5 strips bacon
1 onion, chopped
8 jalapeñoes, chopped and seeded
8 oz cream cheese, room temperature
1 ½ cups sharp cheddar cheese, extra for topping
¼ teaspoon pepper
1 teaspoon garlic powder
1 sheet puff pastry, room temperature
flour, for rolling dough

Steps:

  • In a pan, cook bacon until crisp, then chop into small pieces.
  • Discard excess fat (reserve approximately 2 tablespoons).
  • In the same pan, sauté the onions in the reserved fat until they start to become translucent.
  • Add the jalapeños. Cook until the onions start to caramelize and remove from heat.
  • Preheat oven to 375°F (190°C) and cover a cookie sheet with parchment paper.
  • In a large bowl, combine the cream cheese, bacon, cheddar, pepper, garlic powder, and jalapeño mixture. Stir until thoroughly incorporated.
  • On a lightly floured surface, gently roll out the puff pastry until the surface is smooth and even.
  • Spread the japapeño mixture on the pastry sheet, stopping 1 inch (2 ½ cm) from the top of the dough.
  • Starting at the bottom, tightly roll upwards and pinch the top edge to seal into a log shape.
  • Cut the roll every 1½ inches (3 ¾ cm). Place the pieces face-up, 2 inches (5 cm) apart on the baking sheet. Sprinkle the tops of the pastries with cheddar.
  • Bake for 25 to 30 minutes, or until the cheese is melted and the sides of the pastries are a light golden color.

2 packages seamless crescent roll dough
8 oz cream cheese (room temperature)
8 oz pepper jack cheese (shredded)
1/4 cup jarred sliced jalapeños (diced)
1/4 cup cooked bacon pieces (or pre cooked found in the salad aisle)

Steps:

  • Preheat your oven to 350 degrees.
  • Spread out your crescent roll doughs. Spread half of the cream cheese on one sheet of dough, and half the cream cheese on the other. Sprinkle half the shredded cheese on one roll and half the shredded cheese on the other. Do the same with the jalapeño peppers, half on one sheet, half on the other. Repeat with the bacon pieces.
  • Roll each roll up tightly. Using a piece of floss, or a piece of fishing line, and put it underneath your roll up in the middle. Cross the ends of the floss over the top of the roll and pull. It will make a clean slice through the roll up. Repeat on each piece, putting it in the middle of the pice until you have 8 equal pieces.
  • Place the pieces flat side down on parchment paper or a silicon lined baking mat. Bake for 10 minutes or until the dough is golden brown.

1 package of crescent dough
3-6 jalapeño peppers, seeded and chopped fine
1/2 8 oz. tub of whipped cream cheese
1 pound-ish bacon cooked and chopped

Steps:

  • Preheat oven to 375
  • Mix jalapeños into cream cheese. Use more peppers for a hotter flavor
  • Roll out crescent dough, use your fingers to press seams together. If you do this on waxed paper or parchment it's easier to roll
  • Use a spatula to slather the crescent dough with the cream cheese mix leaving about an inch empty on one long side
  • Sprinkle on the chopped bacon and gently press bacon into the cheese
  • Roll up the dough ending with the inch of un-cheesed dough so it's dough-on-dough and it will hopefully seal a little
  • Throw it in the fridge for about 20 minutes to harden up
  • Slice into 1/2 inch pieces and lay on a cookie sheet
  • Bake for 12-15 minutes or until dough is puffed and golden
  • Transfer to a cooking rack
  • Serve warm or cold

  • Take a Puff Pastry sheet out of the freeze and thaw enough to unfold. Preheat oven to 400 degrees F. In a bowl combine room temperature cream cheese, jalapeños, bacon, cheddar cheese, and garlic powder until well combined.
  • Taking your unfolded puff pastry, spread your popper filling on top of it. Leaving a one inch gap at the top of your pastry. Slowly roll the end closest to you up to the top creating a log. Leave the log seam down.
  • With a sharp knife cut half inch pinwheels from the roll. I find it easiest to use a ruler to mark off the half inch lines. You'll be left with 22 pieces including the ends. You can tose the ends or bake them. If your pinwheels are "smushed" from being cut, reshape them to a more circular shape. Add your pinwheels to the freeze for 5 minutes to give a quick re-freeze. Whisk together your egg and water to make an egg glaze. Line two baking trays with parchment paper or silicone mat.
  • Remove the pinwheels from the freezer. Line the baking trays with the pinwheels an inch apart. Brush on the egg glaze on the tops and on the sides of the pinwheels. Bake for 15 minutes in the oven or until golden brown. Remove and let cool on a cooling rack for 5 minutes. Serve hot or at room temperature.
