RASPBERRY JALAPENO JAM

Raspberry Jalapeno Jam image

Raspberry jalapeno jam is for the individual who will enjoy the combination of sweet and spicy. Serve this delightful treat with a good cheese and homemade crackers.

Provided by Ann Accetta-Scott

Categories     Canning

Time 35m1S

Number Of Ingredients 3

9 cups raspberries, fresh or frozen
2 whole jalapeno peppers, finely chopped (adjust amount to desired amount)
6 cups granulated sugar

Steps:

  • Prepare jars, lids, and canner.
  • Wash raspberries making sure to remove stems and leaves. Prepare jalapeno peppers by washing and removing the seeds. Chop peppers into desired bites, I prefer very small pieces which have been finely chopped.
  • In a heavy bottom saucepan (enamel Dutch oven) add raspberries, jalapeno peppers, and sugar.
  • Bring the mixture to a full boil (roughly 5-10 mins), stirring continually to prevent the berries from scorching.
  • Skim any excessive foam that forms. Don't kill yourself over this step! Simply remove as much of the foam as possible.
  • Once the sugar has fully dissolved, allow the jam to cook an additional 5 minutes, stirring often.
  • Ladle jam into clean, warm 1/2 pint mason jars leaving 1/4-inch headspace.
  • Wipe rims with a clean damp cloth. Add warm rings and lids to jar - finger tight.
  • Process the jars in a steam canner or boiling water bath canner. The processing time is based on the altitude in which you reside, see chart in the article.

JALAPENO CRANBERRY JELLY

Jalapeno Cranberry Jelly image

The thing that inspires most of my recipes is getting an item that I don't know what to do with and trying to cobble together to use it up. With this one, my brother giving me several jalapeno green peppers was the beginning. Fortunately for me, my husband is a willing guinea pig for my experiments! -Karen Bunzow, Saginaw, Michigan

RASPBERRY JELLY

Raspberry Jelly image

To determine whether or not the jelly is done cooking, use a candy thermometer and the "sheeting method," described below. Don't use overripe fruit for jelly, as it may not set up well.

Provided by Martha Stewart

Categories     Food & Cooking     Breakfast & Brunch Recipes

Time 5h

Yield Makes 3 to 3 1/2 cups

Number Of Ingredients 5

3 pounds raspberries
1 1/2 cups water
Sugar
2 tablespoons fresh lemon juice
Coarse salt

Steps:

  • Combine fruit and water in a saucepan. Bring to a boil, reduce to a simmer, and cook, partially covered, mashing occasionally with a potato masher, until fruit is very soft, 10 to 15 minutes. Transfer mixture to a fine sieve set over a heatproof bowl; let drain without pressing on fruit, 4 hours. Strain again through sieve lined with damp cheesecloth. Measure juice; you will have 3 to 4 cups.
  • In a large heavy-bottomed pot, bring juice to a boil. Add 3/4 cup sugar for each cup of juice. Add lemon juice and 1/4 teaspoon salt. Return to a boil and cook, stirring frequently, 8 to 12 minutes. To test if jelly is done, dip a large metal spoon in, lift it horizontally above pot, and let mixture drip back in. Jelly is done when mixture has thickened slightly and drops of it slide together off spoon in a sheet. (Temperature should register 221 degrees on a candy thermometer.) Skim foam from top.
  • Ladle jelly into clean containers, leaving 3/4 inch of headroom. Let cool completely. Cover, label, and refrigerate up to 1 month, or freeze up to 1 year.

Time 1h5m

Yield 32

Number Of Ingredients 7

1 large green bell pepper
12 jalapeno peppers
1 ½ cups apple cider vinegar
1 pinch salt
4 ¼ cups granulated sugar
4 ounces liquid pectin
4 jalapeno peppers, seeded and finely chopped

Steps:

  • Combine the green bell pepper and 12 jalapeno peppers in the container of a food processor or blender. Process until finely chopped. This can be done in batches, if the peppers do not fit.
  • Transfer the peppers to a large saucepan, and stir in the cider vinegar. Bring to a boil, and let simmer for 15 to 20 minutes. Strain the mixture through at least 2 layers of cheesecloth, and discard pulp. You should have about 1 cup of liquid.

  • Stir in the remaining jalapeno peppers, and ladle into sterile jars leaving 1/4 inch headspace. Seal jars in a hot water bath. Refrigerate jelly after seal is broken.

Raspberry Jalapeño Popper Chicken Recipe by Tasty image

Here's what you need: boneless, skinless chicken breasts, cream cheese, shredded cheddar cheese, jalapeño pepper, garlic powder, salt and pepper, paprika, eggs, seasoned bread crumbs, cooking spray, raspberry sauce, seedless raspberry jam, water

Provided by Lewis Gilbert

Categories     Lunch

Yield 6 servings

Number Of Ingredients 13

6 boneless, skinless chicken breasts
6 oz cream cheese, softened
1 cup shredded cheddar cheese
¼ cup jalapeño pepper, deseeded
¼ teaspoon garlic powder
1 teaspoon salt and pepper
1 teaspoon paprika
2 eggs
2 cups seasoned bread crumbs
cooking spray
raspberry sauce
1 jar seedless raspberry jam
¼ cup water

Steps:

  • Preheat the oven to 375°F. Coat a sheet pan with cooking spray.
  • Place the cream cheese, cheddar cheese, jalapenos and garlic powder in a bowl stir to combine, and set aside.
  • In another bowl, whisk together egg, salt and pepper and set aside.
  • In a third bowl, mix breadcrumbs, salt and paprika and set aside.
  • Cut a deep pocket into each chicken breast, taking care not to cut all the way through to the other side.
  • Fill the pocket of each chicken breast with the cream cheese mixture.
  • Sprinkle salt and pepper on both sides of the breast and then dip each breast first in the egg mixture and then dredge it with breadcrumbs.
  • Place the chicken on a baking sheet & brush with melted butter.

  • To make the raspberry sauce while the chicken is cooking, pour jam and water (or apple juice) into a medium-sized saucepan over low-medium heat. Stir continuously until the jam melts into a smooth sauce.
  • Let the chicken rest for 5-7 minutes. then slice & drizzle raspberry sauce over top.
