VEGAN JAMBALAYA



Vegan Jambalaya image

This vegan jambalaya with beans and vegetables is the ultimate comfort food from the South! It's super easy to make, so delicious and packed with proteins!

1 red onion, chopped
3 cloves of garlic, minced
1 red bell pepper, cut into medium-sized chunks
2 stalks of celery, chopped
2 vegan andouille sausages, roughly chopped ((you could also use vegan Italian or Mexican sausages instead))
3 cups leftover cooked parboiled rice ((=1.5 cups uncooked rice) )
1 can (14 oz) crushed tomatoes
1 can (14 oz) kidney beans, drained
2 teaspoons dried oregano
1 teaspoon dried basil
1 teaspoon Cajun seasoning
1 teaspoon smoked paprika powder
2 tablespoons soy sauce
1 teaspoon Tabasco
salt, to taste
cayenne pepper, to taste
2 green onions, cut into rings
1/2 cup fresh parsley, chopped

Steps:

  • In a large pan, heat some oil and sauté the red onion for about 2-3 minutes. Add the garlic and cook for another minute. Then add the bell pepper, the celery, and the vegan sausage. Cook for another 3 minutes.
  • Stir in the cooked rice, the kidney beans, the crushed tomatoes, the spices, the soy sauce, and the Tabasco and cook for about 5 minutes.
  • Season with salt and cayenne pepper and stir in the green onions and the chopped parsley.

2 tablespoons olive oil
1 cup diced onion
½ cup diced green bell pepper
½ cup diced celery
1 ½ teaspoons chopped garlic
1 cup converted long-grain white rice
4 ounces smoked sausage, cut into slices
4 ounces cooked ham, cut into bite-size pieces
2 (10 ounce) cans diced tomatoes with green chile peppers
1 cup chicken broth
¼ teaspoon dried thyme
1 bay leaf
2 (15 ounce) cans ranch-style beans, undrained

Steps:

  • Heat oil in a large saucepan over medium heat. Saute onion, green pepper and celery, until onions are soft and translucent. Stir in garlic, and cook another minute. Add rice, sausage and ham. Cook 2 to 3 minutes, to coat the rice with oil, stirring frequently. Pour in tomatoes with green chiles and chicken broth. Season with thyme and bay leaf. Bring to a boil, then reduce heat. Cover, and simmer 20 to 25 minutes, or until liquid is absorbed. Stir in the beans, mix well and heat through.

1 tablespoon oil
1 cup onion
1/2 cup celery
1/2 cup green pepper
2 garlic cloves
1 cup salsa
1 cup tomato sauce
1 cup bulgur
1/2 teaspoon thyme
1/4 teaspoon cayenne pepper
1/2 cup vegetable broth
1 (14 1/2 ounce) can pinto beans
1 (11 ounce) can corn

Steps:

  • Warm oil over medium-high heat. Add onions, celery, green peppers, and garlic. Cook 4-5 minutes.
  • Stir in salsa, tomato sauce, bulgur, thyme, cayenne, and 1/4 c veggie broth. Bring to a boil, then reduce heat to low and simmer, covered, 10 minutes.
  • Stir in beans, corn, and remaining stock. Cover and simmer 10 more minutes, until bulgur is cooked.

This recipe comes from "The Good Carb Cookbook" by Sandra Woodruff, M.S., R.D. Depending on how hot I want it, I sometimes use tomatoes w/green chiles instead of regular tomatoes. This is another one of those recipes that I can make most anytime because I usually have everything on hand.

1 cup smoked sausage, diced (about 5 ounces)
1/2 cup onion, chopped
1/2 cup celery, sliced
1 teaspoon garlic, crushed
14 1/2 ounces canned tomatoes, undrained
1 (15 ounce) can red beans, drained and rinsed
1 1/2-2 teaspoons cajun seasoning
1 1/2 teaspoons ground paprika
3 cups cooked brown rice

Steps:

  • Coat a large skillet or dutch oven with cooking spray.
  • Over medium heat, add the sausage, onions, celery, and garlic. Cook, stirring frequently, for about four minutes or until the vegetables start to soften.
  • Add the undrained tomatoes, red beans, and seasonings to the pan. Cook covered, stirring occasionally for about five minutes.
  • Stir in the rice and cook and stir for another minute or two until the rice is heated through.

SPICY BLACK BEAN JAMBALAYA

Started out as a soup, but with the addition of rice makes a nice jambalaya. For the rice I use Uncle Ben's ready to serve brown rice, which eliminates the rice cooking process.

1 tablespoon extra virgin olive oil
1/4 cup frozen onion
1/4 cup frozen bell pepper
1 teaspoon ground red pepper
1 teaspoon black pepper
1 teaspoon minced garlic
10 canned jalapeno slices (optional)
2 tablespoons salsa
2 teaspoons hot sauce
1 (15 1/4 ounce) can black beans, drained not rinsed
1 cup water
2 cups brown rice (cooked) or 2 cups white rice (cooked)
shredded cheese (optional)

Steps:

  • In a large skillet heat olive oil over medium high heat.
  • Add onions, bell peppers and spices and saute until soft.
  • Add garlic and saute until you can smell the aroma.
  • Add jalapenos if desired, salsa, hot sauce, black beans, water, and rice and mix well. Turn heat up to high and let come to a boil.
  • Once it comes to a boil, turn the heat down to medium, cover, and let simmer for 8 - 10 minutes.
  • Garnish with shredded cheese if desired.

12 ounces cured andouille sausages (precooked, sliced) or 12 ounces smoked sausage (precooked, sliced)
1 yellow bell pepper (diced)
1 red bell pepper (diced)
1/2 of a medium white onion (diced)
2 stalks celery (diced)
14 1/2 ounces diced tomatoes
2 tablespoons jamaican jerk seasoning (Wildtree brand)
2 tablespoons roasted garlic grapeseed oil
3/4 cup white rice
3/4 cup water

Steps:

  • Heat a large skillet over medium high heat. Add chicken through grapeseed oil). Bring to a boil.
  • Add ¾ cup rice and ¾ cup water to skillet, and return to a boil.
  • Reduce heat to med-low, COVER, and cook for 25-30 minutes until rice is tender and liquid is absorbed. Uncover, fluff with a fork, and serve.
