1-1/2 pounds lean ground beef (90% lean)
1/2 cup chopped onion
2 teaspoons all-purpose flour
1 cup salsa
1/2 cup chili sauce
1 cup frozen corn
1 can (4 ounces) chopped green chilies
2 tablespoons brown sugar
1 sheet refrigerated pie crust
1 egg
Orange paste food coloring

Steps:

  • Preheat oven to 450°. In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. In a small bowl, combine flour, salsa and chili sauce until blended; stir into skillet. Add corn, chilies and brown sugar. , Transfer to a deep-dish 9-in. pie plate. Unroll crust; place over filling. With a sharp knife, cut out a face to resemble a jack-o'-lantern; flute edge. Beat egg and food coloring; brush over crust. , Bake until crust is golden brown and filling is bubbly, 9-11 minutes.

Description from Bonnie Hawkins of Elkhorn, Wisconsion: "This is so much fun to do - and kids love it! You'll never have to worry about leftovers. It's even good for adult parties... but you might want to increase the heat level with a hotter salsa or seasonings." Author suggests garnishing with cilantro or parsley for a pumpkin stem. I imagine you could make this pie without cutting out the Jack-O-Lantern face on the pie crust and it would be just fine.

1 pound ground beef
1/2 cup chopped onion
1 can (8 ounces) tomato sauce
1 can (8-3/4 ounces) whole kernel corn, drained
1/4 cup water
1 envelope sloppy joe mix
2 tubes (6 ounces each) refrigerated buttermilk biscuits
2 tablespoons whole milk
1/3 cup cornmeal
1 cup shredded cheddar cheese, divided
Minced fresh parsley, optional

Steps:

  • Preheat oven to 375°. In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in tomato sauce, corn, water and sloppy joe seasoning; cook over medium heat until bubbly. Reduce heat and simmer for 5 minutes; remove from heat and set aside. , Separate biscuits; flatten each to a 3-1/2-in. circle. Place milk and cornmeal in separate shallow bowls; dip both sides into milk and then into cornmeal. Place seven biscuits around the sides and three on the bottom of an ungreased 9-in. pie plate. , Press biscuits together to form a crust, leaving a scalloped edge around rim. Sprinkle with 1/2 cup cheese. Spoon meat mixture over cheese. , Bake until crust is deep golden brown, 20-25 minutes. Sprinkle with remaining cheese and, if desired, fresh parsley. Let stand 5 minutes before serving.

1/3 cup onion, chopped (1 1/2 ounces)
2 stalks celery, minced
1 garlic clove, minced
1/2 cup tomato sauce
2 teaspoons Splenda sugar substitute
1 tablespoon white vinegar
1 tablespoon Worcestershire sauce
1 teaspoon mustard
1/2 teaspoon salt
1/4 teaspoon pepper
2 eggs
1/2 cup mayonnaise (used light, and slightly less)
1/4 cup fat-free half-and-half
8 ounces fat-free cheddar cheese, shredded

Steps:

  • Brown the hamburger with the onion, celery and garlic; drain fat. Add the tomato sauce, Splenda, vinegar, Worcestershire sauce, mustard, salt and pepper. Mix well and let simmer, uncovered, about 10 minutes or so just to blend the flavors.
  • Put the meat mixture in the bottom of a greased (I used ICBINB) glass pie plate; mix in about half the cheese. Spread remaining cheese over the top. Beat the eggs in a small bowl and whisk in the mayo, cream. Pour custard mixture evenly over the cheese.
  • Bake at 350º for 30-35 minutes until nicely browned. Let stand 10 minutes before cutting.

1/2 cup water
1/4 cup butter, cubed
1 tablespoon sugar
1/2 cup all-purpose flour
1/2 teaspoon pumpkin pie spice
2 eggs
FILLING:
4 ounces cream cheese, softened
1/2 cup canned pumpkin
2 tablespoons sugar
1/2 teaspoon pumpkin pie spice
3/4 cup whipped topping
FROSTING:
1/2 cup confectioners' sugar
2 teaspoons butter, softened
1/4 teaspoon vanilla extract
1 to 2 teaspoons milk
Green and orange food coloring
1 tablespoon baking cocoa

Steps:

  • In a small saucepan, bring the water, butter and sugar to a boil. , In a small bowl, combine flour and pie spice; add to water mixture all at once and stir until a smooth ball forms. Remove from the heat; let stand for 5 minutes. Add eggs, one at a time, beating well after each addition. Continue beating until mixture is smooth and shiny. , Preheat oven to 400°. Drop 12 rounded tablespoonfuls 2 in. apart onto a greased baking sheet. Bake until golden brown, 30-35 minutes. Remove to a wire rack. Immediately split puffs open; remove tops and set aside. Discard soft dough from inside. Allow puffs to cool completely. , For filling, in a small bowl, beat the cream cheese, pumpkin, sugar and pie spice until smooth; fold in whipped topping. Pipe into cream puffs; replace tops., For frosting, in a small bowl, combine the confectioners' sugar, butter, vanilla and enough milk to achieve desired consistency. 6 -8 medium orange bell peppers, washed and dried
8 ounces orzo pasta or 8 ounces spaghetti
1 (25 ounce) jar pasta sauce, warmed (I love Mezzetta Napa Valley Bistro Tomato and Basil sauce)

Steps:

  • Carve each bell pepper as you would a Jack-O-Lantern, cutting the top off and hollowing out the inside before carving a face.
  • Discard the tops.
  • Cook pasta according to package directions.
  • Drain Pasta.
  • Mix pasta with warm sauce and spoon into each individual pepper, making sure the pasta 'oozes' out the eyes, mouth, and top of pepper.
  • Serve with breadstick 'bones'--tie a knot at the end of each breadstick, bake, and enjoy!
