BRAN MUFFINS
These moist, old-fashioned Bran Muffins are a quick breakfast or snack -- just like Grandma made them!

Steps:
- Preheat oven to 400 degrees F. Line a muffin tin with paper liners or spray with cooking spray.
- In a large bowl, mix together flour, wheat bran, brown sugar, baking powder, salt and cinnamon.
- In a separate bowl, whisk together eggs, buttermilk, applesauce, molasses and butter. Add the wet ingredients to the dry ingredients and mix just until moistened (do not overmix). Fold in raisins, cranberries, or currants.
- Pour batter into prepared muffin tins. Bake for 15 minutes, or until a toothpick inserted in the center comes out clean.

Steps:
- Preheat oven to 400°F.
- Grease 12 muffins cups and set aside.
- Mix bran cereal and milk in a small bowl and allow cereal to soften and absorb most of the milk.
- In a mixing bowl, combine cereal/milk, egg and butter, mixing well.
- Sift flour, baking powder and salt in a bowl.
- Add sugar.
- Combine flour with cereal mixture and stir until just moistened.
- Do not overmix.
- Spoon batter evenly into muffin cups.
- Top each cup with a spoonful of date filling.
- Bake for 20-25 minutes or until they are lightly springy.
- Cool muffins on a wire rack.

- In a large bowl, combine flour, sugar, baking powder and salt. In a small bowl, lightly beat eggs; add milk, butter and lemon zest. Pour into dry ingredients and stir just until moistened. Spoon half of the batter into 12 greased or paper-lined muffin cups. Make a well in the center of each; add jam. Spoon remaining batter over jam. Bake at 400° for 20-25 minutes or until golden.
