CREAMY JALAPENO ENCHILADAS
Creamy, spicy and easy. I got the idea for this recipe from a mexican dish we had in Cabo. You can play with the chili's and jalepenos in here to make it more or less spicy. A full can of jalepenos gives it a really good kick! This dish is best the day it's made but luckily I rarely have any left overs!

Steps:
- In a large saucepan melt butter and add garlic. Cook one minute or until fragrant.
- Whisk in flour and cook until a light golden brown.
- Whisk in chicken broth and milk. Bring to a boil stirring constantly until thickened.
- Put spinach and peppers in a blender. Add sauce and lend until smmooth.
- Mix 1/2 C spinach sauce in with chicken.
- Put half of remaining sauce in bottom of a casserole dish.
- Spoon chicken into tortillas, roll and placed in casserole dish.
- Spoon remaining sauce over top and sprinkle with cheese.
- Cover and bake @ 375 degrees 20-25 minutes or until heated through, uncovering the last 5 minutes.

SPINACH ENCHILADAS WITH SALSA VERDE
This comes from the Enchilada Queen, Sylvia Casares, who is a Houston, Texas, restaurant owner. Excellent enchiladas, no wonder she's the Queen!

Steps:
- For Salsa Verde:.
- In a large stock pot, add tomatillos, chopped onion, chopped tomato, diced jalapeno, and water.
- cover and simmer over low about 45 minutes.
- Clean cilantro. remove the stems,.
- Add cilantro, garlic and salt to blender and blend on high 2 minutes.
- Add simmered salsa. Blend.
- Set aside to cool.
- For enchilada stuffing:.
- Saute onion, bell pepper, and garlic in oil until tender.
- Add remaining stuffing ingredients and simmer over low heat 8-10 minutes.
- Drain excess liquid. Set aside.
- For enchiladas:.
- Heat vegetable oil over medium heat.
- Dip each tortilla in hot oil until pliant.
- Stack on a plate until finished with all 12.
- Place 2 T of spinach mixture and 1 T shredded cheese into each tortilla.
- Roll up with open side down in a baking pan.
- Repeat until all tortillas are rolled up.
- Pour tomatillo sauce over enchiladas and add leftover shredded cheese.
- Bake at 350°F for about 10 minutes until cheese is melted.
SPINACH ENCHILADAS
I wasn't even a huge fan of enchiladas before I ate these! The spinach and blend of cheeses give this dish a wonderful flavor. Substitute salsa in place of the enchilada sauce for a different twist! It's just as great!

Steps:
- Heat oven to 375*.
- Melt margarine in large skillet over medium-high heat.
- Add the green onions; cook and stir 2 minutes or until crisp-tender.
- Add spinach; cook 1 minute or until spinach is warm, stirring occassionally.
- Remove from heat.
- Stir in cottage cheese, sour cream and 1 cup of the Monterey Jack cheese.
- Spoon 1/4 cup filling down center of each tortilla; roll up.
- Place, seam side down, in ungreased 13x9 baking dish.
- Pour enchilada sauce evenly over tortillas.
- Sprinkle with remaining cheese.
- Bake at 375 for 15-20 minutes or until bubbly and thoroughly heated.
- Garnish with green onions.

SPINACH ENCHILADAS

Steps:
- Preheat the oven to 375 degrees F (190 degrees C).
- Melt butter in a saucepan over medium heat. Add garlic and onion; cook for a few minutes until fragrant, but not brown. Stir in spinach, and cook for about 5 more minutes. Remove from the heat, and mix in ricotta cheese, sour cream, and 1 cup of Monterey Jack cheese.
- In a skillet over medium heat, warm tortillas one at a time until flexible, about 15 seconds. Spoon about 1/4 cup of the spinach mixture onto the center of each tortilla. Roll up, and place seam side down in a 9x13 inch baking dish. Pour enchilada sauce over the top, and sprinkle with the remaining cup of Monterey Jack.
- Bake for 15 to 20 minutes in the preheated oven, until sauce is bubbling and cheese is lightly browned at the edges.

Steps:
- Combine first 5 ingredients in container of electric blender and process until smooth. Set aside.
- Try tortillas, one at a time, in hot oil about 5 seconds on each side.
- Drain on paper towells.
- Spoon 1 Tbs. of each cheese on onion on each tortilla, roll up and place in a lightly greased 12 x 8 baking dish.
- Spoon spinach mixture over and sprinkle with remaining cheese.
- Bake uncovered, at 325 for 30 minutes.

CREAMY SPINACH ENCHILADAS
I've been making this recipe on an off for years. First found it on the back of a tortilla packet. I've tweaked it a few times now. If you want you can add a small can of chicken, or a cooked chicken breast shredded up. I've done this and it goes well. I use Texas Red Enchilada Sauce Recipe #42094.

Steps:
- Pre heat oven to 375°F In a medium size sauce pan cook onions and garlic in butter for 2 minutes, add spinach.
- Cook for 3-4 minutes stirring occasionally.
- Remove from heat.
- Stir in cottage cheese, sour cream, 1c of shredded cheese.
- The tortillas need to be gently warmed so that they will not crack when you roll them up.
- Spoon about 1/4 cup filling down center of each tortilla and roll up.

- I suggest serving with shredded lettuce, chopped tomatoes, sliced black olives and additional sour cream and chopped spring onions!
