Number Of Ingredients 9

1/2 cup confectioners' sugar
1 cup flour
1/8 teaspoon salt
1 teaspoon orange zest

3 ounces cold cream cheese

  • Sprinkle the milk onto this mixture, mix and gather into a ball.
  • On a lightly a floured surface, roll to 1/8" thickness.
  • Use a 2" or 3" cutter to make 16-18 rounds.
  • Spoon 1 to 1 1/2 teaspoons jelly onto the center of each round (don't use too much or it will "bleed out" when baking).
  • Fold the cookie over and bake on an ungreased cookie sheet for 12-14 minutes (oven time may be less-- I used a toaster oven).

JAM TURNOVER COOKIES

Jam Turnover Cookies image

This recipe is one of the best cookie recipes ever. I found this one in an Italian cookbook from the 1970's.

Provided by C S

Categories     Cookies

Time 1h30m

Number Of Ingredients 9

2 c all purpose flour
3/4 c butter, softened
1/2 c sugar
2 eggs
grated peel of 1 lemon (optional)
1/8 tsp salt
1 beaten egg
strawberry, apricot, peach or any other perserves that you like
confectioners sugar, optional

Steps:

  • 1. Place flour on pastry board. Make a well in the center. Put butter, sugar, 2 eggs, (grated lemon rind) and salt into the well. Work the flour mixture gently with your hands and form into a ball.
  • 2. Cover with clean towel and let rest for 1 hour. With rolling pin, roll dough to 1/4" thickness and cut out 3" circles (I use a drinking glass for this).
  • 3. In the center of each circle of dough, place 1/2 tsp. of preserves then fold dough in half and crimp with fork to close edges. Brush the dough with the beaten egg.
  • 4. Preheat oven to 350 degrees. Place cookies on cookie sheet and bake for 10-15 minutes. Remove them from the oven and serve.
  • 5. Optional: after removing cookies from oven you can sprinkle them with confectioner sugar...I never do but the recipe offers this option.

CREAM CHEESE AND JAM TURNOVERS

Cream Cheese and Jam Turnovers image

Categories     Cheese     Egg     Dessert     Bake     Quick & Easy     Gourmet     Kidney Friendly     Vegetarian     Pescatarian     Peanut Free     Tree Nut Free     Soy Free     Kosher

Yield Makes 8 turnovers

Number Of Ingredients 5

2 sheets (about 1 pound) frozen puff pastry, thawed
3/4 cup (about 6 ounces) cream cheese
3/4 cup jam, such as apricot or cherry, or orange marmalade
an egg wash made by beating together 1 large egg and 1 teaspoon water
about 1 1/2 tablespoons sugar for sprinkling the turnovers

Steps:

  • On a lightly floured surface roll out each sheet of pastry into a 12-inch square and cut each square into four 6-inch squares. Put 1 1/2 tablespoons of the cream cheese in the center of each square, top it with 1 1/2 tablespoons of jam, and brush the edges of each square with water. Fold the squares in half diagonally to form triangles, pressing the edges together firmly, and press the edges with the tines of a fork to seal them well. Arrange the turnovers on a dampened baking sheet, brush them with the egg wash, and with a sharp knife cut several slits (for steam vents) in the top of each turnover. Sprinkle the turnovers with the sugar, bake them in the upper third of a preheated 425°F. oven for 12 to 15 minutes, or until they are puffed and golden, and serve them warm.

  • In a bowl, whisk the 1 1/2 cups of pastry flour with the 2 tablespoons of granulated sugar. Add the butter and, using a pastry blender, your fingers or 2 dinner knives, blend the butter into the flour until the mixture resembles coarse meal. Sprinkle on the vanilla and knead gently until a dough forms. Pat the dough into a disk, wrap in plastic and refrigerate until thoroughly chilled, at least 1 hour.
  • Preheat the oven to 350°. Line 2 large baking sheets with parchment paper and refrigerate. Cut the dough into 4 pieces. Working with 1 piece at a time and leaving the rest in the refrigerator, roll out the dough 1/8 inch thick on a lightly floured work surface. Using a 4-inch round biscuit cutter, stamp out as many rounds as possible; gather and reserve the scraps.
  • Brush the edges of each round with some of the egg white. Spoon 1 rounded teaspoon of jam onto one half of each round, leaving a 1/4-inch border; fold the other half over to enclose the jam. Using the tines of a fork, press the edges together to seal. Transfer the mezzalune to one of the chilled baking sheets, spacing them 2 inches apart. Repeat with the remaining 3 pieces of dough and filling, then repeat with the gathered scraps. Refrigerate the mezzalune for at least 10 minutes.
  • Brush the mezzalune with egg white, sprinkle with granulated sugar and top with a generous sprinkling of sliced almonds. Bake in the upper and lower thirds of the oven for about 40 minutes, until golden brown, switching the pans halfway through for even baking. Transfer the cookies to a rack to cool. Dust with confectioners' sugar and serve.
