ITALIAN VEGETABLE DIP



Italian Vegetable Dip image

Mind-boggingly simple. If you are in a super hurry you can mix and serve the dip immediately, but the flavor is better after sitting for a while.

1 cup mayonnaise
1 cup sour cream
1 (6 ounce) packet Italian salad dressing mix
2 seeded and chopped plum tomatoes
1/2 diced red bell pepper
1/2 cup thinly sliced scallion
1/4 cup minced fresh Italian parsley
assorted cut up vegetables
italian breadstick

Steps:

  • Mix together the mayonnaise, sour cream, salad dressing mix, tomatoes, bell pepper, scallions, and parsley.
  • Cover tightly and refrigerate for at least 2 hours and up to 48 hours before serving with the cut up vegetables and breadsticks.

This is a delicious yet quick and easy vegetable dip. I got this recipe from my mom. It has been a favorite at family gatherings for years. I like to substitute low cal/fat/carb ingredients to reduce calories and fat. Enjoy!

1 (8 ounce) container thousand island dressing (can use regular or any of the light versions)
8 ounces cream cheese (can also substitute with light version)

Steps:

  • Combine ingredients into a mixing bowl.
  • Blend with with hand-held mixer until the mixture has the consistency and texture of cottage cheese.
  • Serve chilled with vegetables commonly used for crudite trays, such as cauliflower, celery, carrots, broccoli, etc.

JAMES BEARD'S YORKSHIRE PUDDING

Taken from The James Beard Cook Book, 1961 copy. I prepare this recipe every time I do a prime rib roast, always with excellent results.

2 large eggs, beaten
1 cup milk
1 cup flour (scant cup)
salt, to taste
beef drippings, as required

Steps:

  • In a mixing bowl, beat the eggs with an electric mixer (or a LOT of elbow grease) until they are light and fluffy.
  • Gradually beat in the scant cup of flour and the milk.
  • Add salt and about 2 tablespoons of beef drippings from the roast it is assumed you are also making.
  • Heat a baking pan (like a cake pan) in the oven (set at 450F) until it is hot, then pour 1/4 cup of beef drippings into the bottom of the pan.
  • Immediately pour in batter and bake for 10 minutes.
  • Reduce heat to 350F and cook for 10 to 15 minutes longer, until Yorkshire is puffy and well browned.
  • Cut into squares to serve.
  • James Beard suggests making this after the roast comes out of the oven:"This can be done after the roast is removed from the oven and while it is standing to let the juices settle".
