EASY CHILI MAC RECIPE

This hearty Chili Mac Recipe will please a crowd and is easy to make ahead by a day or two.

1 pound elbow macaroni
2 tablespoons olive oil
3 cups diced onion (about 2 medium onions)
2 pounds ground beef (I like to use ground chuck)*
7 ounces canned diced green chiles
1 teaspoon kosher salt, plus more to taste
1/2 teaspoon ground black pepper, plus more to taste
4 tablespoons chili powder
1 tablespoon garlic powder
8 ounces beef broth
64 ounces canned crushed tomatoes
3 (16) ounce cans BUSH'S Beans Chili Beans Kidney Beans in Mild Chili Sauce (do not drain)
1 pound shredded cheddar cheese (medium or sharp)
optional garnish: sour cream, shredded cheese, diced green onion

Steps:

  • Cook pasta according to package instructions.
  • While pasta is cooking, heat oil in large stock pot** over medium heat. Add onions; cook, stirring occasionally for 3-4 minutes, until slightly softened.
  • Add ground beef, canned chiles, salt, pepper, chili powder and garlic powder. Stir together and continue to cook to brown beef, breaking up any clumps of meat, about 5-7 minutes.
  • Once all meat has browned, stir in beef broth, crushed tomatoes and beans (along with bean sauce). Reduce heat to a simmer; allow to simmer for at least 15 minutes.
  • Drain pasta. Stir cooked pasta and shredded cheese into chili until combined well and cheese has melted. Salt and pepper to taste.*** (If a thinner consistency is desired add a bit more broth at a time until desired consistency is reached.)
  • Serve topped with optional garnish: sour cream, shredded cheese, sliced green onion, diced red onion, corn chips.

1 1/2 ground beef or turkey
1 or 2 jalapeno peppers, seeded for less heat
1 med onion, chopped
1 Tbsp garlic, chopped
1 1/2 Tbsp chili powder
1 tsp ground cumin
1 tsp oregano, dried, crushed
1 can(s) (15 oz.) stewed tomatoes, diced
1 can(s) (6 oz) tomato sauce
1 can(s) (28 oz) chili beans (ex: ranch style)
1 1/2 c uncooked, small, elbow or shell macaroni
salt and pepper t taste
2 green onions, chopped, for garnish
shredded cheddar cheese for garnish

Steps:

  • 1. Prepare pasta in boiling salted water until pasta is aldente (just under-done); drain (reserving @ 2 cups of liquid) and return it to the same large pot. Remove from heat until meat is cooked.
  • 2. While pasta is cooking, break ground beef into pieces in a large skillet. Add onions, garlic, peppers, salt and pepper. Brown over med-low heat.
  • 3. Drain off any excess grease and add the meat to the cooked pasta. Place the pot back onto a low burner. Add the tomatoes, tomato sauce, beans (do not drain), and all other spices. Gently stir thoroughly until combined.
  • 4. Cover and simmer until thoroughly hot (@ 10 minutes). Adjust salt, pepper and other spices to suit your taste. If the mixture is too thick, add some of the starchy water from the macaroni to keep this from being too dry.
  • 5. Serve in bowls topped with green onion and cheese. Great with crackers, tortilla chips, cornbread or cheesy garlic bread.

One Pot Chili Mac and Cheese image

The key with this recipe is to turn the stove off as soon as the pasta is just cooked - it will keep cooking in the residual heat.

1 tbsp olive oil
2 garlic cloves (, minced)
1 onion (, finely chopped)
1 red capsicum / bell pepper (, chopped)
500g / 1 lb ground beef (mince) (, I use lean)
800g / 28 oz crushed canned tomato
420g / 14 oz can red kidney beans (, drained)
2 1/2 cups (625 ml) beef broth ((chicken broth also ok))
250g / 8 oz elbow macaroni pasta ((elbow pasta), uncooked)
2 cups (200g) shredded cheese ((cheddar, Monterey Jack, tasty cheese))
1/4 cup coriander / cilantro ( finely chopped, for garnish)
1 tsp cayenne pepper ( or pure chilli powder (adjust spiciness to taste) (Note 1))
2 tsp paprika powder
2 tsp cumin powder
1 1/2 tsp onion powder ((can sub garlic powder))
1 tsp dried oregano
1/2 tsp black pepper
1 1/4 tsp salt

Steps:

  • Heat oil in large pot over high heat. Add garlic and onion, cook for 1 minute. Then add capsicum and cook until onion is translucent.
  • Add beef and cook, breaking it up as you go.
  • Once the beef turns from red to brown, add remaining ingredients except cheese. Stir, bring to simmer, then turn the heat down to medium.
  • Cover and cook for 12 minutes or until the macaroni is al dente, meaning just cooked, still a tiny bit on the firm side. It should be saucy but not tons of liquid (see video).
  • Turn the stove OFF but leave the pot on the stove. Stir through half the cheese - it should be a bit saucy. Adjust salt and pepper to taste. Top with remaining cheese, put the lid back on and leave until the cheese melts - about 2 minutes (sauce will absorb further during this period).
  • Sprinkle with coriander, if desired, and serve immediately.

1 pound ground beef
1 small green pepper, chopped
1 small onion, chopped
2 cans (15 ounces each) chili with beans
1 can (11 ounces) whole kernel corn, drained

1 pound corkscrew shaped pasta with lines or elbows with lines
2 pounds ground sirloin
2 tablespoons (2 turns around the pan in a slow stream) extra-virgin olive oil
1 sweet onion, chopped
2 jalapeno peppers, seed and chopped
4 cloves garlic, chopped
3 tablespoons (1 1/2 palm fuls) dark chili powder
2 tablespoons (1 palm ful) cumin
2 tablespoons cayenne pepper sauce
Coarse salt
1 cup beer or beef broth
1 (28-ounce) can diced tomatoes in juice
1 (14-ounce) can crushed tomatoes
Chopped scallions, for garnish

Steps:

  • In a large pot, boil pasta until al dente.
  • Meanwhile, in a big, deep pot, brown beef in oil over medium high heat. Add onions, peppers, and garlic. Season meat mixture with chili powder, cumin, cayenne, and salt. Cook together 5 minutes, stir in beer or broth, and reduce liquid by half, 2 minutes. Stir in tomatoes and simmer for 10 minutes.
  • Drain pasta. Add hot pasta to chili pot and stir to coat pasta evenly. Remove from heat and garnish big bowlfuls of chili mac with chopped scallions.
