JAMBALAYA GRITS
Steps:
- In a Dutch oven or large, heavy pot heat the olive oil over medium-high heat.
- Add onion and green pepper and cook until soft, about 4 minutes.
- Add Andouille sausage and ham and cook for 2 minutes, stirring occasionally.
- Add garlic and cook 1 minute.
- Add water, milk, and salt and bring to a simmer. Gradually stir in grits.
- Add TABASCO sauce, Creole or Cajun seasoning, and pepper. Cook, stirring frequently for about 4 minutes.
- Stir in shrimp and tomato and cook for another 3 minutes, or until shrimp are cooked through.
- Stir in cheese and green onions. Serve.

Steps:
- Heat 1 tablespoon of peanut oil in a large heavy Dutch oven over medium heat. Season the sausage and chicken pieces with Cajun seasoning. Saute sausage until browned. Remove with slotted spoon, and set aside. Add 1 tablespoon peanut oil, and saute chicken pieces until lightly browned on all sides. Remove with a slotted spoon, and set aside.
- In the same pot, saute onion, bell pepper, celery and garlic until tender. Stir in crushed tomatoes, and season with red pepper, black pepper, salt, hot pepper sauce, Worcestershire sauce and file powder. Stir in chicken and sausage. Cook for 10 minutes, stirring occasionally.
- Stir in the rice and chicken broth. Bring to a boil, reduce heat, and simmer for 20 to 25 minutes, or until liquid is absorbed.

- In a Dutch oven, heat oil over medium-high heat. Add chorizo and ham; cook and stir 3-4 minutes or until browned., Add chicken to pan; cook 5-7 minutes or until no longer pink. Stir in tomatoes, broth, peppers, onion, Cajun seasoning and pepper sauce. Bring to a boil. Reduce heat; simmer, uncovered, 8-10 minutes or until peppers are crisp-tender., Return to a boil; stir in rice and shrimp. Reduce heat; simmer, covered, 7-9 minutes or until shrimp turn pink. Remove from heat; let stand, covered, 5 minutes or until rice is tender.

While true jambalaya is really more of a thicker rice stew than a soup, it's one of those dishes that more stock can be added to easily make it into a soup recipe. Serve garnished with green onion.

Steps:
- Place butter and sausage in a large stockpot over medium heat; cook and stir for 5-6 minutes until sausage begins to brown.
- Stir in paprika, cumin and cayenne; cook for 1 minute.
- Stir tomatoes, celery, green pepper, green onions, salt, and bay leaf into sausage mixture.
- Add brown rice and stir to combine. Stir in chicken stock and turn heat to low. Cover and cook for until rice is just tender, about 45 minutes.
- Stir in shrimp, replace lid and cook for 5 minutes. Season with salt and black pepper.

- Preheat oven to 350 degrees F (175 degrees C).
- Melt butter in large stock pot. Saute onion, green pepper, celery and garlic until tender, being careful not to burn the garlic. Add tomato paste and cook to brown slightly, stirring constantly. Stir in bay leaves, Creole seasoning blend and Worcestershire sauce. Pour into a large roasting pan. Squeeze tomatoes to break up into pieces, and add to mixture in pan. Stir in juice from tomatoes, chicken stock, ham, sausage, chicken, shrimp and rice. Mix well. Cover tightly with aluminum foil.
- Bake in preheated oven for 1 1/2 hours, stirring once halfway through baking time. Remove bay leaves before serving.

JAMBALAYA GRITS CASSEROLE
This casserole is fabulous and full of so much flavor. At first glance, we thought this would be great for brunch or as a side dish. But once we tried it, we realized it would be hearty enough to be a meal by itself too. Rotel tomatoes give a little punch of spice. The grits are creamy and the sausage gives a nice smoky flavor....

Steps:
- 1. Saute onions, bell pepper, celery, Rotel and minced garlic until soft.
- 2. Add sausage and shrimp. Saute until most of the natural juices are gone.
- 3. Add milk.
- 4. Add salt, pepper, and red pepper.
- 5. Add grits.
- 6. Cook on medium heat and stir until thick and creamy.
- 7. Pour into buttered 9x13 casserole dish.
- 8. Bake at 350 degrees for 20 minutes.
- 9. Remove from oven. Top with grated cheese. Set back in oven until cheese melts (about 5 minutes).
- 10. Then remove from oven and sprinkle with green onions.
