TUNA STEAKS WITH GARLIC-HERB CREAM SAUCE

Tuna steaks are dressed up with a dreamy garlic-herb cream sauce. I served mine on top of wilted spinach.

1 tablespoon butter
2 (5 ounce) tuna steaks
salt and ground black pepper to taste
⅓ cup fat-free half-and-half
¼ cup garlic-and-herb spreadable cheese (such as Alouette®)
1 teaspoon lemon juice
2 cups fresh spinach

Steps:

  • Heat a nonstick skillet over medium heat. Melt butter in the hot skillet. Season tuna steaks with salt and pepper and place in the skillet. Cook for 3 to 4 minutes per side. Remove to a serving plate and keep warm.
  • Add half-and-half and spreadable cheese to the same skillet and stir until incorporated. Add lemon juice. Set 2 tablespoons of the sauce aside. Add spinach to the remaining sauce in the skillet and cook until wilted, 1 to 2 minutes.
  • Divide spinach between 2 plates and place tuna steaks on top. Serve reserved sauce over the steaks.

Number Of Ingredients 7

4 fresh tuna steaks, each about 8 ounces and 3/4 inch thick
Extra-virgin olive oil, to coat tuna
Salt and freshly ground black pepper
4 tablespoons (1/2 stick) unsalted butter, room temperature
2 tablespoons capers, rinsed and dried
1 tablespoon finely diced red and/or yellow pepper
1 large bunch fresh arugula

Steps:

  • Rub tuna with olive oil, salt, and plenty of pepper. Set aside to marinate for at least 20 minutes.
  • In a small bowl, combine butter, capers, and diced peppers. Turn mixture onto a square of parchment or wax paper, and roll into a log about 1/2-inch in diameter. Refrigerate until firm, about 30 minutes.
  • Heat an iron skillet slowly over low heat until very hot (a few drops of water splashed in the pan should evaporate almost immediately). Arrange tuna in skillet, and cook for about 5 minutes on each side. It should be well browned and crisp on the outside and rare to medium on the inside.
  • Arrange arugula on plates or platter. Place tuna on top with a slice of caper butter on each steak. Serve immediately.

1/3 cup dry red wine or reduced-sodium beef broth
1/3 cup reduced-sodium soy sauce
2 teaspoons minced fresh gingerroot
1 teaspoon minced garlic
4 tuna steaks (6 ounces each)
1 bay leaf
1 tablespoon olive oil

Steps:

  • In a small bowl, combine the wine, soy sauce, ginger and garlic. Pour into a large resealable plastic bag; add the tuna steaks and bay leaf. Seal bag and turn to coat; let stand for 15 minutes. , Drain and discard marinade and bay leaf. In a large skillet, cook tuna in oil over medium-high heat for 4-6 minutes on each side for medium-rare or until slightly pink in the center.

¼ cup orange juice
¼ cup soy sauce
2 tablespoons olive oil
1 tablespoon lemon juice
2 tablespoons chopped fresh parsley
1 clove garlic, minced
½ teaspoon chopped fresh oregano
½ teaspoon ground black pepper
4 (4 ounce) tuna steaks

Steps:

  • In a large non-reactive dish, mix together the orange juice, soy sauce, olive oil, lemon juice, parsley, garlic, oregano, and pepper. Place the tuna steaks in the marinade and turn to coat. Cover, and refrigerate for at least 30 minutes.
  • Preheat grill for high heat.
  • Lightly oil grill grate. Cook the tuna steaks for 5 to 6 minutes, then turn and baste with the marinade. Cook for an additional 5 minutes, or to desired doneness. Discard any remaining marinade.

Zest and juice of 1 lemon
3 clove garlic minced
2 Tbsp minced ginger root
1/4 cup teriyaki sauce
1/4 cup sesame oil
1/2 cup olive oil
1 tsp chili pepper flakes
1/2 tsp salt
1/4 tsp black pepper
3 Tbsp chopped cilantro
4 8oz yellowfin tuna steaks (1 1/2" thick)
1 tsp chopped rosemary

Steps:

  • Marinade (30 minutes to 2 hours before serving) Mix all ingredients on the left (except tuna) in a non-reactive bowl that is just big enough to hold the steaks in one layer. Add the steaks and turn them to coat. They should be sitting very tightly in the bowl. If you don't have the bowl of appropriate size, just pour the marinade into a large zip loc freezer bag, add the steaks, squeeze all the air out and close the bag. If marinating only for 30 minutes leave the fish at room temperature. If marinating longer than that, keep it in the fridge removing to room temperature 30 minutes before cooking. -------------------------------------------------------------------------------- Set a large frying pan on med-high heat. Remove tuna from the marinade and dry on paper towels. When the pan is hot, pour 2 Tbsp of oil from the marinade into the skillet. Add tuna steaks to a pan. Shake the pan couple of times so that steaks don't stick. Sear 2.5 minutes on one side. Flip and sear 1.5 minutes on the other side. This will cook 1/4" of tuna on each side and leave the rest rare. If you like your tuna more cooked through, cover the pan, turn down the heat to medium and cook flipping the steaks half way until desired doneness. Sprinkle the steaks with rosemary, pour the pan juices over them, or top with garlic herb butter, and serve.
