1 pound lean ground chicken
1 medium onion, chopped
2 cans (15 ounces each) cannellini beans, rinsed and drained
1 can (4 ounces) chopped green chiles
1 teaspoon ground cumin
1/2 teaspoon dried oregano
1/4 teaspoon pepper
1 can (14-1/2 ounces) reduced-sodium chicken broth
Optional toppings: Reduced-fat sour cream, shredded cheddar cheese and chopped fresh cilantro

Steps:

  • In a large saucepan, cook chicken and onion over medium-high heat until chicken is no longer pink, 6-8 minutes, breaking up chicken into crumbles., Pour 1 can of beans in a small bowl; mash slightly. Stir mashed beans, remaining can of beans, chiles, seasonings and broth into chicken mixture; bring to a boil. Reduce heat; simmer, covered, until flavors are blended, 12-15 minutes. Serve with toppings as desired. Freeze option: Freeze cooled chili in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add broth if necessary.

2 large onions, diced
1 green or bell pepper or 2 poblano peppers, diced
1 ½ cups frozen corn kernels
¼ cup plus 2 tablespoons cup cornmeal
2 tablespoons chopped garlic
2 tablespoons ground cumin
1 tablespoon ground coriander
1 tablespoon chili powder
2 teaspoon salt
¼ teaspoon cayenne pepper, or to taste
3 cups chicken broth
1 14-ounce can navy beans or cannellini beans, drained and rinsed
½ cup heavy cream
Shredded cheddar cheese, cilantro and lime wedges for serving, optional

Steps:

  • Stir chicken, onions, peppers, corn, cornmeal, garlic, cumin, coriander, chili powder, salt, cayanne and broth together in the insert of a 6 quart slow cooker. Cover and cook for 6 hours on low.
  • When timer goes off, stir well. Add in beans and stir in cream. Serve garnished with cilantro, cheese and serve with lime wedges.

2 (14.5-ounce) cans white beans, rinsed and drained
4 cups low-sodium chicken broth, divided
2 tablespoons extra-virgin olive oil
1 large yellow onion, diced
1 jalapeño pepper, seeded and minced (see note)
2 medium poblano peppers, seeded and diced (see note)
4 garlic cloves, minced
1 tablespoon ground cumin
1½ teaspoons ground coriander
1 teaspoon ancho chili powder
Salt
1 rotisserie chicken, skin removed and shredded (about 4 cups)
¾ cup frozen corn
1 tablespoon fresh lime juice, from one lime, plus more to taste
¼ cup fresh chopped cilantro
Sour cream
Crushed tortilla chips
Shredded cheddar or Pepper Jack cheese
Lime wedges

Steps:

  • In a food processor, blend ½ of the beans (1 can) with 1 cup of the chicken broth. Set aside both the puréed beans and the remaining whole beans.
  • Add the oil to a large pot or Dutch oven and heat it over medium-high heat. Add the onion, jalapeño pepper and poblano peppers and cook, stirring frequently, until soft, 4 to 5 minutes. Add the garlic and cook for one minute more. Add the cumin, coriander and ancho chili powder and continue to cook, stirring frequently, for one minute more to toast the spices. Add the chicken broth, puréed beans and ½ teaspoon of salt; bring to a boil. Reduce the heat to low and simmer, uncovered, for 20 minutes.
  • Stir in the shredded rotisserie chicken, reserved whole beans, corn, and lime juice; bring back to a simmer and cook until everything is heated through, about 5 minutes. Taste and adjust seasoning with more salt and lime juice, if necessary. Stir in the cilantro. (Note that the broth will be somewhat soupy -- that's how it is supposed to be. It thickens the longer it sits; see note below.) Ladle the chili into bowls and serve with sour cream, crushed tortilla chips, and lime wedges.
  • Note: The seeds and ribs in the peppers hold all of the heat. I don't use them to keep the chili mild and family-friendly, but if you like a spicy chili, save them and stir some in at the end. (If you do touch the seeds, be sure to wash your hands well and avoid touching your eyes.)
  • Note: The chili thickens as it sits. If you make it ahead of time, you will probably need to add more broth or water to thin it out.

1-1/2 cups diced onion
1 tablespoon canola oil
1 tablespoon ground oregano

  • Sort beans and rinse with cold water. Place beans in a Dutch oven; add water to cover by 2 in. Bring to a boil; boil 2 minutes. Remove from heat; cover and let stand 1 to 4 hours or until beans are softened. Drain and rinse beans, discarding liquid., In a stockpot, saute onion in oil until tender. 1 large onion, chopped
1 stick (1/2 cup) unsalted butter
1/4 cup all-purpose flour
3/4 cup chicken broth
2 cups half-and-half
1 teaspoon Tabasco, or to taste
1 1/2 teaspoons chili powder
1 teaspoon ground cumin
1/2 teaspoon salt, or to taste
1/2 teaspoon white pepper, or to taste
two 4-ounce cans whole mild green chilies, drained and chopped
5 boneless skinless chicken breast halves (about 2 pounds), cooked and cut into 1/2-inch pieces
1 1/2 cups grated Monterey Jack (about 6 ounces)
1/2 cup sour cream
Garnish: fresh coriander sprigs
Accompaniment: tomato salsa

Steps:

  • In a large kettle soak beans in cold water to cover by 2 inches overnight. Drain beans in a colander and return to kettle with cold water to cover by 2 inches. Cook beans at a bare simmer until tender, about 1 hour, and drain in colander.
  • In a skillet cook onion in 2 tablespoons butter over moderate heat until softened.
  • In a 6- to 8-quart heavy kettle melt remaining 6 tablespoons butter over moderately low heat and whisk in flour. Cook roux, whisking constantly, 3 minutes.   • Mix the coriander, cumin, oregano, paprika, red pepper flakes, salt and pepper together in a small bowl.
  • Add olive oil to a pressure cooker set to saute and add the chicken. Sprinkle the spice mix over the chicken and toss. Cook until the chicken has started to sear on the outside, then add the broth.
  • Place the lid on the pressure cooker, set the valve to sealing, and cook on manual for 6 minutes. Release the steam using the quick-release cycle. Remove the chicken to a board and shred with two forks.
  • Put the heavy cream and masa harina in a small bowl and mix until smooth with a whisk or fork.
  • Switch the pressure cooker to saute and return the chicken to the pressure cooker along with the masa and heavy cream mixture, cannellini beans, green chiles and corn. Let cook, stirring occasionally, until the chili has thickened and the corn is warmed through, about 10 minutes.

Steps:

  • Heat olive oil in a large pot over medium-high heat. Add onion and saute 4 minutes minutes. Add garlic and saute 30 seconds longer.
  • Add chicken broth, green chilies, cumin, paprika, oregano, coriander, cayenne pepper and season with salt and pepper to taste. Bring mixture just to a boil then reduce heat to medium-low and simmer 15 minutes.

  • Turn instant pot to "saute" mode. Prep and add in oil, onion, and bell pepper and cook until soft and translucent, stirring occasionally, about 3-5 minutes.
  • Turn off "saute" mode and layer in whole chicken breast.
  • Add in green chiles, navy beans, spices, and cream cheese.
  • Pour in chicken broth. Do not stir.
  • Secure lid on instant pot and switch the valve to the "sealing" position. Set instant pot to "pressure cook." Start timer on instant pot to 15 minutes.
  • Use the quick release to release pressure and take off lid.
  • Remove chicken from instant pot and shred with two forks.
  • Break up the cream cheese by mashing it on the side of the instant pot bowl until it reaches the consistency that you want. For an even creamier texture, take out cream cheese and whisk it until smooth before adding it back into the instant pot.
  • Add chicken back into pot and give everything a good stir.
  • Garnish with cilantro, fresh diced avocado, and limes if desired.
  • Serve warm alongside tortilla chips.
