PINEAPPLE SAUCE RECIPE
This homemade Pineapple Sauce is a delicious accompaniment that is made using pantry staples and comes together in under 10 minutes. Drizzle it on a scoop of ice-cream, crushed ice, or smother it on ham for the main course, it is going to make your holiday table shine.

- Peel the pineapple using a sharp knife and chop the flesh into small cubes. To save time, you can buy already peeled and chopped pineapple. Add 2 cups of cubed pineapple and 1 tsp chopped garlic in the medium jar of a blender and blend to make a coarse mixture.
- Do not blend the pineapple too much. We are looking for a coarse texture here.
- Add the pineapple mixture in a heavy bottom pan along with ½ cup pineapple juice, ¼ cup vinegar, ¼ cup lemon juice, 1 tsp lemon zest, 1 cup brown sugar, 2 tsp red chili flakes, and 1 tsp salt. Bring the mixture to a boil and cook for 5-6 minutes on medium heat. Cover the pan with a lid of the mixture is spluttering too much. Keep stirring frequently.
- Mix 3 tbsp cornflour in ¼ cup water in a small bowl to make a thin slurry and add it to the pan.
- Cook on medium heat until the sauce thickens. Remove the pan from heat and let the sauce cool down. Store in a glass jar in the refrigerator and use as desired.

This jelly is amazing made with nothing but jalapenos no green peppers here. It is so good with eggs, on toast, pork and chicken. Perfect for dipping crab rangoon or any fried food. - 1. Wash and clean your peppers make sure you seed them and take the ribs off. Be sure to wear gloves or else you will regret t later. It's ok if a couple of seeds are still on the peppers. Dice your pine apple into little chunks. In a blender add jalapenos and vinegar blend until they are mush.
- 2. In a pot add blended mixture with sugar bring to a boil and cook for 10 minutes. make sure to skim of foam so the jelly doesn't get cloudy. take off heat add pineapples cook for another 5 minutes in the last minute of cooking add the two pouches of fruit pectin bring to a boil and boil for about 1 minute turn off heat.
- 3. Pour jelly in sterilized canning jars with a ladle you don't really need a funnel but you can use one if you need to. Fill to the tip leaving a small space for the lid to pop down. put them in a pot of simmering water and simmer until you can feel the lid has properly sealed. It takes about 2 hours to set and enjoy.

- Melt butter in saute pan.
- Sweat onions in butter.
- Add a teaspoon of salt.
- When onions are translucent, add garlic, jalapeno and pineapple.
- Saute until jalapeno and pineapples become soft.
- Add ketchup, stirring often until ketchup is heated through.
- Finish with worcestershire, stir to combine.
- Remove from heat and allow to cool.
- Once cooled, move to blender and process to combine.
- Add ketchup sparingly if sauce is to thick.

JALAPENO HOT SAUCE
Here's an easy recipe for a batch of homemade Jalapeno Hot Sauce. It uses a pound of jalapenos so consider yourself warned! Note: instructions not designed for canning or long term preserving.

- Give the jalapenos a good rinse and de-stem them. Be sure to wash your hands after handling them. More info on handling hot chiles.
- Saute a roughly chopped 1/2 onion and 2 whole, peeled garlic cloves in a glug of oil over medium heat.
- Once the onion is browning you can add 1 teaspoon Mexican oregano, some freshly cracked black pepper, and 1/4 teaspoon cumin (optional). Briefly cook until fragrant and then add: the de-stemmed jalapenos, 3/4 cup white vinegar, 1/2 cup water, and 1/2 teaspoon salt. Bring to a simmer and then add everything to a blender.
- Add 8-10 sprigs cilantro and the juice of 1 lime to the blender. Combine well or to your desired consistency. I usually leave it a bit chunky but you can always blend it thinner.
- Add mixture to three 5 oz. bottles or a small Mason jar. Store in the fridge where it will keep for at least a month.
