SKILLET JACKPOT CASSEROLE
My mother use to make this as an oven casserole when I was a child. I decided to jazz it up a little bit and cook it on the stovetop to avoid heating up the oven during the summer. It's a quick after work dinner to make that will please adults and children.

Steps:
- 1. Cook macaroni, rinse and set aside. Dice onion.
- 2. In a non stick skillet, cook onion until translucent and add LEAN ground beef, cook until done. Drain.
- 3. On medium heat, add tomato sauce (15 oz), drained corn, and half of sauce can of water to meat/onion mixture. Stir in taco seasoning and warm through.
- 4. Add cooked macaroni to above mixture until desired ratio of macaroni to meat mixture, warm through.
- 5. Add shredded cheese to top of meat/macaroni mixture and turn heat down to medium low until cheese melts. I used a jack & cheddar mix. Serve.

- Preheat oven to 350°. In a small saucepan, melt butter. Stir in the flour, salt and pepper until smooth. Gradually add milk. Bring to a boil; cook and stir until thickened and bubbly, 2 minutes. , In a greased 2-1/2-qt. baking dish, layer with a third of the potatoes, half of the hot dogs and half of the onion. Repeat layers. Top with remaining potatoes. Pour white sauce over all., Bake, covered, for 1 hour. Uncover; sprinkle with cheese. Bake until potatoes are tender, 10-15 minutes longer.

- Set pressure cooker to saute and add olive oil, ground beef and diced onions. Cook until meat is no longer pink. Then turn off pot.
- In a bowl whisk together cream of chicken soup, broth, garlic salt, pepper and milk so it is smooth. Pour this into your pot and stir.
- Drain your can of kernel corn and add into the pot, add can of chiles if you'd like to add them, then pour in your uncooked white rice and just gently press down so rice is submerged but do NOT stir!
- Close your pressure cooker lid and close steam valve. Set to high pressure for 8 minutes.
- Do a quick release and remove lid. If you are adding cheese stir contents, then add shredded cheese and stir so it melts. Then serve with a bit more cheese on top!

- Brown ground beef in Dutch oven.
- Add chopped onion and saute with browned beef until transparent.
- Add creamed corn, tomato soup and water to beef and onions; bring to a simmer.
- Add noodles and bring to a boil.
- Remove from heat; when cooled a bit, mix in the worcestershire sauce; the black olives; 1/2 of the cheese and season with pepper to taste.
- Pour the mixture into a buttered 9X13 casserole dish; top withe the remaining cheese.
- Bake in oven at 350 degrees for at least 45 minutes (until noodles are done).
- NOTE: You could use as much as 2 total cups of cheese and Worcestershire can be adjusted to taste.
