AUTHENTIC JAMAICAN JERK CHICKEN

Jerk used to refer to the slow-cook, smoking method used for preparing meat in Caribbean cuisine, but in modern days refers to the spices used to prepare the meat before cooking.

Number Of Ingredients 14

1 onion, peeled and chopped
1/2 cup chopped scallion
1/2 teaspoon dried thyme
1 teaspoon kosher salt
2 teaspoons sugar
1 teaspoon ground allspice
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 teaspoon freshly ground black pepper

  • Prepare a gas or charcoal grill on medium heat (350 F to 375 F) for direct/indirect grilling. Remove chicken from jerk marinade. Place chicken skin-side down on the direct side of the grill. Cover and cook for 15 minutes until the skin is charred and crisp, controlling any flare-ups on the grill. Turn the chicken over and move to the indirect side. JERK CHICKEN

Jerk Chicken image

If you haven't tried Jamaican jerk chicken, what are you waiting for? This will end up being your go-to recipe for chicken. You no longer have to keep making more dull and boring traditional baked chicken. Add some spice to your kitchen. You can make this on the grill or for those winter months, you can make it in your oven.

Categories     Dinner

Time 1h15m

Number Of Ingredients 18

4 Lbs Chicken (Chicken Parts)
1 Whole Lime ((Used for washing/cleaning chicken))
1 Tsp Salt ((Can be adjusted for taste))
1 Tsp Black Pepper ((Can be adjusted for taste))
1 Whole Scotch Bonnet Pepper ((Can be adjusted for taste))
6 Cloves Garlic (Chopped)
1/2 Tsp Cinnamon
1 Tbsp Allspice (Ground)
1 Tsp White pepper
1/2 Tsp Nutmeg (Ground)
3 Tbsp Brown Sugar
1 Whole Onion
3 Stalks Scallions ((AKA Green Onions))
2 Sprigs Thyme
1 Tbsp Ginger
1 Tbsp Soy Sauce
1 Tbsp Beef Bouillon
2 Tbsp Olive Oil

Steps:

  • Wash chicken with Lime, or you can substitute with lemon juice.
  • Remove all excess fat and dry with paper towels. Try to remove as much water from the chicken as possible.
  • You are now ready to prepare your Jerk Sauce (Marinade) to add to your chicken.
  • If you are not up to making your own marinade you can use a store bought brand of jerk seasoning like Grace Jerk seasoning.
  • Add Olive oil to a skillet under a medium flame.
  • Add your garlic, and scotch bonnet pepper, and allow to saute for about 4 minutes.
  • Now you can add your brown sugar, cinnamon, nutmeg, and allspice,
  • Stir mixture in skillet until it becomes pasty (approx 5 minutes)
  • You can now remove contents from skillet and allow it to cool for about 20 minutes.
  • Add the mixture to a food processor, add your thyme, ginger, white pepper, scallions, onion, soy sauce, and beef bouillon and blend for about 30 seconds. (Make sure your setting is set to pulse).
  • You can add additional Scotch Bonnet Pepper(s) to suit your taste.
  • Rub your chicken with your marinade (make sure you drench it to ensure maximum flavor).
  • You can now place your chicken in the refrigerator in a ziplock bag or covered bowl for a few hours (I prefer to do it overnight).
  • Place your chicken in a baking pan lined with aluminum foil. You can add a wire before placing the chicken in the baking pan so excess grease will drip down into the pan.
  • Bake chicken for approximately 20 minutes until it is crisp and brown.
  • You can then flip your chicken parts in your baking pan to do the other side. and let it bake an additional 20 minutes.
  • You can use the leftover marinade, and add it to your excess grease from the baking pan and saute for about 10 minutes. (This makes for a delicious gravy and or dipping sauce)

CAYMANIAN-STYLE JERK CHICKEN

Caymanian-Style Jerk Chicken image

Jerk is a style of cooking originally from Jamaica, but it is popular all over the Caribbean. Jerk seasoning, or Jamaican jerk season, is a dry or wet seasoning, typically a blend of chile peppers, garlic, onions, spices (allspice, cinnamon, cloves, ginger and pepper) and herbs, like thyme. Traditionally, jerk meat is marinated in spices and slow-cooked on green pimiento wood over hot coals. My version is inspired by a family trip to Grand Cayman Island, where I was able to learn from one of the masters, Chef Luigi Moacsin. It takes inspiration from the original, but can be made on a standard outdoor grill or a grill pan indoors.

Time 9h35m

Yield 4 servings

Number Of Ingredients 19

10 seasoning peppers or mini multicolored bell peppers
2 to 3 Scotch bonnet peppers (or up to 6, depending on how spicy you like it)
8 cloves garlic
2 bunches scallions, chopped
1/2 cup ground allspice
1/2 cup firmly packed dark brown sugar
2 tablespoons fresh thyme leaves
1 tablespoon whole allspice berries
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 cup orange or pineapple juice (fresh is great, but bottled is fine)
2 tablespoons olive oil
2 tablespoons soy sauce, or more as needed
1 teaspoon freshly ground black pepper
Kosher salt
One 5- to 6-pound chicken, cut into quarters (leg/thigh and breast/wing)
Vegetable oil, for greasing
Sliced hard dough bread or white bread, to serve
Ketchup, to serve

Steps:

  • In a food processor, place the seasoning and Scotch bonnet peppers, garlic and scallions and process until chunky. Add the ground allspice, brown sugar, thyme, allspice berries, cinnamon and nutmeg, then process. Add the juice, olive oil, soy sauce, black pepper and 1 tablespoon salt and process until a thick paste is formed, clingy enough to stick to the back of a spoon. (If it's too thick, thin with more soy sauce.)
  • Scrape half of the paste into a large shallow dish with a lid. Add the chicken and top with the remaining paste. Spread the paste, making sure each piece of chicken gets a little attention. Cover and marinate in the fridge overnight, up to 24 hours.
  • Prepare the grill with one hot and one unheated side. This works best on a charcoal grill or a gas grill with one burner turned off.
  • Oil the grill grates liberally with the vegetable oil. Place the chicken skin-side up on the cool side of the grill and close the lid.
  • Grill, rotating the pieces every 10 minutes to ensure even exposure to the hot side of the grill, until the breasts register 165 degrees F and the thighs register 170 degrees F, 40 to 45 minutes for the breasts and 30 to 35 minutes for the thighs. Move the chicken to the hot side of the grill, flip it skin-side down, and grill until the skin is charred and crispy, 6 to 8 minutes.
  • Serve immediately with some good ol' white bread (or classic hard dough bread, if you can find it!) from the bag and ketchup to dunk it.

  • Step 1: Prepare Marinade Place the ingredients (excluding the chicken of course) in a food processor and process to a coarse paste.
  • Step 2: Apply the marinade Place the chicken quarters into a large bowl and pour over the marinade. Massage the marinade into the meat, ensuring that it gets under the skin of the chicken by pulling the skin away from the meat. Cover the bowl and leave it to marinate in the fridge for at least 6 to 12 hours.
  • Step 3: Grill time Remove the marinated meat from the fridge an hour before cooking, so it has time to come up to room temperature. Otherwise, it will take much longer to cook. Light grill and grill the chicken over a medium-hot fire for approximately 35 minutes, turning occasionally, until well browned and cooked through. (Covering the grill produces a smokier flavor)
  • Step 4: Enjoy your Jamaican jerk chicken Remove the chicken from the grill and place on platter and serve. Jamaican jerk chicken goes well with baked sweet potato, Jamaican festivals, fried breadfruit, fried bammy, or French fries.
