This is really good-you can sub chicken for the pork if you like-and you can change the peppers if the heat is too much!

1 1/2 teaspoons ground allspice
1 1/2 teaspoons salt
1/2 teaspoon ground black pepper
1/2 teaspoon ground thyme
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/8 teaspoon ground cloves
3 green onions, chopped
3 cloves garlic, minced
2 scotch bonnet peppers (these are "killer" hot so you may want to use something like a jalapeno)
1 medium onion, chopped
1 lemon, juice of
3 teaspoons oil
2 teaspoons soy sauce
2 teaspoons malt vinegar
1 teaspoon minced gingerroot
3 -4 lbs cubed pork butt (2 inch chunks)

Steps:

  • In a large bowl combine the first 7 ingredients.
  • Mix thoroughly.
  • In a food processor combine green onions and garlic, peppers, onion, lemon juice, oil, soy sauce, malt vinegar and ginger.
  • Blend until very smooth.
  • Place pork in a glass bowl or large freezer bag, combine all ingredients and coat pork well.
  • Cover and stir or flip often.
  • Marinate for at least 8 hours.
  • Take out of the fridge 1 hour before grilling.
  • Preheat grill to medium high, skewer pork, 4 cubes to a skewer.
  • Cook for 6-8 minutes on one side, flip and 6-8 minutes on the other.

3 Pound Boneless Pork Butt (- trimmed of fat & cut into 2-inch chunks)
2 TBS Neutral Oil (- such as canola or vegetable (SEE NOTES))
4 TBS Jerk Seasoning (- homemade or store-bought (SEE NOTES) )
Kosher Salt (- to taste)
1 Bunch Green Onion (- cut into 3-inch pieces)
3 Cloves Garlic (- smashed & peeled)
1-2 Jalapeno or Habanero Peppers (- stemmed & roughly chopped (SEE NOTES) )
½-inch Piece Fresh Ginger (- peeled and sliced)
¾ Cup Fresh Orange Juice (- (from about 4 oranges))
¼ Cup Fresh Lime Juice (- (from about 2 limes))
1 TBS EACH: Dark Brown Sugar and Low Sodium-Soy Sauce
1 ½ Cups Fresh Diced Pineapple
1 Jalapeno (- stemmed, seeded & finely diced)
¼ Red Onion (- finely diced)
2-3 TBS Cilantro Leaves (- chopped)
2-3 TBS Fresh Lime Juice
1 tsp Honey

Steps:

  • Season pork: On a clean work surface, pat cubes of pork dry with paper towels. Transfer pork to a large bowl and drizzle with oil (SEE NOTES). Toss to coat. Sprinkle the pork with jerk seasoning. Season with salt to taste. Use your hands or tongs to mix and toss the pork until thoroughly coated. (NOTE: You may want to wear gloves as the mixture will be spicy. Don't touch your face or eyes until after you wash your hands!)
  • Marinate: Cover the bowl with plastic wrap or transfer to a large zip-closure bag and refrigerate for at least 3 hours, or preferably overnight.
  • Add to slow cooker: Remove the pork from the refrigerator and allow the meat to sit at room temperature for 30 minutes while you prep the other ingredients. Transfer pork to the bowl of a 5-6 quart slow cooker. Add the onions, garlic, peppers, ginger, orange juice, lime juice, sugar and soy sauce.
  • Cook: Cover the slow cooker and cook on LOW for 6-7 hours, or until the pork is fork tender and falls apart easily.
  • While the pork is cooking, make the salsa: Combine all the ingredients for the salsa in a medium bowl. Season to taste with salt. Taste and adjust for seasoning. Refrigerate until ready to use.
  • Skim fat & strain liquid: Skim and discard the fat from the top of the cooking liquid in the slow cooker. Strain the cooking liquid into a measuring cup or bowl.
  • OPTIONAL to Crisp Pork: Use a slotted spoon to transfer the pork to a large rimmed sheet pan lined with aluminum foil. Arrange oven rack to the upper-middle third of the oven. Preheat the oven to BROIL.
  • OPTIONAL - Broil: Add ¼ to ½ cup of the strained cooking liquid to the pork and gently toss to coat. Broil 3-5 minutes or until crisp. Remove from the oven, flip the pork and toss with another ¼ to ½ cup cooking liquid. Broil and additional 3-5 minutes. NOTE: Watch the oven carefully as pork can go from golden brown and crispy to burned very quickly!
  • Serve: Transfer pork to a serving bowl and drizzle a bit of cooking liquid over the top. Serve hot with salsa in your favorite tacos or over rice! Enjoy!

This juicy, flavorful pork takes time-a few hours to brine, overnight to marinate, and 7 or 8 hours to smoke. It's mostly hands off, and well worth it. In Jamaica, this is street food that's eaten with rice and peas, grilled corn, or fried cornbread called festival.

1 4- to 5-lb. bone-in pork butt or shoulder
1/2 cup Jamaican dark rum, such as Appleton
3 Tbs. soy sauce
1 oz. kosher salt (3 Tbs. if using Diamond Crystal; 2 Tbs. if using Morton)
3 Tbs. packed dark brown sugar
1-1/2 Tbs. robust unsulfured molasses
1 Tbs. Worcestershire sauce
1 Tbs. minced fresh ginger
1 tsp. ground allspice
1/2 tsp. ground cinnamon
4 medium cloves garlic, crushed
4 whole Scotch bonnet or habanero chiles, stemmed, seeds left intact
1 large yellow onion, quartered
1/2 cup orange juice (from about 2 oranges)
1/2 cup white vinegar
1/4 cup olive oil
1/4 cup soy sauce
3 Tbs. whole dried allspice berries or 2 Tbs. ground allspice
2 Tbs. fresh thyme leaves
5/8 oz. kosher salt (2 Tbs. if using Diamond Crystal; 4 tsp. if using Morton)
1-1/2 Tbs. fresh lime juice
1 Tbs. packed dark brown sugar
1 Tbs. minced fresh ginger
1 tsp. freshly ground black pepper
1 tsp. ground cinnamon
1 tsp. freshly grated nutmeg
1 Tbs. Jamaican dark rum, such as Appleton
2 tsp. robust unsulfured molasses
2 cups pimento or applewood chips

Steps:

  • Place the pork in a large bowl or in a zip-top bag set inside the bowl. In a large measuring cup, combine all the brine ingredients with 3-1/2 cups water. Stir until the salt and sugar dissolve. Pour the brine into the bag with the pork, squeeze out any air, and seal, or cover with plastic wrap. Refrigerate for at least 2 and up to 6 hours.
  • In a blender, purée the garlic, chiles, onion, orange juice, vinegar, olive oil, soy sauce, allspice, thyme, salt, lime juice, brown sugar, ginger, pepper, cinnamon, and nutmeg. Stir the rum and molasses into 1 cup of the mixture and reserve for basting. Remove the pork from the brine and pat dry. Discard the brine. Use a fork or the tip of a sharp knife to poke holes all over the pork. Return to the bag or bowl. Pour the remaining marinade over the pork, squeeze out any air, and seal, or cover with plastic wrap. Refrigerate for at least 8 and up to 24 hours.
  • Prepare a grill for indirect cooking over medium-low heat (300°F to 325°F) following the directions below. Remove the pork from the marinade and place on the cool side of the grill, fat side up. Cover the grill and cook for 2 hours. Using a silicone brush, baste the pork with the reserved basting liquid every 30 minutes until it's used up. Continue cooking until tender when pierced with a fork and an instant-read thermometer registers 190°F in the center, another 5 to 6 hours, checking the temperature on the grill. Transfer the pork to a cutting board. Let it rest until cool enough to handle. Remove teh pork from teh bone, cut into 2-inch chunks, and serve.

This Jamaican Jerk Pork Tenderloin is a highly flavorful and delicious main dish protein.

2 lbs. Pork tenderloin
1 lb. Green beans (whole with the ends snapped off)
2 Onions (quartered)
4 tbsp Olive oil (divided)
2 tbsp Thyme
1 tbsp Paprika
1 ½ tsp Allspice
1 tsp Cumin
Pinch of cinnamon
Salt and pepper (to taste)
4 Cloves garlic minced (divided)

Steps:

  • Preheat the oven to 400 degrees.
  • Place the pork tenderloin/s into the center of a baking sheet, and apply salt and pepper to taste.
  • In a mixing bowl, combine 3 tbsp of the olive oil, the paprika, cumin, allspice, cinnamon, thyme and 2 cloves of minced garlic. Stir to combine.
  • Pour the jerk marinade over the pork tenderloin/s and rub it in well.
  • In a large bowl, combine the green beans and onions. Pour 1 tbsp of olive oil over them along with 2 cloves of minced garlic. Toss to coat.
  • Place the seasoned green beans and onions onto the baking sheet around the pork tenderloin/s, and bake for 25-30 minutes until the pork reaches an internal temperature of 155.

A different way to prepare a pork loin. It was easy to prepare, and produced great results. I just made this one up as I went....If you really want to simplify it use a store bought Jamaican Jerk Spice mix.

3 lbs boneless pork loin
8 slices bacon
1 teaspoon extra virgin olive oil
2 tablespoons onion powder
1 tablespoon sugar
1 tablespoon kosher salt
1 tablespoon ground thyme
1 1/2 teaspoons ground allspice
3/4 teaspoon ground cinnamon
3/4 teaspoon ground red pepper
8 tablespoons fruit chutney

Steps:

  • To make Jerk Seasoning, mix all spices together and set aside.
  • Preheat oven to 400°F.
  • Remove fat cap and silver skin ( I used a filet knife).
  • Cut loin across grain into 3/4" to 1" filet mignons.
  • Wrap a slice of bacon around circumference of filets, secure with toothpick(s).
  • Sprinkle and rub Jerk Seasoning on both sides of filets. Left over seasoning can be stored in an air tight container.
  • Coat iron skillet (or other oven ready pan) with olive oil (spray on pan coating can be used instead) to high heat on stove.
  • Fry both sides of the filets until well browned (about 2 minutes per side).
  • Put browned filets and skillet into preheated oven.
  • Bake 20 minutes or until internal temp of filet is 160°F.
  • Remove from pan and let stand 5 minutes.
  • Garnish with 1 Tbsp of fruit compote per serving.

3 gloves garlic, minced
1 cup Myer's dark rum
3 cups chicken stock
2 tablespoons ancho puree
2 tablespoons molasses
Salt and freshly ground pepper
4 filet mignon steaks, 8 ounces each

Steps:

  • Melt the butter in a saucepan over medium high heat and sweat the shallots and garlic. Add the rum, bring to a boil and reduce to 1/3 cup. Add the stock, bring to a boil and reduce the heat. Whisk in the remaining ingredients and simmer until reduced to 2 cups.
  • Preheat the grill. Season the steaks on both sides with salt and pepper to taste. Grill to desired doneness. Drizzle with the sauce.
