1/2 cup (1 stick) unsalted butter, at room temperature, plus extra for greasing the pan
3/4 cup dark brown sugar
1 egg
1 teaspoon vanilla extract
3/4 cup whole wheat flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 teaspoon cinnamon
1 1/2 cups "old-fashioned" oats 1/2 cup raisins
1 to 2 baking sheets
Large bowl
Wooden spoon
Electric mixer, only if you have one
Bowl
Measuring cups
Measuring spoons
Cooling rack, if you have one, or a large plate

Steps:

  • Preheat the oven to 350 F. Lightly grease one or two baking sheets. Cream the butter and the sugar together in a mixing bowl (by hand with a wooden spoon or using a handheld electric mixer) until fluffy. Beat in the egg. Stir in the vanilla extract, flour, baking soda, baking powder, and salt together in a separate mixing bowl. Beat them into the butter mixture. Stir in the oats and raisins. Drop the batter by slightly mounded tablespoons onto the prepared baking sheet(s). Bake until lightly browned on the bottom, 10 to 12 minutes. Variation: Add ½ cup unsweetened shredded coconut or 1 cup chocolate chips to the batter along with the oats and raisins Serving suggestions: Delicious with a glass of ice cold milk. Tips from the dietitian: Cookies can be enjoyed if you watch the amount and type of cookies you eat. These cookies are made with whole oats and whole wheat flour so they have some better qualities than mass produced cookies you can buy - those tend to be high in fat and sugar, and who knows what else goes into them! Food safety: Eating raw cookie dough is not safe because it has raw egg in it. Raw eggs may contain salmonella which can cause health problems especially for people with compromised immune systems.

1 pinch salt
1 cup old-fashioned oat
1 cup raisin
¼ cup unsweetened applesauce
½ avocado, mashed
½ banana, mashed
¼ cup olive oil

Steps:

  • Preheat oven to 350°F (180°C).
  • Mix unsweetened applesauce (or mashed avocado, mashed banana, olive oil), maple syrup, egg, and vanilla extract.
  • Add in flour, cinnamon, and salt. Mix until combined.
  • Fold in old-fashioned rolled oats and raisins until mixed.
  • Scoop mix onto a oil sprayed baking tray.
  • Bake for 12-15 minutes.
  • Enjoy!

Full of nubby oats and plenty of sweet raisins, these lightly spiced cookies are pleasingly chewy in the center and crisp around the edges, with a hint of butterscotch from the dark brown sugar. They keep really well, so you can make them up to a week in advance and store them in an airtight container at room temperature. They're also great for mailing when a package of cookies is in order.

1 cup/227 grams (2 sticks) unsalted butter, softened, more for pans
1 cup/200 grams dark brown sugar, packed
1/3 cup/66 grams granulated sugar
2 large eggs
1 tablespoon/15 milliliters vanilla extract
1 1/2 cups/187 grams all-purpose flour
3/4 teaspoon salt
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon freshly grated nutmeg
1/4 teaspoon ground cardamom or ground ginger
3 cups/270 grams rolled oats (not instant)
1 1/2 cups/225 grams raisins

Steps:

  • Heat oven to 350 degrees. Butter two large cookie sheets, or line them with parchment paper or reusable silicone liners.
  • Using an electric mixer, beat butter in a large bowl until creamy. Add brown and granulated sugars, then beat until fluffy, about 2 minutes. Beat in eggs, one at a time, until fully incorporated. Then, beat in vanilla extract.
  • In a separate bowl, use a wooden spoon or spatula to mix together the flour, salt, baking soda, cinnamon, nutmeg and cardamom. Set mixer on low speed, and beat flour mixture into the butter mixture. Stir in oats and raisins.
  • Spoon out dough by large tablespoonfuls onto prepared cookie sheets, leaving at least 2 inches between each cookie.
  • Bake until cookie edges turn golden brown, about 9 to 13 minutes. Centers will still be quite soft, but they will firm up as the cookies cool. Cool completely on a wire rack. Store in an airtight container at room temperature.
