Steps:
- Wear protective kitchen gloves before handling the jalapenos.
- Slice the jalapenos in thin rings (about 1/8 inch) and clean out the inside ribs and part (or all) of the seeds with a small spoon. Alternatively, use a jalapeno corer to remove the seeds and ribs and then slice in rings.
- Set them aside in a bowl.
- Bring cooking oil to 350°F. Use a deep pot or fryer.
- Using a small strainer dust flour (pretend you are small scale sifting) over the jalapeno rings to coat them with flour. Alternatively, place the flour in a bowl and add a heaping handful of jalapeno rings at a time to coat well with flour. Work in batches either way.
- Add each batch of flour coated jalapenos to the cooking oil and fry until they begin to turn golden. Remove immediately and drain onto a paper towel lined plate.
- Allow to drain for half a minute before sprinkling with hops (or other flavored) salt.
- Proceed with coating the next batch with flour and ensure that the cooking oil is at exactly 350°F before frying them.
- Continue with the steps until you have worked through all the jalapenos.
- Enjoy immediately. Pair with an IPA or pale ale.

Steps:
- Wash a wide-mouth pint mason jar and and its lid in hot soapy water. Then rinse and let air dry.
- Thinly slice the jalapeño peppers. Fill the jar with the slices.
- Peel the garlic cloves, leaving them whole. In a small saucepan, combine the garlic, vinegar, water, sugar, kosher salt, peppercorns and bay leaf. Bring to a boil, stirring occasionally to dissolve the sugar and salt (this will take only a few minutes).
- Once boiling, pour the brine into the jar (including the bay leaf). Tap the jar on the counter to release any air bubbles. Discard any remaining brine, or top off the jar with extra water if any peppers are exposed at the top.
- Screw on the lid tightly and allow to cool to room temperature (about 1 hour). Eat immediately, or refrigerate until serving. Keeps up to 1 month refrigerated.

- Halibut Ceviche with Tomato and Cucumber. The acidity in the lime juice and tequila will help the fish firm up, but if it sits too long, it will get tough.
- Soy-Basted Pork Chops with Herbs and Jalapeños. In the time it takes for a rib eye to cook, rest, and slice, you can fire up thin-cut pork chops, eat, and binge season 5 of The Americans.
- Pico De Gallo. Use the firmest tomatoes you can find to avoid a watery consistency. This pico de gallo recipe goes beyond the basic chip dip—use it to top our favorite Tex-Mex enchiladas or spoon it over a layered queso.
- Pickled Chiles. Despite being pickled, these chiles have a fresh crunch and bright, garlicky flavor. If you cook them, they lose that; add them to finished pizzas.
- Grilled Broccoli with Avocado and Sesame. Broccoli can take more heat on the grill than you might think; it won’t taste burnt unless you actually set it on fire.
- Jalapeño-Cilantro Yogurt Sauce. Think of this as a spicy Green Goddess dressing. View Recipe.
- Porchetta Shoulder Roast with Spicy Chimichurri. Talk to your butcher and let them know you’ll be making porchetta out of the shoulder roast. They’ll butterfly the roast for you, which will make it easier to roll.
- Green Harissa. Schmear this on sandwiches, use it to marinate shrimp or chicken, or spoon a dollop onto eggs. View Recipe.
- Jalapeño-Cilantro Pickled Corn. Think of crunchy, tangy, no-hassle quick pickles as the gateway to all things preserved. View Recipe.
