1 tablespoon olive oil
1 (16 ounce) package stir fry vegetables (frozen)
16 ounces boneless pork chops (cut into thin strips)
2 teaspoons jamaican jerk spice
1 cup bottled plum sauce
peanuts (optional)

Steps:

  • In a wok or large skillet, heat oil over medium-high heat.
  • Add frozen vegetables; cook and stir for 5 - 7 minutes or until vegetables are crisp-tender.
  • Remove vegetables from wok and place in a covered serving dish.
  • Toss pork strips with jerk seasoning; add to wok.
  • Add more oil, if necessary.
  • Cook and stir for 2 - 5 minutes or until pork is no longer pink.
  • Add plum sauce to wok; return vegetables.
  • Gently toss to coat; heat through.
  • If desired, sprinkle with peanuts.
  • Serve over rice.

12 * 12 ounces pork strips for stir frying
2 to 3 * 2 to 3 teaspoons Jamaican jerk seasoning
3/4 * 3/4 cup bottled plum sauce
2 * 2 cups hot cooked rice or pasta
* Chopped peanuts

Steps:

  • # In a wok or large skillet heat oil over medium-high heat. Add frozen vegetables; cook and stir for 5 to 7 minutes or until vegetables are crisp-tender. Remove vegetables from the wok. # Toss pork strips with Jamaican jerk seasoning; add the pork strips to the wok. (Add more oil if necessary.) Cook and stir for 2 to 5 minutes or until pork is no longer pink. # Add the plum sauce to the wok. Return vegetables to the wok. Gently toss all ingredients together to coat. Heat through. Serve over rice. Sprinkle with peanuts.

1 1/2 cups quick-cooking rice
1/4 cup thinly-sliced green onion
1 large sweet potato (about 12 oz.)
1 medium tart apple, cored
12 ounces lean boneless pork, strips for stir-frying
2 -3 teaspoons jamaican jerk spice
1 tablespoon cooking oil
1/3 cup apple juice or 1/3 cup water

Steps:

  • Prepare rice according to package directions. Stir half of the green onions into cooked rice. Meanwhile, peel sweet potato and cut in quarters lengthwise, then thinly slice crosswise. Place in a microwave-safe shallow dish. Cover with vented plastic wrap. Microwave on high for 3 to 4 minutes or until tender, stirring once. Cut apple into 16 wedges.
  • Sprinkle meat strips with Jamaican jerk seasoning; toss to coat evenly. Pour oil into a wok or large skillet. Preheat over medium-high heat (add more oil during cooking if necessary). Stir fry meat for 2 minutes. Add apple and remaining green onions and stir-fry for 1 to 2 minutes or until meat is slightly pink in center.
  • Stir sweet potato and apple juice into meat mixture. Bring to boiling; reduce heat. Simmer, uncovered, for 1 minute more. Serve meat mixture over rice mixture.
