soy sauce until the sugar has dissolved. Refrigerate the dressing while preparing the salad.
- Preheat oven to 350 degrees F (175 degrees C).
- Spread the broken ramen noodles, almonds, and sesame seeds onto a baking sheet.
- Bake the ramen noodle mixture until lightly browned, about 15 minutes, stirring often. Watch carefully to prevent burning. Allow mixture to cool.
- Just before serving, mix together the napa cabbage and green onions with toasted ramen mixture in a salad bowl until thoroughly combined; toss with the dressing.

JEAN'S CHINESE CABBAGE SALAD
If you like a salad with a crunch, this one is for you. My sister-in-law Jean made this for lunch years ago and gave me the recipe. I just made it again today and was reminded what a unique and delicious salad this is. I'm lazy and bought a cooked Costco chicken and boned and diced it, but home made will work too. I also used a bag of pre-packaged cole slaw cabbage and pre-packaged shredded carrots to avoid all the chopping. Enjoy

Steps:
- Melt butter in fry pan.
- Add noodles broken in pieces (I place them in a zip lock bag and break them up into small pieces with a rolling pin).
- Add almonds and sesame seeds.
- Saute on a medium-low heat until golden brown.
- Set aside to cool.
- Mix salad oil, sugar (I use Splenda) vinegar, soy sauce, Raman seasoning and salt and pepper.
- Set aside.
- Mix cabbage, onions, carrots,and chicken.
- Mix browned noodle mixture with cabbage mixture.
- Toss with dressing.
- Enjoy.
