JAPANESE MARINATED FILLET OF TUNA

2 cups teriyaki sauce
1/2 cup dry Sherry
4 tablespoons finely chopped ginger
1/2 cup chopped scallions
2 cloves garlic, peeled and minced
1/2 teaspoon cayenne pepper
2 teaspoons freshly ground pepper
1/2 cup lemon juice
4 3-by-3-by-2-inch cubes of fresh tuna, 6 ounces each
5 teaspoons olive oil
10 cups washed and stemmed fresh greens, like spinach, Swiss chard, dandelions or a mixture
1/4 cup water
1/8 teaspoon salt
Freshly ground pepper to taste
1/4 cup Japanese pickled ginger pieces

Steps:

  • Combine the marinade ingredients in a medium-size bowl. Add the tuna and refrigerate for 2 to 3 hours. Thirty minutes before cooking, remove the tuna from the refrigerator and let it come to room temperature. Preheat a grill or broiler.
  • In a large, nonstick skillet, heat 2 teaspoons of the olive oil. Add the greens and cook until wilted. Add the water, salt and pepper. Cook just until greens are tender. Set aside and keep warm.
  • Drain the tuna steaks and pat them dry. Brush with the remaining olive oil. Grill or broil until charred on the outside but still pink in the center, about 1 to 2 minutes on each side. Divide the greens among 4 plates. Place a piece of tuna over the greens. Top with some of the pickled ginger and serve immediately.

This Japanese-inspired tuna should be grilled very rare for the best flavour. The glaze keeps for two weeks refrigerated, but if it becomes too thick, thin down with a little water before using. 1 tablespoon sesame oil
1 tablespoon vegetable oil
1 tablespoon grated gingerroot
1 tablespoon cracked black pepper
4 (8 ounce) tuna steaks, about 1-inch thick
kosher salt
1/2 cup granulated sugar
1/2 cup water
1/2 cup rice vinegar
1/4 cup light soy sauce
4 slices ginger, smashed
2 teaspoons wasabi powder
1 tablespoon water

Steps:

  • Combine oils, ginger and pepper. Brush on steaks.
  • Sprinkle with kosher salt.
  • Marinate for 30 minutes.
  • Combine sugar, water, rice vinegar, soy sauce and ginger.
  • Stir to dissolve.
  • Bring to boil on high heat and reduce until syrupy, about 15 minutes.
  • Make a apste of the wasabi powder and the water.
  • Whisk in wasabi paste.
  • The glaze should be used at room temperature.
  • Grill tuna 2 minutes per side with lid closed for very rare - 3 to 4 minutes per side for medium-rare.
  • Use either a squeeze bottle or a fork to streak glaze over fish.

1 (10 ounce) bottle teriyaki sauce
1/3 cup dry sherry
3 tablespoons chopped ginger
1/3 cup chopped scallion

2 lemons, juice of
3 tablespoons rice wine vinegar
2 tablespoons olive oil
thinly sliced scallion top
pickled ginger

Steps:

  • Arrange tuna in a single layer in a shallow dish.
  • Combine in bowl and mix well the teriyaki sauce, sherry, chopped ginger, chopped scallions, garlic, pepper, lemon juice, and rice wine vinegar.
  • Pour over the tuna.
  • Chill, covered for 2 hours, turning the tuna once.
  • Drain the tuna and let it come to room temperature.
  • Brush tuna all over with olive oil.
  • Grill 3-6 mins on each side.
  • Serve with pickled ginger and sliced scallions.

1 garlic clove, minced
1/4 cup reduced sodium soy sauce
1 tablespoon fresh ginger, grated
1 tablespoon dark sesame oil
2 tablespoons rice vinegar
1 tablespoon green onion, sliced
4 (6 ounce) fresh tuna steaks, about 1 inch thick, rinsed and patted dry

Steps:

  • In a small bowl, combine all ingredients except tuna.
  • Place tuna steaks in a plastic ziploc type bag. Add Marinade to bag and seal. Set bag in a shallow pan.
  • Refrigerate for 30 minutes, turning bag occasionally to coat.
  • Lightly coat the grill rack with nonstick cooking spray.
  • Drain tuna and discard marinade.

4 (6 ounce) yellowfin tuna steaks
½ cup vegetable oil
⅓ cup soy sauce
¼ cup fresh lemon juice
2 teaspoons Dijon mustard
1 teaspoon grated lemon peel
1 clove garlic, crushed
4 wedges lemon, for garnish

Steps:

  • Prick tuna steaks all over with a fork and place in shallow glass dish.
  • Whisk oil, soy sauce, lemon juice, Dijon mustard, lemon peel, and garlic together in a bowl; pour over the tuna steaks. Cover dish with plastic wrap and refrigerate 1 to 3 hours.
  • Preheat grill for medium heat and lightly oil the grate.
  • Remove tuna from the marinade. Shake excess moisture from the steaks.
  • Pour the marinade into a small saucepan and bring to a boil. Reduce heat to medium-low and cook marinade at a simmer for 10 minutes.

I think I came in pretty close. Most restaurants grill their tuna for 3-4 minutes per side, but I tend to like mine rare, so I only cook each side for 1-1/2 minute. Tuna must be as fresh as possible
