1 Small cabbage or 1/2 medium cabbage head (washed )
2 Garlic cloves (minced)
2 Large carrots (baton, washed)
1 Red bell pepper (washed, cut into batons or chopped)
1 Tsp. Fresh thyme (dried thyme will also work)
Salt and pepper to taste
1 Cup Water (or vegetable broth)

Steps:

  • Remove top layer leaves off cabbage, cut the cabbage in half, then thinly slice. Discard the inner core. Wash the cabbage and set aside.
  • Next, cut or chop the carrots and bell pepper. Wash and set aside.In a hot oil (olive oil) skillet over medium heat, sauté the garlic for 30 seconds or until fragrant. Then add the cabbage, bell peppers and carrots. Lightly season with salt and pepper. Toss to combine. Add the water and toss to combine. Cover and cook for about 10 minutes stirring occasionally, or until the vegetables are softened.
  • Once the vegetables have softened, reduce the heat to low. Season with salt and pepper to taste again if needed, and the thyme. Toss to combine. Cook for 2 more minutes. Serve as a side and enjoy.

1/2 medium head cabbage washed
1 medium carrot washed
2 teaspoons olive oil or coconut oil
1/2 medium onion chopped
2 cloves garlic minced
1/4 red bell pepper chopped
2 sprigs fresh thyme or 1/4 teaspoon dried
2 green onions
1/2 teaspoon salt
1/4 cup water or vegetable broth
1 whole Scotch Bonnet pepper

Steps:

  • Remove outer leaves of cabbage, cut in half, using a knife slice thinly discarding the inner core. Shred or thinly slice the carrot.
  • Heat oil in a large skillet on medium-high heat. Saute onion, garlic, bell pepper, thyme, green onion, and salt
  • Add cabbage and carrots and stir well. Add water or broth and whole Scotch Bonnet pepper.
  • Cover and allow to cook for about 10 minutes stirring occasionally.

1 tbsp coconut oil
1 small onion (peeled and finely chopped)
1/2 tsp garlic purée
1/2 cabbage (shredded)
1 bell pepper (sliced)
1 large carrot (julienned)
1/4 cup (60ml) vegetable broth
scotch bonnet (to taste (optional))
4 springs thyme
salt (to taste)

Steps:

  • Heat the coconut oil in a pot.
  • Add the onion and thyme, and cook for about 5-7 mins till soft.
  • Stir in the garlic purée, followed by cabbage, bell pepper, carrot, scotch bonnet if using, vegetable broth, and salt.
  • Mix and cover. Reduce and steam for between 10-15 mins or until done to your preference, stirring a couple of times during the process.
  • Keep and eye on the liquid. If it looks like it is starting to dry out, add another tbsp or so of broth.

1 Large cabbage
1 Medium onion

2 Small tomatoes (Diced)
2 Cloves garlic
1 Bell pepper
2 tbsp Olive oil
¼ tsp Black pepper
¼ Scotch bonnet pepper (optional) (Seed remove and finely chopped)
3 Sprigs Thyme
Salt (To taste)

Steps:

  • Cut the cabbage into four quarters, remove the middle, wash the cabbage leaves, shred and set aside.
  • Peel, wash and chop the carrot into thin strips.
  • Chop the onion and bell peppers into small pieces.
  • Finely cut the garlic or use a garlic crusher
  • Heat the oil in a saucepan on medium heat then add the onion, garlic, scotch bonnet pepper and thyme and let it sauté for about two minutes.
  • Stir in the bell pepper and tomato
  • Stir in to cabbage season with salt and black pepper.
  • Cover and steam for 15 to 20 minutes. Add the carrot half way through.

This delicious Jamaican steamed cabbage makes the perfect Caribbean appetiser or side dish.

1/2 a head of large white cabbage (sliced)
1 small onion (sliced)
1 medium carrot (julienned)
1 red pepper (sliced finely)
1 yellow pepper (sliced finely)
3 garlic cloves (chopped)
3-4 sprigs of thyme (tied together)
1 tsp of all purpose seasoning (see post for recipe)
1 tbsp of dairy free butter
1 tsp of black pepper
1/4 cup of water
Himalayan pink salt to taste
1/2 scotch bonnet (minced (or use 1/4 tsp of chilli powder))
2 tbsp of coconut oil

Steps:

  • Melt the coconut oil on medium heat then proceed to sautee the onion, garlic along with the sprigs of thyme until soft and tender.
  • Add the cabbage, carrot, bell peppers and scotch bonnet, fold and stir. The pan may seem overcrowded but the cabbage will reduce as it heats through.
  • Continue to stir and fold until the cabbage reduces in volume, this should take up to 5 minutes.
  • Once reduced, lower the heat and add the water, ready for steaming.
  • Cover the skillet with a lid and steam for 15 minutes (10 minutes or less if you want crunchy cabbage).
  • Remove the lid and season with the all purpose seasoning, black pepper, butter and salt to taste and stir.
  • Serve accordingly and sprinkle the cabbage with additional loose thyme (optional).

1 pound Large Shrimp (peeled and deveined)
2-3 bacon slices (cut in 3-4 pieces)
2 tablespoons or more cooking oil
1 whole scotch bonnet pepper
1 teaspoons paprika
1-2 teaspoons fresh thyme
2 green onions sliced
2 teaspoons minced garlic
½ medium onion chopped
½ medium bell pepper chopped
½ teaspoon all spice
1 small head cabbage (chopped (about 5 to 6 cups))
1- teaspoon chicken bouillon (optional)
Salt and white pepper to taste

Steps:

  • Slice or chop cabbage then set aside.
  • Heat up a large skillet with about 1 -2 Tablespoons oil .Add shrimp then Lightly season shrimp with salt, and your favorite seasonings. Some of the options I use are jerk seasoning here, creole seasoning or any herbs or seasonings on hand.
  • Sauté for about 3 -5 minutes shrimp set aside.
  • In a large skillet over medium heat, sauté bacon until brown and crisp this may take about 3-5 minutes. Set bacon aside if desired and add towards the end
  • There will be some bacon drippings left in the pan (not more than 1-2 tablespoons)
  • Add about 2 tablespoons or more oil to the pan.
  • Followed by thyme, onions, green onions, garlic, scotch bonnet pepper, paprika, red bell pepper, and allspice.
  • Saute for about 2 minutes, stirring occasionally to prevent any burns.
  • Then add cabbage, chicken bouillon(Optional) and white pepper, continue stirring to incorporate all the ingredients. Let it cook for about 5 minutes or more depending on preference or how you like your cabbage cooked..
  • Adjust for seasoning with salt and pepper. Serve Cabbage top with sauté shrimp or on the side.

Steps:

  • Peel tough outer leaves from cabbage, core the head, and shred cabbage.
