JALAPENO CORN GRITS
Nothing goes better with Alligator Grillades! These delicious grits are great with poached eggs or even fried chicken. Although the recipe does not call for the addition of cheese, I have made this with cheddar and it's wonderful. The recipe comes from The Flavor of New Orleans Cookbook.

Steps:
- Melt the butter in a medium saucepan.
- Add the jalapeno, corn and onion.
- Saute until the vegetables are tender.
- Stir in the grits.
- Add the water gradually, stirring constantly. Cook over medium heat until the grits have absorbed all the water, stirring constantly.
- Stir in the thyme and season with salt and pepper.

- Using a 9” cast iron skillet, add the diced bacon and diced jalapeno. Cook over medium heat until bacon is crispy (~8-10 minutes). Transfer the bacon and jalapenos to a paper towel and pat dry. Drain the bacon grease from the skillet and set aside.
- In a medium sauce pan, bring the heavy cream, chicken broth, and water to a boil over medium-high heat. Once boiling, slowly whisk in the grits. Reduce heat to medium-low, cover and cook for 5-7 minutes, or until grits have thickened and absorbed the liquid.
- Transfer the grits into the cast iron skillet and top with the remaining 1/2 cup of grated cheese. Place skillet under broiler for 3-5 minutes, or until cheese on top has melted and grits are light brown in color. Garnish with green onions (optional).

- Roast whole jalapeño peppers over an open flame. You can use tongs to hold them over the flame on a gas stove, or char them on the grill or under the broiler. Do the same thing with the corn.
- Cut the jalapeños in half lengthwise. Scoop out the seeds and membranes and discard them. Dice the remaining part of the peppers into small pieces and set aside. Wash hands in warm soapy water and do not touch your eyes.
