This is an old German recipe handed down from generation to generation, using foods grown or raised on the family farm. I remember helping my grandmother make these when I could barely see over the kitchen table!-Ellen Batt, Hoisington, Kansas

Number Of Ingredients 15

DOUGH:
10 to 11 cups all-purpose flour, divided
1 package (1/4-ounce) active dry yeast
1/2 cup sugar
2 teaspoons salt
2-1/2 cups water
1 cup whole milk
1/2 cup butter, cubed
2 large eggs
FILLING:
2 pounds ground beef
1 large onion, chopped
2 teaspoons salt
1 teaspoon ground white pepper
2 pounds shredded cabbage, cooked and drained

Steps:

  • For dough, in a large bowl, combine 4 cups of flour, yeast, sugar and salt; mix well and set aside. , In a saucepan, heat water, milk and butter just until butter melts. Remove from heat and cool to 120°-130°. Combine with flour mixture; add eggs. Using an electric mixer, blend at low speed until moistened then beat at medium speed for 3 minutes. By hand, gradually stir in enough remaining flour to make a firm dough. , Knead on a floured surface about 10 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. Punch dough down; let rise again until almost doubled. , Meanwhile, for the filling, brown beef with onion, salt and pepper; drain. Mix together with cabbage; set aside. Divide the dough into fourths. Roll each piece into a 15x10-in. rectangle. Cut into 5-inch squares. Spoon 1/3 to 1/2 cup filling onto each square. Bring the four corners up over the filling; pinch together to seal. Repeat with remaining dough and filling. Place on greased baking sheets. , Bake at 375° for 30 minutes or until brown.

My Grandma's Super Easy Recipe For Bierocks image

Bierocks are soft rolls stuffed with ground beef, cabbage and onions. This recipe kicks things up a notch with sauerkraut and gruyère.

Yield 16 Bierocks

Number Of Ingredients 10

1 lb. Ground Beef
1 Yellow Onion, thinly sliced
2 Garlic Cloves, minced
1 tsp. Smoked Paprika
½ tsp. Cayenne Pepper
1 tsp. Cumin
6 oz. Gruyère, shredded
16 oz. Bavarian Sauerkraut
2 cans Grands Southern Homestyle Buttermilk Biscuits
All Purpose Flour, as needed

Steps:

  • Sauté ground beef with sliced onion, minced garlic, smoked paprika, cayenne and cumin until browned and crumbly. About 10 minutes. Drain the excess fat and allow the meat to cool in the strainer for a few minutes. Meanwhile, preheat the oven to 350F, shred the Gruyère and drain the sauerkraut.
  • Gently mix together the ground beef mixture, shredded cheese and sauerkraut in a large bowl.
  • Roll out each biscuit flat on a floured surface. Place 3 - 4 tablespoons of the filling in the center of each biscuit and fold up the sides like a steam bun to seal.
  • Place uncooked bierocks, seam side down, split among two parchment-lined baking sheets. Bake for 17 - 19 minutes, or until golden. Allow the bierocks to cool on a wired baking rack for 2 - 3 minutes before consuming. Enjoy!

One of my mother's dearest friends often made these for me. I loved them as a child. Now I make them for my little ones and the whole family adores them! I sometimes sprinkle a little grated cheddar cheese on top during the last 5 minutes of cooking. These a lunch time favorite at my house.

3 1/2 cups cabbage, shredded
2 tablespoons butter
1 lb ground beef
salt and pepper, to taste
1 (1/4 ounce) packet active dry yeast
2 teaspoons sugar
1/4 cup warm water
3/4 cup milk, scalded, cooled
1/2 teaspoon shortening
2 cups flour

Steps:

  • Melt butter in a skillet. Add the cabbage and saute.
  • Add the ground beef, season to taste, and cook until done.
  • Drain the grease, then set meat mixture aside.
  • In a small bowl, dissolve sugar and yeast, let this sit for about 5 minutes.
  • Mix flour, shortening, and milk into the yeast mixture. Mix well.
  • Knead this until you get a nice dough.
  • Place dough in greased bowl, rub some oil on top of the dough, cover and let rise until it has doubled in size.
  • On a sheet of floured wax paper, roll into a rectangular shape about 1/4 inch thick.
  • Cut the dough into 8 equal pieces.
  • Place two heaping tablespoons of the meat mixture into the center of each piece of dough. Then bring up the corners of the dough and press to seal the filling inside.
  • On a greased cookie sheet, place the dough seam side down.
  • Let the bierocks rise an additional 20 minutes.
  • Bake in a 375 degree oven for 30 minutes.

This recipe comes from a childhood memory. My mom was no Julia Childs, let me tell you, more like Bridget Jones. But when she made bierocks, they were good. I tried a lot of bierock recipes, but most of them called for frozen dough (yuck!). I use a bread machine, but that is not necessary. Mom's were good, mine are great!

1 small onion, chopped
2 ½ pounds ground chuck
2 teaspoons monosodium glutamate (such as Ac'cent®)
2 teaspoons red pepper flakes
salt and ground black pepper to taste
1 head cabbage, shredded
3 ¼ cups bread flour
1 ¼ cups milk, slightly warmed
½ cup all-purpose flour
1 egg, beaten
¼ cup white sugar
2 tablespoons butter, softened
1 ¼ teaspoons bread machine yeast
¾ teaspoon salt

Steps:

  • Cook and stir onion in a nonstick skillet over medium heat until tender, about 5 minutes. Add ground chuck; cook and stir until browned, about 8 minutes. Drain well. Season with monosodium glutamate, red pepper flakes, salt, and pepper. Reduce heat to low; simmer, stirring often, until flavors combine, about 5 minutes.
  • Bring a lightly salted pot of water to a boil. Add cabbage; reduce heat to low. Simmer, covered, until cabbage is just tender, about 15 minutes. Drain well and let cool, 5 to 10 minutes. Fold into the ground chuck mixture.
  • Place bread flour, milk, all-purpose flour, egg, sugar, butter, bread machine yeast, and salt in the bread machine in the order recommended by the manufacturer. Run "Dough" cycle.
  • Turn dough out onto a floured surface. Cut in half; roll each piece of dough to 1/3-inch thickness. Cut each piece into 5 smaller pieces.
  • Place a large spoonful of ground chuck-cabbage mixture in the center of each piece of dough. Fold dough over and seal around filling.
  • Arrange bierocks on greased baking sheets. Cover with a clean dish towel and place in a warm, dry place to rise for 1 hour.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Bake bierocks in the preheated oven until golden brown, 12 to 15 minutes.

This is a recipe I got when I was a senior in high school. That year, I attended a school in a German community in eastern Oklahoma. This is one of my favorite dishes from there. Prep time includes time for the dough to rise and chill.

2 cups warm water
2 tablespoons yeast
1/4 cup sugar
1 egg, lightly beaten
1/4 cup oil or 1/4 cup melted butter
6 1/2 cups flour, divided
1 1/2 teaspoons salt
1 1/2 lbs ground meat
1/2 cup onion, chopped
3 cups cabbage, finely chopped
1 1/2 teaspoons salt
1/2 teaspoon black pepper
1 dash Tabasco sauce

Steps:

  • For dough:.
  • Combine 2 cups warm water, 2 packages yeast and ¼ cup sugar.
  • Once yeast has started to foam, add 1 lightly beaten egg and ¼ cup oil or melted butter.
  • Stir in 6 cups flour and 1 ½ teaspoons salt to make a soft workable dough, add the extra ½ cup flour, if needed.
  • Knead until smooth and elastic (3-5 minutes). Let the dough rise in a warm, draft-free place until doubled.
  • Punch down, knead several times then refrigerate several hours.
  • For filling:.
  • In a large skillet, brown meat and onions.
  • Add cabbage, salt, pepper and Tabasco sauce and continue to cook over low heat until cabbage is tender. Do not add any liquid.
  • Cool slightly.
  • To assemble:.
  • Roll dough out into a large, thin rectangle. Cut into 5-inch squares.
  • Place 2 Tablespoons of filling on each square.
  • Bring edges together and pinch closed to form an �X�. Place, seam-side down, on a greased baking sheet.
  • Let rise 15 minutes.
  • Bake at 350° for 20-30 minutes.
  • Serve with a white sauce.
