JALAPENO SNACKS
I got this recipe from my father-in-law who had tried them at his work. They are a great appetizer and not too hot!

Steps:
- Preheat an oven to 400 degrees F (200 degrees C).
- Stir together the cream cheese, Cheddar cheese, mayonnaise, ranch dressing mix, and garlic powder in a mixing bowl until evenly blended. Spoon some of the cheese mixture into each jalapeno half, wrap with half a bacon strip, and secure with a toothpick. Arrange the wrapped jalapeno halves onto a broiler pan.
- Bake in the preheated oven until the bacon is no longer pink and beginning to brown, about 20 minutes.

- Wash a wide-mouth pint mason jar and and its lid in hot soapy water. Then rinse and let air dry.
- Thinly slice the jalapeño peppers. Fill the jar with the slices.
- Peel the garlic cloves, leaving them whole. In a small saucepan, combine the garlic, vinegar, water, sugar, kosher salt, peppercorns and bay leaf. Bring to a boil, stirring occasionally to dissolve the sugar and salt (this will take only a few minutes).
- Once boiling, pour the brine into the jar (including the bay leaf). Tap the jar on the counter to release any air bubbles. Discard any remaining brine, or top off the jar with extra water if any peppers are exposed at the top.
- Screw on the lid tightly and allow to cool to room temperature (about 1 hour). Eat immediately, or refrigerate until serving. Keeps up to 1 month refrigerated.

- If using uncooked tortillas, brown one side in an UNGREASED nonstick skillet over medium heat and turn over. If using previously cooked tortillas, lay a tortilla in a hot UNGREASED nonstick skillet.
- Sprinkle cheese lightly over top of the tortilla, then chopped jalapeno peppers. I use a teaspoon of peppers per tortilla but the amount is up to you.
- Allow the tortilla to heat until the cheese melts. Gently mash with a spatula, if necessary, to help the cheese melt.
- Flip tortilla over so that cheese is now in contact with the skillet. Allow to "fry" until cheese is browned and crispy. It should be easy to scoop out when cooked in a nonstick pan.
