DUTCH-OVEN JALAPEñO CHEDDAR BREAD RECIPE BY TASTY
Impress your friends with this homemade dutch-oven bread. Bread-making can be time consuming but this recipe uses active yeast to help speed up the process. And with cheddar and jalapeño involved, you know you're in for a treat.

- In a large bowl, combine the bread flour, 2 cups (200 g) of cheddar cheese, the chopped jalapeños, and salt. Stir well.
- In a separate large bowl, combine the warm water and yeast. Pour the flour mixture on top of the water and use a silicone spatula to stir until the dough comes together.
- With the spatula, fold the dough around the edges of the bowl toward the center, rotating the bowl each time and folding a total of 8 times. Cover with a kitchen towel and let rest in a warm place for 60 minutes, or until almost doubled in size.
- Using the spatula, fold the dough toward the center again 8 more times. Cover with the towel and let rest for 30 minutes.
- Add the Dutch oven and lid to the oven, and preheat to 450˚F (230˚C) for 30 minutes.
- Lightly flour a clean work surface and your hands. Carefully peel the dough out of the bowl and onto the floured surface. Flip over and carefully brush away excess flour. Fold the edges of the dough towards the center 8 times, then flip over the dough and transfer to a piece of parchment paper.
- Brush the top of the dough with the olive oil, so the cheese will stick. Sprinkle the remaining ½ cup (50 g) of cheese on top. Use a sharp knife to score the bread with an "X", which will allow steam to escape. Arrange the jalapeño rings on top of the cheese.
- Carefully remove the Dutch oven from the oven and use the parchment to lift the bread into the pot. Cover with the lid and bake for 30 minutes, then remove the lid and bake for 20 more minutes, until the bread is golden brown.
- Carefully slide the bread out of the pot and onto a wire rack. Remove the parchment paper and let the bread cool for at least 1 hour before slicing.
- Slice the bread and serve as desired.

JALAPENO, ONION, CHEDDAR FOCCACIA BREAD
This recipe is a Bread Machine recipe. It takes a little attention in the beginning, but it's so worth it. It turns out so moist and flavorful!

- 1. Grate cheese, dice onions, and slice jalapeno into rings, mix together and set aside.
- 2. Sift 3 c of flour into mixing bowl. Add sugar, salt, granulated garlic and powdered milk. Mix together.
- 3. Place water and oil in bread machine pan. Add flour mix, make an indention in the center of flour and place in yeast.
- 4. Place machine on DOUGH ONLY cycle. Once dough has formed a ball, start putting in the cheese mixture a little at a time until it is all mixed in with the dough. You may need to add a little flour if the dough seems too moist. The cheese breaks down and adds moisture.
- 5. Once it's all incorporated, let it finish kneading and rising.
- 6. After dough has risen and beeper sounds, remove and place in a oil sprayed 11x13 baking dish. Spread out dough with your hands, and poke your fingertips into the dough to make little "dimples". Cover with a towel and let rise to about double in size.
- 7. Once risen, bake at 400° for 20 minutes on middle rack of oven. Enjoy!
GRILLED STEAK SANDWICH
What wonderful flavors! We really enjoyed the jalapeno cheese bread in this recipe. And while we weren't able to find asadero cheese here locally, cheddar served as a fine substitution.

- 1. Sit cheese out to come to room temp. It will melt quicker this way. Slice bread and butter both sides. (Ignore the burritos in this photo, that is tomorrow's lunch).
- 2. Cut steak into slices, season and place on skewers. Slice onion & mushrooms, season, toss with olive oil.
- 3. Place veggies on foil grill pan and cook till tender. Grill skewers to med-rare, or your steak preference.
- 4. When steak & veggies done, remove steak from skewers, chop into bite size pcs. Layer sandwiches: bread,cheese, steak, veggies, cheese, and bread again. Grill on each side till cheese melts. You may need to place on foil after grilling both sides so that cheese will melt without burning bread.

My nephew proclaims this the "King" of breads! I make this for him and my dinner guests often. It's easy and fairly fool-proof with a bread machine. A great accompaniment to soup and salad! The cook time does not include the bread machine time.

- Place first 7 ingredients in bread machine according to machine directions.
- Process on dough cycle.
- Remove dough and form into a large semi-flat round.
- Cover and let rise until double, approximately 45 minutes.
- Uncover and press cheese into dough with fingertips.
- Spritz or drizzle oil over the dough and sprinkle with salt.
- Bake at 350 for 20-25 minutes or until bottom is slightly browned.
- Slice into pie wedges and serve.
CHEESE AND JALAPENO FOCACCIA BREAD
The most delicious bread I have ever made, and surprisingly easy. You can top with onions, rosemary, or other herbs spices and cheeses for a variation. I like to double the jalapeno's and use jarred old el paso peppers because they are my favorite. If you cut it in half and put sandwich meat and veggies in the middle its a supper to die for.

- In a bowl mix together 1 cup of flour, sugar salt and yeast.
- Heat 2 T of oil and water until warm.
- Beat in egg.
- Add to flour mixture and mix until moistened.
- Beat for 3 more minutes.
- Stir in 1 and ¾ cups of flour a little at a time until dough pulls away from the sides of the bowl.
- Place dough on a floured surface and knead in remaining flour.

JALAPENO CHEESE BREAD
This beautiful braided yeast bread is loaded with fresh jalapenos and cheddar cheese. Perfect on it's own, or as a side for almost any meal.

- Add two cups of flour, along with the salt, to the bowl of a stand mixer.
- In a medium saucepan, heat water, milk and butter over medium heat until butter is melted. The temperature of the mixture should be between 110-115 degrees. If it is too warm, allow it to cool slightly. Stir the sugar and yeast into the warm milk and butter mixture. Let stand about 10 minutes, or until yeast is frothy.
- Add yeast mixture to the flour in the mixer. Stir in the egg. Using the dough hook, mix until well combined. Gradually add the remaining half cup of flour until a soft dough forms and gathers in the center of the bowl. You may not need all the flour.
- Turn the dough onto a lightly floured surface and knead for a few minutes. Let dough rest for 5-10 minutes. Using a rolling pin, roll the dough into a 10x14 inch rectangle.
- Sprinkle the dough with the garlic salt, followed by the minced jalapenos and both cheeses. Starting with the long end, roll the dough into a tight log. Using a sharp knife, slice the log in half vertically, starting a few inches below the upper edge. You should have two ropes of dough, connected at the top.
- Gently rotate the two ropes of dough outward, so that the cut side is facing up and the filling is exposed. Place one rope of dough over the other, repeating until you reach the end of the log. Carefully place the loaf into a greased, 9x5 inch loaf pan.
