1 1/2 lbs broccoli
1 tablespoon corn oil (or any neutral oil)
1 teaspoon freshly grated gingerroot
2 garlic cloves, minced
1/4 teaspoon pepper
1/2 cup water chestnut, sliced (if using canned water chestnuts, rinse and drain well)
3 tablespoons soy sauce
3 tablespoons brown sugar
1/2 teaspoon sesame oil
3 tablespoons gin

Steps:

  • Cut broccoli up into florets. Slice stems.
  • Bring a pot of salted water to boiling. Blanch the broccoli for about 2 minutes but no longer than 3 minutes. Drain and rinse with cold water. Set aside to drain.
  • Heat the corn oil in a wok on medium-high heat. Add the ginger and garlic and sautè for about 1 minute. Be careful not to burn! (Reduce heat if necessary.).
  • Add the drained broccoli, black pepper and water chestnuts to the wok. Stir fry 1-2 minutes.
  • In a small glass bowl, whisk together the soy sauce, brown sugar and sesame oil. Add to the broccoli.
  • Add the gin, cover wok and cook 1 minute.
  • Transfer to a platter and serve hot.

Adapted from a Chinese cookbook by Jim Lee that was published around 1970. This is one of my all-time favorite cookbooks; I was introduced to it by friends who were Chinese students I knew at University of Virginia. This is traditionally made with gai lan, or Chinese broccoli, but the recipe works well with any broccoli you can find.

1 teaspoon sugar
1 tablespoon cornstarch
2 tablespoons light soy sauce
1/4 cup oil
1/8 teaspoon salt (optional)
1 garlic clove, minced
2 lbs gai lan (Chinese broccoli) or 2 lbs broccoli, rinsed and sliced
2 tablespoons sherry wine or 2 tablespoons rice wine

Steps:

  • Mix together sugar through soy sauce plus 1/2 cup water and put aside.
  • Heat oil in a skillet or wok over medium heat and add the garlic.
  • When garlic is golden brown, add the broccoli.
  • Turn the heat up and stir-fry 2 minutes.
  • Add sherry, cover quickly and cook 2 minutes.
  • Lift cover& add the soy sauce mixture.
  • When sauce thickens, remove and serve.

DIM SUM STYLE GAI-LAN (CHINESE BROCCOLI)

This tastes just like the Gai-Lan that my DBF and I get when we go to Dim Sum on Sundays. It is really easy to make at home. It is similar to regular broccoli but it is slightly milder and has broad flat leaves instead of florets. If you can't find Gai Lan, you can substitute broccolini. The baking soda helps the broccoli retain its green color while cooking.

1 lb gai lan or 1 lb chinese broccoli
2 teaspoons salt
1 teaspoon baking soda
1 garlic clove, sliced
1 inch gingerroot (1 inch piece, peeled)
2 teaspoons toasted sesame seeds
3 tablespoons oyster sauce
3 tablespoons water or 3 tablespoons chicken broth
1 tablespoon mirin or 1 tablespoon dry sherry
1 tablespoon sugar

Steps:

  • Gai Lan: Rinse gai lan and trim the end of the stems. Bring eight cups of water to a boil in a large saucepan or stock pot. Stir in salt, baking soda, garlic and ginger. Add gai-lan. Cover and simmer about 4 minutes, until the gai lan turns bright green and is tender-crisp. Drain and serve drizzled with the oyster sauce and sprinkled with sesame seeds.
  • Sauce: Mix oyster sauce with water or broth, mirin and sugar in a small saucepan. Bring to a boil to melt the sugar. Remove from heat.

Gai lan is Chinese broccoli. I first had this when we went out for Dim Sum. The stalks are crisp the dressing is salty, sweet and rich.

2 tablespoons oyster sauce
1/2 teaspoon cornstarch
2 tablespoons chicken stock
1 tablespoon rice wine or 1 tablespoon dry sherry
1/2 teaspoon sugar
1 teaspoon soy sauce
1/2 teaspoon sesame oil
1 teaspoon finely shredded ginger
1 garlic clove, minced finely
1 -1 1/2 lb gai lan (chinese broccoli)
1 teaspoon soy sauce
1 tablespoon olive oil

Steps:

  • Combine the oyster sauce, cornstarch, chicken stock, rice wine, sugar, soy sauce, ginger, garlic and sesame oil in a small saucepan.
  • Bring to a boil and cook until sauce thickens.
  • Set aside.
  • Wash the gai lan in cold water.
  • Trim off and discard the tough bottoms.
  • Peel stalks if they are thick and tough; leave gai lan whole or cut into thirds.
  • Bring 1-3 quarts of water to a boil in a wok and add the soy and oil.
  • Add the greens, bring back to a second boil with lid on.
  • Turn off the heat and let greens steam for a minute or two.
  • When the green stalks brighten, test one for doneness.
  • It should be tender and crisp.
  • Drain immediately and shake off excess water.
  • Transfer to a platter, pour dressing over, and serve immediately.

Simple Broccoli Stir-fry image

Stir-frying has stood the test of time. It's a wonderful way to cook small pieces of vegetables and meat quickly, without a lot of fat. Prepping your ingredients ahead of time and having them near your stovetop is the key to success. This recipe can be made in a large nonstick skillet, but consider purchasing a wok: Carbon steel and cast-iron take on high heat well, and the concave shape makes stir-frying foods easy and fast.

Number Of Ingredients 11

1 large bunch broccoli (about1 1/2 pounds)
2 tablespoons soy sauce
1 tablespoon cornstarch
1 teaspoon sugar
2 tablespoons plus 1 teaspoon vegetable or peanut oil
1 scallion, chopped
2 to 3 cloves garlic, chopped (about 2 teaspoons)
1-inch piece ginger, peeled and chopped (about 2 teaspoons)
Pinch to 1/4 teaspoon crushed red pepper flakes
1/4 teaspoon toasted sesame oil
Cooked white or brown rice, for serving

Steps:

  • Trim the florets off the broccoli, and cut into 1- to 1 1/2-inch pieces. Peel the broccoli stalks with a vegetable peeler to remove the tough outer skin, and slice 1/4 inch thick on the diagonal. Set aside.
  • Whisk together 1/2 cup water, soy sauce, cornstarch and sugar in a small bowl. Set aside.
  • Heat a large wok over high heat. Add 2 tablespoons of the vegetable oil, and swirl to coat the wok. Once the oil begins to smoke, add the broccoli florets and stems. Cook, stirring constantly, until browned around the edges, about 2 minutes. Add 2 tablespoons of water to steam the broccoli, and cook, stirring constantly, until tender, about 2 minutes more. Push the broccoli to the edges of the pan, forming an empty well in the center. Add the remaining 1 teaspoon vegetable oil, then the scallions, garlic, ginger and pepper flakes, and stir until aromatic, 30 to 45 seconds. Add the soy mixture, and stir until the sauce has thickened and the broccoli is coated, about 30 seconds. Remove from the heat, add the sesame oil and stir to coat. Serve with rice.
