Jalapeño Pepper Jelly is a delicious sweet and spicy spread. This is a great way to preserve all those summer jalapenos and peppers. Enjoy on cheese and crackers, toast, sandwiches, or grilled meats.

10 jalapeno peppers (half seeded)
1 red bell pepper (chopped)
1 green bell pepper (or orange) (chopped)
5 1/2 cups granulated sugar
1 1/2 cup white vinegar
1/2 teaspoon salt
1 3 ounce pouch liquid pectin

Steps:

  • Place all peppers in a food processor and pulse until peppers are finely chopped. Empty into a mesh strainer and drain off excess liquid.
  • Place the chopped vegetables in a large stock pot and add in the sugar, vinegar, and salt. Bring to a boil over medium-high heat and boil for 10 minutes. Add the pectin and boil 1 more minute. Remove from heat
  • Ladle jam into hot sterile jars using a wide mouth funnel. Leave 1/4 inch headspace. Top the jars with the lids, screwing them on with just your thumb and index finger (this is to ensure that it is on but not too tight that the air can't escape).
  • Place jars back on the rack and lower into the water. Bring to a boil and boil for 10 minutes. (Add 1 more minute for each 1000 ft elevation above 1000 ft.)
  • Remove and place on a towel about 1 inch apart. After a few minutes you should start to hear the cans seal with a pop. Leave the jars untouched on the counter for 12 hours.
  • To check for a proper seal, remove the the ring of the lid and lift the can up off the counter 1-2 inches while holding the edges of the lid. If the lid stays attached the jelly is sealed properly and can be stored on the shelf (screw bands removed).
  • If a seal did not form or if you opened the lid and broke the seal, jelly can be stored in the fridge.
  • Let jelly rest 1 day before opening to allow it to fully set up and be thick.

From the Ball Blue Book of Preserving. A little different than other recipes as it uses only jalapeno peppers. Be sure to wear disposable or rubber gloves while cutting and seeding jalapenos. I did not add the optional food coloring and got 6 half-pints. Great over cream cheese or for use in recipes. Please be sure you are familiar with hot water bath canning procedures. 3/4 lb jalapeno pepper
2 cups cider vinegar, divided
6 cups sugar
2 (3 ounce) envelopes liquid pectin
green food coloring (optional)

Steps:

  • After removing stems and seeds from jalapenos, puree in food processor with 1 cup cider vinegar.
  • Combine puree, additional 1 cup cider vinegar, and sugar in large saucepot. Bring to a boil; boil 10 minutes, stirring constantly.
  • Stir in liquid pectin. Return to a rolling boil and boil hard 1 minute, stirring constantly. Remove from heat.
  • Skim foam, if necessary, and stir in a few drops of food coloring, if desired.
  • Ladle hot jelly into hot jars, leaving 1/4 inch headspace. Adjust 2 piece caps. Process 10 minutes in a boiling water canner.

6 - 10 3 inch jalapeno peppers (seeded and chopped) the more jalapenos you add the hotter it will be.
6 c sweet peppers (seeded and chopped)
2 lb apples, granny smith
1 1/8 orange peel (with all the pith you can get)
1 c white vinegar
1 c water
3 Tbsp ball's granular pectin
5 c white sugar
green food coloring (to your liking)

Steps:

  • 1. Wash all the fruit with mild soapy water and rinse. Remove the top of the peppers and any bad spots, cut them in half and remove all the seeds and put in a 6 or 8 cup measure. I used mini sweet peppers and green peppers because that is what I had in my garden. I used all colors.
  • 2. Core the apples remove any bad spots and divide into 8 pieces and put in a bowl. Peel one good size orange keeping as much of the pith (white) as you can. Note: I left the peel in large pieces so the pith would not make the jelly bitter.
  • 3. Measure out the water and vinegar. Using your blender grind up the fruit as small as you can using the vinegar water to help emulsify the fruits. Pour all of this into a LARGE pot.
  • 4. Measure out the sugar and mix the pectin into it and set aside.
  • 5. Place the pot of fruit on the stove over medium high heat. Stirring constantly bring it to a rolling boil.
  • 6. Ladle the fruit and juice out of the pot and put it through a sieve pressing the fruit as you go to remove all the juice. Once the juice is out of the fruit discard the pulp and continue this process until all the fruit and juice have been separated. (If you want a clear jelly now is the time to strain the juice through a cheese cloth.) We like the extra texture of the fruit so we don't strain the juice.
  • 7. Return the juice to the pot and stir in the sugar/pectin mixture. Add the food coloring to the shade desired. Bring to a rolling boil and cook until the juice is glossy. Turn off the heat. I always check the jell factor by placing a small amount in an ice water bath (see the picture) if it has not jelled enough I put it back on the heat to boil a little longer. Turn off the heat and pack into 6 8oz jars. Give or take a little. Put the sterile lids and rings on tightly and water bath as needed.

  • 1. Run peppers through a food processor using fine blades. USE ALL JUICE.
  • 2. Slowly boil ingredients for 10 minutes, remove from heat.
  • 3. Add liquid pectin and boil hard 1 minute
  • 4. Pour into sterilized 1/2 pint jars to within 1/4 inch from the top.
  • 5. Put on caps and put on screw bands, tighten firmly. Process in a boiling water bath for 15 minutes. Start timing when water starts boiling again

Number Of Ingredients 6

8 Granny Smith Apples, Peeled, Cored, and Diced
3 cups Water
1 cup Cider Vinegar
6 Jalapenos, Stems & Seeds Removed, Diced
3 cups Sugar, (I added 4 cups of sugar)
6 ounces Liquid Pectin, (or 2 boxes of Sure-Jell)

Steps:

  • Place the apples, water, vinegar, and jalapeno in a large, heavy saucepan. Bring to a boil over medium-high heat, stirring occasionally. As soon as the mixture boils, lower the heat to medium and cook for about 20 minutes, or until the apples soften.
  • Remove the pan from heat. Using a fine-mesh strainer, strain the liquid into a clean large, heavy saucepan, letting the apples drain, but do not press on them.
  • When the liquid is extracted, discard the pulp.
  • Add the sugar to the apple juice and bring to a boil over medium-high heat.
  • Remove from heat, add pectin, and stir well.
  • Pour into 6 sterilized jars, seal, and store.

2 lbs granny smith apples, quartered (Do not peel or core)
1 1/2 cups water
2 green bell peppers, seeded and cut into 1-inch, pieces
6 jalapeno chiles, seeded and cut into 1-inch, pieces
4 -5 cups sugar
1 cup cider vinegar
3 ounces liquid pectin
2 tablespoons minced red bell peppers

Steps:

  • Bring apples and water to boil in heavy large saucepan.
  • Reduce heat, cover and simmer until apples are falling apart, stirring occasionally, about 30 minutes.
  • Cool 30 minutes.
  • Press apple mixture through fine strainer into heavy large saucepan.
  • Puree green peppers and chilies with 2 cups sugar in processor or blender.
  • Add to apples.
  • Mix in remaining 3 cups sugar and vinegar.
  • Boil over medium heat 10 minutes to blend flavors.
  • Add pectin and boil exactly 2 minutes.
  • Stir in red pepper.
  • Pour into sterilized jars and seal.
  • Shake jars occasionally as jelly cools to distribute peppers evenly.
  • Store in cool dry place.

12 medium jalapeño peppers
2 cups apple cider vinegar (divided)
6 cups sugar
6 ounces liquid pectin ((2) 3-ounce packages)
Green food coloring (optional)

Steps:

  • Prepare boiling water canner. Heat jars in simmering water until ready for use. (Do not boil.) Wash lids in warm soapy water and set bands aside.
  • Remove the stems of the jalapeños. Make the jalapeño jelly as spicy or mild as you want, by removing some or all of the seeds and veins.
  • Using a food processor or blender, puree the jalapeños with 1 cup of the apple cider vinegar, until smooth. (Do not strain)
  • Combine the puree, remaining 1 cup of apple cider vinegar and sugar in a large nonreactive pot, over medium heat. Bring to a boil, stirring frequently with a spoon. Boil the mixture for 10 minutes.
  • Cut pectin pouches open; place the pouches into empty glasses or mugs to hold, until needed.
  • Add both pouches of pectin as quickly as possible. Squeeze entire contents from each of the two pouches. Continue to boil hard for 1 minute, stirring constantly, but watching for foam.
  • Remove from heat. Add food coloring, if using. Using a spoon, skim the foam if necessary.
  • Using a ladle and canning funnel, ladle the hot jalapeño jelly into the prepared hot jars, leaving ¼-inch headspace. Wipe the rim; center lid on the jar and apply band until fit is fingertip tight.
  • Carefully place the jars into the boiling water canner for 10 minutes, adjusting for altitude. Remove jars and cool. Check lids for seal after 24 hours. The lid should not flex up and down when center the center is pressed.

1 large green bell pepper
12 jalapeno peppers
1 ½ cups apple cider vinegar
1 pinch salt
4 ¼ cups granulated sugar
4 ounces liquid pectin
4 jalapeno peppers, seeded and finely chopped

Steps:

  • Combine the green bell pepper and 12 jalapeno peppers in the container of a food processor or blender. Process until finely chopped. This can be done in batches, if the peppers do not fit.
  • Transfer the peppers to a large saucepan, and stir in the cider vinegar. Bring to a boil, and let simmer for 15 to 20 minutes. Strain the mixture through at least 2 layers of cheesecloth, and discard pulp. You should have about 1 cup of liquid.
  • Return the liquid to the saucepan, and stir in the salt and sugar until dissolved. Bring to a boil over medium-high heat. When the mixture comes to a rolling boil (one that cannot be stirred down), boil for one minute, then stir in the liquid pectin.
  • Stir in the remaining jalapeno peppers, and ladle into sterile jars leaving 1/4 inch headspace. Seal jars in a hot water bath. Refrigerate jelly after seal is broken.

If the liquid gets too low during this process, you can add more water a tablespoon at a time.
  • Once the apples are soft, stir in the granulated sugar, the brown sugar, the cinnamon, and the salt. As you stir, mash the apples against the side of the pot with the back of your spoon. Alternatively, you can use a potato masher. You can make it as chunky or mashed as you like. For instance, I prefer mine to leave a few apple chunks in my jam for texture. Continue to cook the jam for 20 minutes, while occasionally stirring.
  • After about 20 minutes, take the plate out of the freezer and place a spoonful of the jam on the plate. After about 15 seconds, tilt the plate and if the jam doesn’t run then it’s ready. If it does run, continue to cook it while occasionally stirring for 5 more minutes and then check again. Continue to cook and test until it doesn’t run.
