Celery Root Soup with Croutons image

Celery soup is one of my favorite soups. This version is very thick; if you like a thinner soup, you can add some milk in the end.

1 pound celery root, peeled and quartered
3 cups vegetable broth
¾ cup heavy cream
1 pinch salt to taste
1 pinch ground white pepper to taste
1 pinch ground nutmeg
1 tablespoon finely chopped fresh parsley leaves
2 slices Italian bread, cubed
1 tablespoon butter

Steps:

  • Bring a large pot of lightly salted water to a simmer, add celery root pieces, and simmer until soft, about 30 minutes. Drain.
  • Place celery root in a blender and process until smooth. Transfer puree to a pot, add vegetable broth, and bring to a boil over medium-high heat. Reduce heat and simmer for 5 minutes. Add cream and cook until hot, but don't boil. Season with salt, pepper, and nutmeg.
  • Meanwhile, melt butter in a skillet over medium heat and toast bread cubes until dry and lightly browned, 3 to 5 minutes.
  • Ladle soup into bowls and garnish with chopped parsley and croutons.

2 tablespoons olive oil, plus more for garnish (optional)
1 large onion, coarsely chopped
1 large celery root (about 1 ½ pounds), peeled and coarsely chopped
1 small baking potato, peeled and coarsely chopped
1 teaspoon kosher salt
1/2 teaspoon garlic powder
2 to 3 cups vegetable stock, divided
Paprika for garnish (optional)

Steps:

  • In a medium pot, heat olive oil over medium-high heat. Add onions, celery root, and potatoes; sauté until beginning to soften, about 8 to 10 minutes. Add salt and garlic powder, and sauté until fragrant, about 2 minutes. Add 2 cups stock and bring to a boil. Reduce to a simmer and cook until celery root and potatoes are softened, about 12 to 16 minutes. Using an immersion blender, blend until smooth, adding extra stock as necessary to reach desired consistency. Divide among 6 small bowls and garnish with a pinch of paprika and a drizzle of olive oil. Serve immediately, or refrigerate until ready to serve and reheat on the stove top. MAKE IT A MEAL: Divide soup between 2 large bowls and serve with seasoned rolls: Take store-bought pizza dough, shape into dinner rolls, and bake according to package directions. Before baking, brush each roll with olive oil and sprinkle with a mixture of poppy seeds, garlic powder, and kosher salt. Tip - Serve this soup in shooters if you're having a buffet style meal so everyone can have a taste.

4 tablespoons butter
1 head celery, chopped (include the leaves!)
1 small onion, chopped
2 garlic cloves, minced
1 large russet potato, ptato peeled and diced very small
1/4 cup flour
2 cups chicken stock (or veggie stock)
1/2 cup white wine (or can use apple juice or white grape juice)
1/4 teaspoon white pepper
1/8 teaspoon cayenne pepper (to taste)
salt, if needed, to taste
3/4 cup heavy cream (or half and half or light cream)
4 ounces crumbled blue cheese

Steps:

  • In a soup pot over medium heat, melt butter. Add celery, onion, garlic and potato and saute for 5 - 7 minutes.
  • Add flour and stir constantly for 1 minute.
  • Slowly add stock, wine, white pepper and desired amount of cayenne. Bring to a boil; reduce heat and simmer for 15 - 20 minutes (stirring often), or until veggies are very tender.
  • Stir in cream and blue cheese. Heat through but do not allow to boil. Add salt, if needed.
  • Serve.

2 1 pound celery roots, peeled, cut into 1 inch pieces
2 medium onions, chopped
1 cup chopped celery
2 garlic cloves, minced
1 teaspoon celery salt
1/8 teaspoon cayenne pepper
1/2 cup dry vermouth or dry white wine
5 cups chicken or vegetable stock
1 cup whipping cream
Chopped fresh chives or celery leaves

Steps:

  • Melt butter in heavy large saucepan over medium heat. Add celery roots, onions and celery. Sprinkle with salt and pepper. Cover and cook until tender, stirring occasionally, about 20 minutes. Add garlic, celery salt and cayenne pepper and stir 1 minute. Add vermouth and boil until most of liquid evaporates, about 8 minutes. Add stock. Bring to boil. Reduce heat and simmer until vegetables are very tender, about 15 minutes. Puree soup in blender in batches until smooth. Return to saucepan. Add cream. Simmer until thickened to desired consistency, about 5 minutes. Ladle soup into bowls. Sprinkle with chives and serve.

1 medium onion, diced
1 tsp salt
1 large celery root, cubed
1 litre water or stock
2-3 bay leaves
Parmesan cheese to garnish (optional)

Steps:

  • In a large pot or dutch oven, heat the olive oil. Add the onion and salt and sweat until the onions are soft and translucent.
  • Add the cubed celery root and enough water or stock to cover.
  • Add 2-3 bay leaves and bring the soup to a boil.
  • Reduce heat to medium and cover until the celery root is tender, approximately 10-20 minutes.
  • Blend the soup using a stick blender, regular blender, or food processor.
  • Check for seasoning and adjust with salt if needed.
  • Serve in a large bowl with optional garnishes.

1 celeriac (celery root) - peeled, quartered, and thinly sliced
½ cup heavy cream, or as needed
½ cup milk, or as needed
1 pinch ground nutmeg, or more to taste
3 ounces shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place celeriac in a saucepan; pour in enough heavy cream and milk to cover 3/4 the celeriac. Sprinkle with nutmeg. Bring celeriac mixture to a boil; reduce heat and simmer until celeriac is slightly tender, about 5 minutes. Transfer celeriac mixture to a 9x9-inch square baking dish; top with Cheddar cheese.
  • Bake in the preheated oven until bubbling and cheese is melted and browned, about 20 minutes.

1 potato peeled and roughly chopped
2 tbsp. butter
2 celery roots, peeled and roughly chopped
10 cups tomato consommé
salt and pepper to taste

2 slices white bread,crusts, removed
1/4 cup crumbled blue cheese
1 tbsp. finely chopped chives

Steps:

  • Gently sauté the onion and potato in butter in a soup pot. After 5 minutes, add the celery root and consommé or stock. Bring to a boil Simmer for 40 minutes until celery root is very tender. Puree in a food processor or blender and then pass through a sieve. Return soup to pot and keep at a simmer. Season with salt and pepper to taste. Preheat oven to 275 and cut bread into 6 squares or triangles. Place pieces of bread on baking sheet and toast in oven till golden brown. Carefully place crumbled cheese on bread and return to oven until cheese is melted. Serve soup in warm bowls. Place one crouton in each soup Sprinkle with chives.
