JAMAICAN STYLE CURRY CHICKEN
This is a recipe that I have put together over some various websites, verbal consultations and just experimenting on my own and with my family. Rich and hearty with a great flavor when you can't get the real thing in the islands. Try a variety of hot peppers to change the flavor - even sweet bell peppers give a different taste. Use fresh thyme to really bring out the fresh taste.

Steps:
- Heat vegetable oil in a skillet over medium-high heat; cook and stir onion, tomato, garlic, curry powder, habanero pepper, and thyme until onion is golden, about 7 minutes. Stir in chicken and cook until chicken is lightly browned, about 5 minutes.
- Pour water into the skillet, reduce heat to low; cover and simmer until chicken is no longer pink at the center, about 30 minutes. Season with salt.

Steps:
- Place chicken in a medium bowl. Cover with lime juice and water. Set aside.
- In a blender or food processor, place allspice, nutmeg, salt, brown sugar, thyme, ginger, black pepper and vegetable oil. Blend well, then mix in onions, green onions, garlic and habanero peppers until almost smooth.
- Pour most of the blended marinade mixture into bowl with chicken, reserving a small amount to use as a basting sauce while cooking. Cover, and marinate in the refrigerator for at least 2 hours.
- Preheat an outdoor grill for medium heat.
- Brush grill grate with oil. Cook chicken slowly on the preheated grill. Turn frequently, basting often with remaining marinade mixture. Cook to desired doneness.

- Heat the oven to 400 degrees.Wash and pat dry the chicken.In a mixing bowl, combine the ingredients as listed in the homemade Jamaican Jerk Seasoning.Apply the seasoning over the wings, cover, and place aside for a couple hours or more.
- Transfer the chicken to a sheet pan, bake for 40 minutes.Broil on both sides on low for 10 minutes then serve warm. Enjoy!

One of the local TV stations has a recipe contest, once a year. I made this up & entered it last year...I won 1st place for the week for Poultry. Our youngest Son LOVES it & I've gotten many other compliments on it...hope you enjoy it, too!!!

Steps:
- Combine all ingredients, except the chicken in a bowl (food processor works best).
- Mix well, until smooth.
- Place chicken pieces in zip-lock bag.
- Pour sauce mixture over chicken & close the bag.
- Lay flat on a plate or whatever you have.
- Refridgerate for AT LEAST 4hours -- overnight is preferred, for best flavor.
- Turn bag over, every couple hours if possible.
- Preheat oven to 350°.
- Lightly coat a 9 X 13 pan with cooking spray.
- Place chicken in a single layer in the pan.
- Pour remaining sauce over all.
- Bake, uncovered, 1 to 1½ hours.

- In a medium saucepan over medium heat, add olive oil and heat until shimmering. Add onion, garlic and ginger; stir and cook 5 minutes or until onions are translucent. Add curry powder, salt and pepper.
- Add chicken and cook 8 to 10 minutes, stirring frequently. Add potatoes, broth, coconut milk, Worcestershire sauce, vinegar and hot sauce if desired.
- Reduce heat to medium-low and simmer until chicken is cooked and potatoes are tender, about 30 to 40 minutes.
- Cook rice according to package directions. Divide rice evenly between four bowls and ladle curry mixture next to or on top of rice. Garnish with cilantro if desired; serve.

- Heat the oil in a 5 or 6 quart dutch oven over medium heat. When the oil shimmers test a bit of chicken. Just touch it to the oil. If it sputters, you are good to go.
