JAMIE OLIVER'S AVOCADO, PANCETTA & PINE NUT SALAD
This is simple and delicious as a main dish salad. (It came from a free grocery store magazine!) Serve with some warm crusty bread and a glass of wine.

Steps:
- Heat a frying pan and fry the pancetta until crispy.
- Remove from the pan and set aside.
- In the same pan, lightly toast the pine nuts. (This happens quickly, don't abandon them.).
- Make your dressing by combining 1 tbsp olive oil and season with salt and freshly ground black pepper.
- Taste to make sure your dressing is balanced; add a little more oil or vinegar if needed.
- On serving plates, lay out the avocado.
- Sprinkle over the spinach leaves, pancetta and pine nuts.
- Season well with salt and freshly ground black pepper.

- In a food processor or blender, puree 1/4 cup mango, orange juice, oil, mustard, salt, and pepper.
- In a large bowl, combine the lettuce, cabbage, green onions, beans, remaining mango and pine nuts. Toss gently with the dressing and divide into four bowls.

ASPARAGUS, HALLOUMI AND PINE NUT SALAD

Steps:
- Snap the stems off the asparagus so that you are left with the green, edible parts.
- Drop the asparagus into boiling water for about 4 minutes, until al dente.
- Drain and refresh under cold water.
- Set the asparagus aside to drip dry.
- Unwrap the halloumi and pat it dry.
- Slice it into eight slices and press it into the seasoned flour to coat.
- Put the olive oil in a pan to heat and when it is hot, slide in the halloumi cheese slices.
- Cook for a minute per side, until a golden colour.
- Mix up the olive oil, parsley and lemon juice.
- Serve the asparagus with the warm halloumi and the dressing drizzled over the top.
- Scatter the pine nuts over the plate.
- Dressing: Mix up the olive oil, parsley and lemon juice.

PACIFIC NORTHWEST STRAWBERRY, GOAT CHEESE & PINE NUT SALAD
Attractive salad with a mix of textures which I've adapted from Taste magazine which is put out by a variety of Liquor Distributors. Goes well with Pacific Northwest Poached Salmon in white Wine Bouillon **I've found I prefer using lemon juice instead of orange juice with this recipe. If you prefer tart over sweet, you may too.
