I found a wonderful cookbook at a garage sale last summer. It's 566 pages of recipes from the employees of Dayton's,Hudson's, and Marshall Fields. We tried this one and really loved it! It was submitted by Geri Phillips of Marshall Fields.

4 boneless skinless chicken breast halves
4 tablespoons butter
1/4 lb sliced fresh mushrooms
1 cup sour cream
1 (10 ounce) can cream of chicken soup
1/2 teaspoon garlic salt
1/2 teaspoon paprika
1 cup shredded swiss cheese

Steps:

  • Heat oven to 350 degrees F.
  • Saute chicken in butter until lightly browned.
  • Place chicken in greased 8x8 baking dish.
  • In skillet, saute mushrooms until lightly browned; add sour cream and soup.
  • Cook and stir for 1 minute, scraping bits from bottom of pan.
  • Add garlic salt and paprika.
  • Pour mixture over chicken.
  • Bake for 30-35 minutes, until juices run clear.
  • Sprinkle cheese over chicken; bake another 10 minutes, until cheese is melted and bubbly.

4 split chicken breasts (skin-on and bone-in), any size breast is fine
4 tablespoons extra virgin olive oil, divided
½ teaspoon kosher salt
¼ teaspoon freshly ground black pepper
½ lemon, cut into four pieces
3 large sprigs fresh thyme, left on the stem
1 cup shallots, sliced
1 tablespoons garlic, chopped
¼ cup vermouth or white wine
2 cups chicken stock
½ cup heavy cream
4 tablespoons cold butter
2 tablespoons fresh parsley, minced

Steps:

  • Bring the chicken to room temperature. Lay out on your cutting board and pat dry.

This classic chicken supreme recipe, with its retro-bistro charm, works beautifully as a supper for family or friends. Serve with baked potatoes, or buttered boiled potatoes and green vegetables.

knob of butter
1 tsp olive oil
4 chicken breasts, boneless, skin-on
50g/1¾oz smoked bacon lardons or roughly chopped smoked streaky bacon
2 small onions or large shallots, finely chopped
2 garlic cloves, crushed
100ml/3½fl oz dry white wine
300ml/10fl oz double cream
salt and freshly ground black pepper

Steps:

  • Melt the butter with the oil in a large, lidded frying pan over a medium heat. Season the chicken all over and brown on both sides. Remove it from the pan and set aside.
  • Add the bacon and onions to the pan and cook gently for 10 minutes until soft, stirring occasionally. Stir in the garlic and cook for another 5 minutes.
  • Pour in the wine and let it bubble for a minute or so, then stir in the cream. Return the chicken to the pan, skin-side down, cover and cook for 10 minutes.
  • Turn the chicken over, half-cover the pan and cook for 5-10 minutes more, or until the breasts are cooked through and the sauce has reduced to the consistency of thick cream. Season and serve.

  • Fry the onion and garlic together in olive oil until soft and golden. Remove from pan.
  • In same pan fry bacon until golden.Remove from pan.
  • Fry chicken until cooked. Add the onion garlic and bacon to the chicken. Mix together.
  • Add the stock liquid. Add the cream. Stir until coated. Heat until fully warmed through
  • Serve with white rice.

  • 1. __Remove chicken from the refrigerator__. Allow your chicken to come to room temperature. Season well with salt and black pepper and let it rest.
  • 2. __Prepare the root vegetables__. Preheat oven to 425 degrees F. Wash all vegetables thoroughly and dry. Form a bed of rosemary, thyme and parsley in a roasting pan. Lay the vegetables on top, season with salt and seal tightly with aluminum foil, shiny side up.
  • 3. __Cook the root vegetables__. Place roasting pan over medium heat on the stove top. Let the vegetables heat up, about 1 minute, until you hear crackling, then transfer pan to oven. Cook the vegetables until they are knife-tender, 30 to 40 minutes depending on size.
  • 4. __Sear the chicken__. Place a large skillet over high heat and add grapeseed oil. When the oil in the pan is hot, lay the chicken skin-side down into the pan. Dump the garlic and thyme on top of the chicken in the pan and reduce to medium heat. Allow to cook, undisturbed, until skin releases and browns on the edges, about 4 minutes. To sear the sides, tilt the chicken to the edge of the pan, about 10 seconds per side.
