MOM'S FAVORITE BAKED MAC AND CHEESE
This is a macaroni and cheese I first made 3 years ago when I was in California. When I got back to Texas I made it for my mom. This is now her favorite baked macaroni and cheese. She begs me to make it when I come to visit.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Melt butter in a medium saucepan over medium heat. Saute onion for 2 minutes. Stir in flour and cook 1 minute, stirring constantly. Stir in milk, salt, mustard and pepper; cook, stirring frequently, until mixture boils and thickens.
- Meanwhile, bring a pot of lightly salted water to a boil. Add macaroni and cook for 8 to 10 minutes or until al dente; drain.
- To the milk mixture add the Cheddar and American cheeses; stir until cheese melts. Combine macaroni and cheese sauce in a 2 quart baking dish; mix well.
- Bake in preheated oven for 30 minutes, or until hot and bubbly. Let cool 10 minutes before serving.

MOM'S BAKED MACARONI AND CHEESE
Mom's cooking is the best! Especially when it's her family-favorite Baked Macaroni and Cheese, loaded with melty Vermont white cheddar. Around our parts, it's just not a holiday meal without it.

- PREPARE MACARONI & CHEESE LAYERS: Cook macaroni in salted water; drain.
- In a 1 & 1/2-quart baking dish coated with non-stick cooking spray, layer macaroni and cheese in this order: 1. 1/2 of the macaroni, 2. one cup cheese, 3. remaining macaroni, and 4. one cup cheese. Set aside.
- PREPARE WHITE SAUCE: Melt butter in a medium saucepan over medium heat. Remove from heat and whisk in flour. Return to heat and gradually whisk in milk. Add salt and pepper. Bring to a boil, stirring; boil gently for about one minute until sauce is thickened.
- Pour white sauce evenly over the top of the macaroni. Top with remaining one cup cheese.
- For creamy macaroni and cheese, bake immediately. For "firmer" macaroni and cheese, cover and refrigerate overnight or for at least 4-6 hours before baking.
- BAKE: Bake at 375℉ for 35-45 minutes until cheese is melted and top is lightly browned.
- For a 9x13-inch pan, I make 1 & 1/2 times the recipe.
- For cheese, I always use Cabot brand Vermont sharp or extra-sharp white cheddar.

- Heat oven to 375°F. Cook and drain macaroni as directed on package using minimum cook time.

- Add milk slowly, whisking to blend.
- Cook until thick and smooth, add cheese and stir until melted.

- Preheat oven to 450 degrees F (230 degrees C). Bring a large pot of lightly salted water to a boil. Add pasta and cook for 5 to 7 minutes or until just less than al dente; drain.
- In large saucepan, heat oil over medium heat. Add flour all at once and stir vigorously until combined. Add milk a little at a time, stirring constantly until all milk is incorporated and sauce is smooth. Stir in pepper, American cheese and tomatoes. Stir until cheese is melted and mixture is smooth (if cheese starts to stick, reduce heat). Place macaroni in a 10x15 baking dish. Pour cheese mixture over macaroni, and sprinkle with bread crumbs.
- Bake 15 minutes, or until top is golden.

JACKIE'S MOM'S MACARONI & CHEESE
Jackie is my daughter. She requests this frequently, I can never make just a single recipe, it's always at least doubled. The base of this recipe is from an old Betty Crocker cookbook, but I've made it mine. This is absolutely one of our favorite comfort foods! ENJOY!!!

- 1. Cook macaroni as directed on package. Do not overcook. If it says to cook 7-9 minutes, cook NO longer than 8.
- 2. Melt butter over low heat. Measure onion powder & pepper into 1/2 cup measure. Fill remainder of cup with flour. Add flour mixture to butter in pan and mix thoroughly with a wisk. Cook over low heat stirring constantly till mixture is smooth and bubbly.
- 3. Remove from heat and stir in milk with wisk. Heat to boiling over medium heat, stirring constantly. Boil and stir for one minute.
- 4. Remove from heat and stir in cheeses till melted. Pour sauce over cooked macaroni & stir well. If desired, pour some or all of the mac n cheese into a buttered casserole, top with bread crumbs or ritz crumb in a little melted butter and bake for about 30 minutes at 375º. ENJOY!!
- 5. NOTES: Rarely do I get to bake the mac n cheese. My kids don't usually give me the chance. They dig in as soon as the mac is mixed into the cheese. The original recipe called for chopped onion and salt. My kids don't like the chunks and I figured with all that cheese additional salt is not necessary. Also tastes great with add ins such as tuna or chicken.
