CRAB CEVICHE (CEVICHE DE JAIBA)
Zesty refreshing crab ceviche, also called ceciche de jaiba is a Sunday brunch must have. Serve it with crunchy tortilla chips and a icy cocktail.

Steps:
- Dice tomatoes, onions, avocado, cilantro, jalapeno and cucumber and place in a medium size glass or ceramic bowl. Add crab meat.
- Juice limes or lemon right into the bowl and add salt and pepper. Mix everything very well.
- Serve with tostadas or corn tortillas. Or as is!

CRAB CEVICHE
This has always been a crowd pleaser in my home. This is wonderful as an appetizer served on tostadas or even with tortilla chips. Make sure to refrigerate before you serve, it tastes best when very cold. I like to serve on tostadas with a thin layer of mayonnaise for a nice refreshing lunch.

Steps:
- Place the shredded imitation crab into a glass or porcelain bowl. Plastic or metal are not recommended. Stir olive oil into the crabmeat until well coated, then stir in the cilantro, onion, tomato and serrano peppers. Squeeze the lime juice over everything, and mix well. Season with plenty of salt and pepper. Refrigerate for about 1 hour before serving.

JAVI'S REALLY REAL MEXICAN CEVICHE
This recipe is one of my family's favorites. It can be served on corn tostadas or with corn chips as a meal or as an appetizer, as it is normally served in most authentic Mexican restaurants. Goes best with cold beer! Don't forget the hot sauce.

- In a large glass or ceramic bowl, gently toss the shrimp and scallops with the lime juice and lemon juice. Mix in onion, cucumber, tomato, jalapeno, serrano, cilantro, olive oil, salt, and pepper. Cover bowl, and chill ceviche 1 hour in the refrigerator, until shrimp and scallops are opaque.

- 1. In a medium bowl, place the crabmeat, onions, tomatoes, cilantro, lettuce. chili serranos (optional) and toss.
- 2. Add salt, and pepper, and toss.
- 3. Add Mayonnaise and fold into the above. THE SECRET TO THE THESE TOSTADAS IS THE BRAND OF "McCORMICK" MAYONNAISE/(MAYONASA MEANS MAYONNAISE). THIS IS THE MEXICAN VERSION. THIS MAYONNAISE IS FLAVORED WITH LEMON AND LIME JUICES. THIS MAYONNAISE CAN USUALLY BE FOUND IN HISPANIC MARKETS. I HAVE TRIED USING OTHER BRANDS, AND THE FLAVOR IS NOT THERE AT ALL. MAKE SURE YOU USE "McCORMICKS' BRAND. THIS IS WHAT GIVES IT A BANG.
- 4. Place 1 to 2 tablespoons of mixture on top of a tostada, top with 2 wedges of avocado. The tostadas can be additionally topped with chili Tapatio, or your own home made salsa. you can also add a few dribbles of catchup. These can be combined or separate, according to your taste.
