2 tablespoons sesame seeds
2 tablespoons slivered almonds
1/2 head of cabbage, thinly sliced
2 green onions with tops, chopped
1 package ramen noodles, broken and uncooked
1 chicken breast, boiled and chopped
1/2 cup vegetable oil
3 tablespoons vinegar
2 tablespoons sugar
1 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Toast sesame seed and almonds in oven until light brown.
  • Combine with remaining ingredients.
  • Dressing:
  • Mix all ingredients together and pour over salad mixture; toss lightly.
  • Chill overnight. This recipe doubles easily, ham or turkey can be substituted for chicken.

1 bag (16 ounces) coleslaw mix with carrots
8 medium green onions, chopped (1/2 cup)
1/4 cup light sesame or olive oil
1/3 cup rice vinegar
2 tablespoons soy sauce
1/2 teaspoon ground ginger
Crisp chow mein noodles, if desired

Steps:

  • Mix chicken, coleslaw mix and green onions in large bowl.
  • Mix remaining ingredients except chow mein noodles in small bowl. Toss with chicken mixture. Sprinkle with chow mein noodles.

1 clove garlic, minced
1 teaspoon grated fresh ginger root
1 tablespoon white sugar
1 teaspoon salt

½ large head cabbage, cored and shredded
1 bunch green onions, thinly sliced
1 cup almond slivers
¼ cup toasted sesame seeds

Steps:

  • Whisk together sesame oil, vinegar, garlic, ginger, sugar, salt, and pepper in a small bowl until the sugar has dissolved. Toss the cabbage, green onions, almonds, and sesame seeds in a large bowl with the dressing until well coated.

4 1/2 cups fresh bean sprouts
2 cups sliced fresh white mushrooms
1/2 cup slivered almonds, toasted (see Tip)
1/4 cup raw sunflower seeds
2 tablespoons sesame seeds, toasted (see Tip)
2 green onions, chopped
1/2 cup cooking oil (or olive)
3 tablespoons white vinegar
8 tablespoons soy sauce
1 tablespoon granulated sugar
1 teaspoon salt
1/2 teaspoon pepper
1 (3 ounce) package instant chicken-flavored ramen noodles
1 1/2 cups dry chow mein noodles

Steps:

  • Put first 7 ingredients into large bowl. Toss.
  • Asian Dressing: Empty seasoning packet into jar with tight-fitting lid. Add next 6 ingredients. Shake well. Makes about 3/4 cup dressing. Drizzle over salad. Toss well.
  • Just before serving, break up instant noodles. Scatter over top. Sprinkle with chow mein noodles.

1/3 cup vegetable oil
1/4 cup fresh lime juice
2 tablespoons reduced-sodium soy sauce
2 teaspoons light brown sugar
1 teaspoon fish sauce (such as nam pla or nuoc nam)
1 teaspoon grated peeled ginger
Kosher salt
1/2 small head of red cabbage, thinly sliced (about 5 cups)
2 medium carrots, peeled, shredded
6 scallions, whites and pale greens only, thinly sliced
3 cups shredded rotisserie chicken
1 cup baby spinach, thinly sliced
1/3 cup chopped fresh cilantro
1/4 cup chopped dry-roasted peanuts
1/2 teaspoons toasted sesame seeds

Steps:

1 (16 ounce) bag coleslaw mix (or 1 medium head cabbage, thinly sliced and chopped)
1 bunch scallion, thinly sliced
1 (3 ounce) package ramen noodles, broken up (Your favorite flavor!)
1 -2 cup diced cooked chicken breast
1/2 cup canola oil (or vegetable oil)
2 tablespoons sesame oil
3 tablespoons rice wine vinegar
3 tablespoons sugar
1 teaspoon salt
1/4 teaspoon white pepper
2 1/2 tablespoons toasted sesame seeds
1/2-1 cup toasted slivered almonds

Steps:

  • Combine cabbage, scallions, ramen noodles (reserve ramen flavor packet for dressing) and chicken; refrigerate for up to six hours.
  • Just before serving shake together canola oil, sesame oil, rice wine vinegar, sugar, salt, pepper, and ramen flavor packet; pour dressing over salad and toss; add sesame seeds and almonds; toss until evenly mixed.
  • NOTE: I like to make the salad and salad dressing seperately a few hours in advance of whatever party I'm going to ~ I just dress the salad at the last minute so that it stays nice and crunchy.

  • Bring a large pot of water to a boil. Add 1 tablespoon kosher salt. Drop in the chicken and simmer for 15 minutes. Remove pan from heat, cover, and let sit for 15 minutes. Remove chicken, let cool briefly, then remove meat from bones, and pull or shred into pieces. (See notes above about making stock with poaching liquid and bones/skin).
  • Meanwhile, cut the cabbage into quarters through the core. Thinly slice it, discarding the core. Place in a large bowl and sprinkle with 1 tablespoon kosher salt. Using your hands, massage the salt into the cabbage. Let sit for 15 minutes. Fill bowl with cold water and jostle the cabbage with your hands. Drain into a large colander. Don’t worry about drying the cabbage.
  • Meanwhile, make the dressing: Whisk together the neutral oil, sesame oil, vinegar, lemon juice, sugar, and remaining teaspoon kosher salt.
  • In a large bowl, place the cabbage, pulled meat, almonds, sesame seeds, and scallions. Add the dressing and toss to coat. Serve.
