This is my family's favorite lasagna. It is a recipe I got from a local mennonite cookbook and it is SUPERB! It has a homemade tomato sauce that is easy to whip up while the noodles are cooking. Try it... I hope you love it as much as we do!

Number Of Ingredients 16

1 lb ground beef
1/2 cup chopped onion (sometimes I use slightly more)
3 cups tomato juice
2 tablespoons brown sugar
1 tablespoon vinegar
1 1/2 teaspoons salt
1 teaspoon oregano
1 teaspoon marjoram
1/2 teaspoon garlic powder
2 tablespoons cornstarch
1/3 cup water
8 ounces lasagna noodles
2 cups cottage cheese
2 cups shredded mozzarella cheese (I have always used the mozzarella) or 2 cups swiss cheese (I have always used the mozzarella)
1 tablespoon parsley flakes (I substitute fresh parsley when I have it)
1/3 cup parmesan cheese

Steps:

  • Brown ground beef and onion in large skillet, then drain.
  • Place beef and onion back into skillet.
  • Add tomato juice, brown sugar, vinegar, salt, oregano, marjoram, and garlic powder; cover and simmer for 20 minutes.
  • Meanwhile, cook lasagna noodles with 1 Tbsp oil according to the package directions.
  • Dissolve cornstarch in water and add to sauce, stirring until thickened.
  • In a greased 9x13 inch baking dish, layer noodles, meat sauce, cottage and mozzarella or swiss cheese, and parsley flakes.
  • Sprinkle parmesan cheese over the top.
  • Bake at 350 degrees for 35-40 minutes.

1 lb ground beef
1 cup chopped onion
1 (28 ounce) can crushed tomatoes
1 (6 ounce) tomato paste
1 (8 ounce) tomato sauce
2 teaspoons salt
1 teaspoon garlic
1 teaspoon dried basil
1/2 teaspoon dried oregano
1/2 teaspoon black pepper
1/2 bay leaf
1 (8 ounce) package lasagna noodles
1 lb mozzarella cheese
1/2 cup parmesan cheese

Steps:

  • Brown meat; drain.
  • Add onions; cook until soft.
  • Add garlic, tomato paste and tomato sauce.
  • Add all other ingredients, except cheese and noodles.
  • Cover and simmer for 1 hour.
  • Cook lasagna (9) noodles.
  • Boil for 9 minutes; drain.
  • Set in cold water.
  • Use glass dish, 9x13 dish.
  • Spread sauce on bottom, put 3 noodles, layer of sauce, cheese, and Parmesan cheese and repeat 2 more times.
  • Bake at 350 degrees for 30 to 40 minutes.

1 containers ricotta cheese
156 ounces spaghetti sauce
1 bags mozzarella cheese
3 units eggs
1 packages lasagna noodles
1 units meat
1 units parmesan sprinkle cheese

Steps:

  • 1. Mix ricotta cheese and 2 ladles of spaghetti sauce in separate bowl. Add 1/4 of the mozzarella cheese to the mixture and beaten eggs.
  • 2. Place 1-2 ladles of spaghetti sauce in bottom of pan. Place no-bake lasagna noodles over sauce. Place spoonfuls of the cheese mixture over each noodle and spread. Add meat layer if desired and sprinkle with parmesan cheese.
  • 3. Place lasagna noodles over top of sauce, cheese mixture, and/or meat layer and continue layering ending with remaining mozzarella cheese over top of sauce and sprinkle with parmesan cheese.
  • 4. Cover and bake at 350'F for 1 hour. Towards end of baking time, uncover so that the cheese melts. Let sit for approx. 5 minutes to let lasagna set up.
