Pineapple Jam Recipe with Jalapeño Peppers image

Sweet, spicy, and a little sassy, this pineapple jam will brighten up cold winter days after you preserve it.

4 cups pineapple, peeled, cored, and chopped
½ cups jalapeños, de-seeded and minced
3/4-1 cup granulated organic cane sugar
2 teaspoons calcium water, (see Pomona's directions)
2 teaspoons Pomona's Pectin

Steps:

  • In a large saucepan, combine pineapple, jalapeños, and calcium water. Over medium heat, bring to simmer, stirring frequently. Cook until the pineapple softens and takes on some translucency, about 20-25 minutes.
  • Meanwhile, mix the sugar and pectin together in a small bowl. When the pineapple mixture is adequately cooked, add the sugar/pectin mixture to simmering fruit and stir until completely dissolved, about two minutes.
  • Ladle into sterilized half-pint jars leaving ¼" headspace. Wipe rims clean, and place prepared lids and rings onto jars finger-tight. Process in a water bath canner at a full rolling boil for 15 minutes.
  • After processing, remove jars from canner and allow to cool on a towel for 24 hours. Before storing, check for seal. Sealed jam will keep for a year in the pantry; store opened or unsealed jars in the refrigerator.

4-1/2 cups prepared fruit (buy 2 fully ripe medium pineapples)
1 box SURE-JELL Fruit Pectin
1/2 tsp. butter or margarine
5-1/2 cups sugar, measured into separate bowl

Steps:

  • Bring boiling-water canner, half full with water, to simmer. Wash jars and screw bands in hot soapy water; rinse with warm water. Pour boiling water over flat lids in saucepan off the heat. Let stand in hot water until ready to use. Drain jars well before filling.
  • Peel and core pineapples. Finely chop or grind fruit. Measure exactly 4-1/2 cups prepared pineapple into 6- or 8-qt. saucepot. Stir in pectin. Add butter to reduce foaming. Bring to full rolling boil (a boil that doesn't stop bubbling when stirred) on high heat, stirring constantly.
  • Add sugar. Return to full rolling boil and boil exactly 1 min., stirring constantly. Remove from heat. Skim off any foam with metal spoon.
  • Ladle immediately into prepared jars, filling to within 1/4 inch of tops. Wipe jar rims and threads. Cover with two-piece lids. Screw bands tightly. Place jars on elevated rack in canner. Lower rack into canner. (Water must cover jars by 1 to 2 inches. Add boiling water, if necessary.) Cover; bring water to gentle boil. Process 5 min. Remove jars and place upright on a towel to cool completely. After jars cool, check seals by pressing middles of lids with finger. (If lids spring back, lids are not sealed and refrigeration is necessary.)

4 cups canned pineapple opened, drained and pressed
1.5 cups red pepper diced
1.25 cups white vinegar poured
7 cups white sugar cupped
10-12 habanero peppers seeded & de-veined
1 dash Salt previously mined
1/4 cups Lemon Juice squozen
2 pouches Certo liquid pectin snipped

  • I had previously screwed around with a pineapple-hab jam until the recipe was perfect... then I moved and can no longer find my notes. This is me starting from scratch again. One lesson I learned from prior attempts was that fresh pineapple just doesn't seem to set very well. I had to cook the crap out of it and add a bunch of lemon juice before it would play nicely with the pectin. Canned pineapple on the other hand seems to set perfectly well. Although I prefer fresh ingredients over canned, it just wasn't worth the hassle. You will need to sterilize your jars. The recipe will make approximately 10 half pint jars or the equivalent (sterilize extra for unexpected excess). The jars need to be hot from the sterilizing process when you fill with jam. Put the sealing lids in boiling water near the end of the process and remove individual lids as required. Seed, de-vein and roughly slice the orange pepper. Seed and de-vein the habaneros. I like to leave the veins and seeds from 2-3 habs intact to increase the heat. If you want to tone the heat down a little then leave all seeds and veins out or decrease the number of peppers a bit. If you REALLY want to tone the heat down... well why the hell are you making this jam? This isn't Grandmas jalapeno jelly recipe. Dump all the peppers and the pineapple into a food processor. Process until it until slightly chunky. It shouldn't have hunks of anything... unless you want it to, then go for it! Transfer to large pot and add sugar, vinegar and salt and stir until blended. Heat to rolling boil for about 3 minutes, stirring constantly. Add lemon juice and both packets of pectin. Follow directions on your pectin packet but I brought mine back to the boil for 5 minutes then removed from heat. Stir occasionally but not too much. To test whether it will sufficiently set, chill a plate then place a small amount of jam on it. The jam should soon be reasonably firm with a wrinkled skin. If it is too runny then check the directions on your pectin. You can also bring back to the boil and keep adding lemon juice until it sets (testing as previously described). Remove from the heat while you test. Immediately (while the jam is hot) transfer to your jars in batches. Leave 1/4" space from the lid. Ensure the jars are still hot/warm. Do not put hot jam in a cold jar! Take your lids from the boiling water and place on top of a cleaned rim. Close with sealing ring. Complete for remaining jars. Within an hour or so you should start to hear the lids popping. This indicates they are sealed (it's also very satisfying). If some have not popped, gently push down on the lid. If it pops back and the jar isn't warm any more then it hasn't sealed. You can either put it in the fridge and use it immediately or try again to seal it. I have successfully immersed the jar (not over the lid) in boiling water to raise the jam temperature. This often results in a seal. Alternatively, you can empty the jam back into a pot and try again with hot jam. A final note. Many people insist you have to immerse the jars in a boiling water bath to properly seal the jam. I personally never do this and don't know anyone who does for jam. HOWEVER, this is entirely up to you and if you are at all concerned I would do the bath thing. A quick google search will bring up the process.

1 lb fresh jalapenos
1/2 fresh pineapple diced
6 c sugar
1 3/4 c apple cider vinegar
2 puches pectin

Steps:

  • 1. Wash and clean your peppers make sure you seed them and take the ribs off. Be sure to wear gloves or else you will regret t later. It's ok if a couple of seeds are still on the peppers. Dice your pine apple into little chunks. In a blender add jalapenos and vinegar blend until they are mush.
  • 2. In a pot add blended mixture with sugar bring to a boil and cook for 10 minutes. make sure to skim of foam so the jelly doesn't get cloudy. take off heat add pineapples cook for another 5 minutes in the last minute of cooking add the two pouches of fruit pectin bring to a boil and boil for about 1 minute turn off heat.
  • 3. Pour jelly in sterilized canning jars with a ladle you don't really need a funnel but you can use one if you need to. Fill to the tip leaving a small space for the lid to pop down. put them in a pot of simmering water and simmer until you can feel the lid has properly sealed. It takes about 2 hours to set and enjoy.

  • Combine pineapple, both hot and red peppers, ginger and sugar in a large saucepan. Bring mixture to a full rolling boil (a boil that doesn't stop bubbling when stirred) on high heat, stirring constantly.
  • Stir in pectin quickly. Return to full rolling boil and boil exactly 1 minute, stirring constantly. Do not boil longer than 1 minute.
  • Remove from heat. Skim off any foam.
  • Ladle quickly into prepared jars, filling to within 1/8 inch of the top. Process for 10 minutes in the canner.

6 1/2 c sugar
1 pkg certo (6oz)

Steps:

  • 1. BRING boiling-water canner, half-full with water, to simmer. Wash jars and screw bands in hot, soapy water; rinse with warm water. Pour boiling water over flat lids in saucepan off the heat. Let stand in hot water until ready to use.
  • 2. Drain jars well before filling.
  • 3. Pare and finely chop or grind pineapples. I prefer grinding because it releases the juices better.
  • 4. Place 3 layers of damp cheesecloth or jelly bag in large strainer over bowl.

  • Prepare Jelly Jars. Before you can begin to make your pepper jelly, you should have your jars washed, sterilized and ready for use. You can sterilize your jars in two ways
  • Prepare Water Bath Canner. I typically prepare my water bath canner before I even touch my peppers because it takes some time for all that water to heat up in the canner.

  • Proccess the Jars. The next step in canning the jalapeño jelly is actually called “processing.” We are going to process our filled jars in the water bath canner for 10 minutes.
  • Listen for the “Pings” Did you know your canning jars will sing to you? They definitely will (or should)! See, when you heat filled canning jars in a boiling water bath canner (or pressure canner), pressure builds inside the jars.

  • In a food processor fitted with the shredding blade, or with a sharp knife, finely chop the red bell pepper, jalapenos (seeding as many as you like, I seeded 4), and the pineapple. In a large pot, combine the peppers and the pineapple with the vinegar, salt and sugar. Bring the mixture to a boil over medium heat and allow to boil for 10 minutes, stirring constantly.
  • Add the liquid pectin and boil for 1 more minute. Remove the pot from the heat and pour into clean, hot canning jars, leaving 1/4 inch of headspace. Wipe the tops with a damp cloth to remove any stickiness and place a new lid and ring on the jar, making sure not to tighten the ring more than fingertip tight.
  • Place the jars in a boiling water canner and process for 10 minutes, adding additional time depending on your altitude (there’s info for the amount of time to add on the pectin box, I needed to add 5 minutes). After processing, allow the jars to sit undisturbed for 24 hours for the jelly to completely set. Any jars that don’t seal, store in the refrigerator, it should last for up to a month. The sealed jars will be fine for 1-2 years on the shelf.
