SHEPHERD'S PIE
Steps:
- Preheat the oven to 300 degrees F.
- Put the lamb in a roasting pan and roast until an instant-read thermometer registers 140 degrees
- F, about 2 hours. Remove from the oven to a cutting board and let stand for 2 hours. Trim off the fat and cut into 1/2-inch squares. In a medium pot over medium heat, mix the beef base with the water and bring to a boil. Add the port, reduce the heat and simmer for 15 minutes. While the mixture is simmering, add the garlic. In a large saucepan add the carrots, celery, parsnips and onions. Stir in the lamb and the beef broth mixture and cook until the vegetables are al dente.
- Distribute the mixture evenly into 12 shallow heat-proof dishes and sprinkle with chopped thyme and rosemary. There should be about 2 ounces of liquid in each dish, or about a 1/2-inch deep. Sprinkle with green peas. Pipe mashed potatoes through pastry bag to cover the mixture. Raise the oven temperature to 400 degrees F. Put the dishes into the oven and bake until the tops of the mashed potatoes are browned.
- Remove from the oven and serve with a pint of beer.
SHEPHERD'S PIE RECIPE

- Preheat the oven to 400 degrees and prepare a 9x13 baking dish by spraying with nonstick cooking spray.
- Fill a large pot with water and bring to a boil. Add the diced potatoes and cook until tender. Remove from water and set aside.
- While the potatoes are cooking, brown the ground beef in a large skillet with the diced onion and minced garlic. Season with salt, pepper, parsley, thyme, and rosemary.
- Stir in the frozen corn, peas, and carrots.
- In a small bowl or measuring cup, whisk together the beef broth and corn starch until well combined. Pour over the beef mixture and simmer over medium low heat until thickened.
- Pour the meat mixture in the prepared baking dish and set aside.
- Prepare the potato topping by seasoning the cooked potatoes with salt, pepper and garlic.
- Stir in the butter, milk, and parmesan cheese. Use a potato masher to mash the potatoes until smooth.
- Spread the potato mixture over the top of the meat mixture.
- Place the baking dish in the preheated oven and bake for 45 to 50 minutes, until the potatoes have begun to brown and the sauce is bubbling.
- Remove from oven and allow to rest for five to 10 minutes before serving.

EASY RUSTIC SHEPHERD'S PIE WITH THE CHEESIEST MASHED POTATOES
My take on the classic - shepherd's pie! Of course, like with any of my other recipes this shepherd's pie is loaded with herbs and spices to give it the best flavor. Finally, we'll top it off with the cheesiest Irish cheddar mashed potatoes your shepherd's pie has ever seen!

- potatoes: boil the potatoes in a large pot of salted water until fork tender. Sometimes I'll throw in a couple cloves of garlic in with the potatoes too. Drain, mash and mix in the remaining mashed potatoes ingredients and season with salt and pepper to taste.
- cook the meat and veggies: heat the olive oil in a large oven-safe pot over medium-high heat. Add the ground lamb and crumble the meat using a wooden spoon. Cook for 4-5 minutes or until the meat browns, drain any excess grease leaving just 1 tablespoon. Add the mirepoix and season the veggies with a small pinch of salt and allow the veggies to cook down until translucent, about 7-9 minutes. Add the garlic and let cook another 30 seconds or until fragrant.
- beef gravy: Position a rack in the center of the oven and preheat the oven to 425ºF. Sprinkle the ground meat mixture with the cinnamon, nutmeg, and cornstarch, stir to combine and let cook for 15 seconds before adding the Worcestershire sauce, tomato paste, herbs, bay leaf, and beef stock. Allow the gravy to come to a simmer before reducing the heat to low and letting it simmer for 15 minutes. Remove the herbs, stir in the peas, taste and adjust with salt and pepper as desired.
- bake and serve: Drop large dollops of the prepared mashed potatoes on top of the beef gravy then smooth out gently. Bake for 15 minutes then, finish it under the broiler if you want it to be golden brown on top. Let cool for several minutes before serving.
JACOB'S PIE (A DIFFERENT SPIN ON SHEPHERD'S PIE)
This is a hearty one-dish meal you can throw together in minutes. My family has been making it this way since I was a kid and we've always called it Jacob's Pie. Shepherd's Pie (I later learned), contains cooked tomatoes which is something we were never too crazy about as kids. I hope it reminds you of home as much as it does me!

- Saute the ground beef garlic and onions together in a deep iron skillet until the beef is no longer pink in the middle. You can add any other seasonings to suit your taste -- I like to use salt, pepper and Worcestershire sauce. (Note: If you don't have an iron skillet, use a regular skillet to cook the meat and then assemble in a casserole dish).
- Drain ground beef mixture.
- Return ground beef to the skillet (or casserole dish), and arrange in a layer to cover the bottom.
- Spread condensed cream of mushroom soup in a layer over the ground beef.
- Arrange drained green beans/veggies in a layer over the soup.
- Spread mashed potatoes in a layer over the veggies.
- Top with cheese slices.
- Place skillet/casserole dish on center rack in the oven at 350 degrees for 15-20 min or until cheese is melted with slightly browned edges.
- Serve with warm dinner rolls.
