3 lbs boneless chicken breasts, cubed
1 (10 ounce) bottle light soy sauce
10 ounces water
6 -12 jalapenos, stems removed, cut in half
4 cups cooked white rice

Steps:

  • add chicken, light soy sauce, water and jalapenos into a large sauce pan.
  • cook over medium high heat for about 20 minutes, until there is just a bit of sauce left.
  • prepare rice according to directions.
  • pour chicken over rice, enjoy!

This is a recipe I got from another person on another board. This is my favorite rice and I wanted to share it with everyone here. Give it a try!

Number Of Ingredients 7

1/4 cup chopped onion
1/2 cup vegetable oil
4 cups water
4 tablespoons butter or 4 tablespoons margarine
2 cups rice
3 -4 jalapenos (whole)
1 lb American cheese, cubed

Steps:

  • Combine onion, oil, water, butter and rice in large pot.
  • Add whole jalapenos to pot.
  • Bring to a boil.
  • Cover and simmer over medium-low heat until rice is tender. This can take about 30 minutes.
  • Carefully remove the jalapenos from the rice, deseed them, chop them and return to the rice. Mix well.
  • Add the cheese to the pot and mix well. Cheese will melt upon mixing.
  • Serve and enjoy!

2 cups rice, cooked (brown or white)
1/2 cup chicken, shredded (or other meat of choice)
2 garlic cloves
4 -5 basil leaves
1 -2 jalapeno, julienned (add more for desired spice)
1/2 cup julienned red peppers (or vegetables of your choice) or 1/2 cup chinese broccoli (or vegetables of your choice)
1 teaspoon oyster sauce
1 1/2 teaspoons sugar
1 teaspoon thin soy sauce
1 egg

Steps:

  • Heat pan with oil until hot.
  • Add garlic and cook until brown.
  • Add meat and cook thoroughly.
  • Add egg until cooked.
  • Add rice with meat and stir.
  • Add remaining ingredients and stir.

1/4 cup extra-virgin olive oil
2 large eggs, beaten
2 cups sliced cremini- or shiitake-mushroom caps (5 ounces)
Kosher salt and freshly ground pepper
1/4 cup sliced scallions, plus more sliced green tops for serving
1/4 cup finely chopped cilantro stems, plus 1/4 cup chopped leaves
1 red bell pepper, chopped (1 1/2 cups)
2 tablespoons hot sauce, such as Cholula, plus more for serving
3 cups cooked white rice (preferably day-old)
1 can (15.5 ounces) black beans, drained and rinsed
Diced avocado and lightly crushed tortilla chips, for serving

Steps:

  • Heat 1 tablespoon oil in a large nonstick skillet over high. When it shimmers, add eggs and cook, undisturbed, 10 seconds. Stir with a spatula until just set, about 30 seconds; transfer to a plate.
  • Add 2 tablespoons oil and mushrooms to skillet; season with salt and pepper. Cook, stirring occasionally, until golden, 6 to 8 minutes. Add remaining 1 tablespoon oil, scallions, cilantro stems, and bell pepper; season with salt and pepper. Cook until soft, about 5 minutes more. Stir in hot sauce and rice. Spread mixture in a single layer and let cook, undisturbed, until underside crisps slightly, about 5 minutes.
  • Stir in beans and cook until warm, about 1 minute. Fold in eggs and cilantro leaves; season to taste. Serve with avocado, scallion greens, tortilla chips, and more hot sauce.
