Steps:
- Heat 1 tablespoon of peanut oil in a large heavy Dutch oven over medium heat. Season the sausage and chicken pieces with Cajun seasoning. Saute sausage until browned. Remove with slotted spoon, and set aside. Add 1 tablespoon peanut oil, and saute chicken pieces until lightly browned on all sides. Remove with a slotted spoon, and set aside.
- In the same pot, saute onion, bell pepper, celery and garlic until tender. Stir in crushed tomatoes, and season with red pepper, black pepper, salt, hot pepper sauce, Worcestershire sauce and file powder. Stir in chicken and sausage. Cook for 10 minutes, stirring occasionally.
- Stir in the rice and chicken broth. Bring to a boil, reduce heat, and simmer for 20 to 25 minutes, or until liquid is absorbed.

Steps:
- In a large Dutch oven heat olive oil over medium heat.
- Add onions, celery, and bell peppers and season with salt and pepper.
- Cook for 4 minutes, or until just tender. Stir in garlic and cook for 1 minute.
- Stir in chicken and add sweet paprika and oregano.
- Cook for 5 minutes, or until chicken is browned on all sides.
- Stir in prepared sausage and tomato paste; cook for 1 minute.
- Add chicken broth, crushed tomatoes, rice and cajun seasoning.
- Bring mixture to a boil; reduce heat to medium low and cover the pot with a lid.
- Cook for 20 minutes, or until rice is tender and most of the liquid is absorbed.
- Add the shrimp and cook for 4 to 5 minutes, or until shrimp is pink and cooked through.
- Remove from heat.
- Garnish with sliced green onions and dried parsley.
- Serve.

JAMBALAYA RECIPE (CREOLE)

- Heat 1 tablespoon of oil in a large pot or Dutch oven over medium heat. Season the sausage and chicken pieces with half of the Cajun seasoning.
- Brown sausage in the hot oil; remove with slotted spoon and set aside. Add remaining oil to the pot and sauté chicken until lightly browned. Remove with slotted spoon; set aside.
- Sauté the onion, bell pepper and celery until onion is soft and transparent. Add the garlic and cook until fragrant (30 seconds).
- Stir in the tomatoes; season with salt, pepper, thyme, oregano, red pepper flakes (or Cayenne powder), hot pepper sauce, Worcestershire sauce, and the remaining Cajun seasoning. Stir in the okra slices (or file powder), chicken and sausage. Cook for 5 minutes, while stirring occasionally.
- Add in the rice and chicken broth, bring to a boil, then reduce heat to low-medium. Cover and let simmer for about 20 to 25 minutes, or until liquid is absorbed and rice is cooked, while stirring occasionally.
- Place the shrimp on top of the Jambalaya mixture, stir through gently and cover with lid. Allow to simmer while stirring occasionally, until the shrimp are cooked through and pink (about 5-6 minutes, depending on the size/thickness of the shrimp being used).
- Season with a little extra salt and pepper if needed and remove from heat. Adjust heat with extra hot sauce, Cayenne pepper or Cajun seasoning. Serve immediately with sliced green onions and parsley.

JAMBALAYA, WITH THANKS TO POL MARTIN
I am a great fan of the late Pol Martin, I recently made his Jambalaya, from "Pol Martins Supreme Cuisine", using left over gammon from Christmas Day in place of the ham. The family absolutely loved it! So I've brought it here to share with you. I've recorded the recipe as written, but should add that I did not cook this in the stove at all, (I've mentioned this in the directions), I used the tinned tomatoes, with their juice, and I didn't have fennel seed, so simply omitted it, after some deliberation about possible subs. Also, please note that the recipe uses Cooked rice, I have not included cooking time for the rice, although I cooked mine in the microwave whilst cooking the bacon, onion, etc, down to step 4, it took around twenty minutes to cook. Final note, that should read a FEW drops of hot pepper sauce, but somehow, it keeps coming out as 3! Add whatever you are comfortable with!

- Preheat oven to 350F/180C (Only if you follow instructions for cooking in oven).
- Cook bacon in large pan over medium heat. Remove from pan and set aside.
- Add onion and garlic to hot pan. Cook 8 minutes over low heat, stirring occasionally.
- Stir in tomatoes, fennel and thyme. Cook 5 minutes.
- Add rice, chicken stock, ham and cooked bacon. Mix well and bring to boil. Cover and cook for 15 minutes in oven.
- (I did not cook this in the oven, I covered the pan, turned down the heat to medium for a gentle simmer, and allowed it to continue simmering on top of the stove).
- Add shrimp and peppers to pan. Mix and add hot pepper sauce. Cover and return to oven (or continue on top of stove), continue cooking for 8 - 10 minutes.

- Pre-cut the meat into bite-sized chunks and peel and devein any shrimp. Jambalaya takes a ton of ingredients, puts them in the same big pot, and lets the flavors meld and blend into something amazing.
- Chop the yellow onion, 2-3 stalks of celery, and green pepper into small cubes. Onions, celery, and green pepper form the "Holy Trinity" of Cajun food, and these three aromatic ingredients are at the base of almost every Cajun dish.
- Heat up 2 tablespoons of oil over medium-high heat until shimmering. Make sure you have a nice large sauce pot, preferably with a thick-bottom.You don't want the oil to start smoking, just shimmering lightly, as if a quiet lake is being disturbed by a light breeze.
- Add the chopped vegetables, a quick pinch (1/2 teaspoon) of salt, and stir well. Salt should be added in small doses while you cook, as it helps unlock the natural flavors of your ingredients as you're cooking.
- Mince any desired jalapenos and garlic and add to your Holy Trinity. Now that your base is completed, you can start making it your own. Chop up 1-2 jalapeno peppers and 3-5 cloves of garlic, depending on taste.
- Toss the meat in (EXCEPT the shrimp), add a pinch of salt, and stir. Toss in everything but the prawns and let them cook until they are almost finished.
- Heat up your 3-4 cups of broth or stock while the meats finish cooking. You can add it cold, but this literally halts the cooking process until the pot can get back up to heat.
- Add the stock, can of crushed tomatoes, and stir until the liquid is simmering. A simmer is when the bubbles are constantly breaking the surface of the liquid.
- Lower the heat to medium-low and add your spices, stirring well. This is where you really can make the jambalaya your own, customizing it to your taste buds and preferences.
- Add the rice, cover the pot, and simmer for a half hour, stirring occasionally. Check the rice starting at 20-25 minutes, stirring every few minutes to prevent the rice on the bottom from burning.
