Steps:
- Melt butter in large heavy skillet. Cook meat quickly until browned. Season with salt.
- Stir in mushrooms, onion and garlic; simmer for several minutes.
- Stir in wine, Jack Daniel's Tennessee Whiskey, tomatoes and sugar. Simmer 30 minutes or until tender.
- Serve with mashed potatoes.

PORK TENDERLOIN IN BOURBON-BROWN SUGAR MARINADE
I love to cook pork like this. I have also used this marinade with pork chops. I have adapted this from Lean and Loving It.

Steps:
- In a shallow glass casserole dish, combine bourbon, brown sugar, soy sauce, cilantro, lemon juice, Worcestershire sauce, water, and thyme, stirring until the sugar is dissolved.
- Add the pork, cover, and marinate in the refrigerator, turning occasionally, for 8 to 12 hours.
- Preheat the oven to 450ºF.
- Coat a baking sheet or the bottom of your roasting pan with tin foil, making sure the entire sheet is covered. The marinade tends to burn on and it's a pain to wash.
- For tenderloin: Place the tenderloins, side by side without touching, on a wire rack in a shallow roasting pan.
- For chops: Place pork chops on a baking sheet.
- Roast for 30 minutes, or until a meat thermometer registers 160ºF, basting occasionally with the marinade. Discard any unused marinade.

PORK TENDERLOIN WITH APPLES AND ONIONS
This is an easy, tasty main dish for the family on a weeknight. While the pork is in the oven, it's simple to steam a veggie side and prepare a quick salad.

- Preheat the oven to 425 degrees F (220 degrees C).
- Trim all silver skin from tenderloins; pat dry using paper towels. Rub 1 teaspoon vegetable oil over the surface of each tenderloin and rub with sea salt.
- Heat 1 tablespoon vegetable oil in a large, oven-proof skillet over medium heat until it shimmers, about 1 minute. Place tenderloins into the skillet and cook, rotating to brown all sides, about 10 minutes. Transfer pork to a large plate.
- Add remaining tablespoon oil to any drippings in the skillet. Cook apples and onions in the hot oil, stirring occasionally, until onions begin to turn translucent, about 5 minutes, adding a bit more oil if skillet gets dry.
- Meanwhile, spread Dijon mustard evenly over browned tenderloins using a pastry brush. Sprinkle 2 teaspoons thyme leaves over pork. Sprinkle remaining thyme over apple mixture and add black pepper; stir gently to combine. Nestle tenderloins into the skillet with apple mixture.
- Roast, uncovered, in the preheated oven until an instant-read thermometer inserted into the center of the tenderloins reads at least 145 degrees F (63 degrees C), about 15 minutes.
- Remove skillet from the oven and place pork onto a plate. Cover with aluminum foil and let rest.
- Meanwhile, pour chicken stock into a saucepan and cook over medium-high heat until reduced by 1/2, 8 to 10 minutes. Add to the skillet containing apple mixture.
- Heat over medium-high heat until boiling, about 5 minutes; stir in butter until melted. Slice pork and serve over apple mixture.

TENNESSEE PORK TENDERLOIN RECIPE

- Set up a charcoal grill for indirect grilling. Butterfly both tenderloins, open flat, and sprinkle evenly with whiskey. Let sit for 5 minutes. Sprinkle 1 1/2 tsp of the rub on each tenderloin, then divide the mustard and brown sugar evenly between the two tenderloins. Fold back over, wrap 5 pieces of bacon around each tenderloin, and secure bacon slices with toothpicks (soaked in water for 30 minutes). Meanwhile, make the glaze. Combine all the ingredients in a small saucepan over low heat. cook until all combined and syrupy. Once the grill is hot, put the tenderloin on the hot grate over the drip pan and cook for 1- 1 1/2 hours with the vents open and the lid down. Baste the meat with the glaze after the first 30 minutes, then every 15 minutes after that. Turn meat to get even caramelization on all sides. When finished, let rest for 5 minutes before slicing, then remove the toothpicks and slice thinly. serve warm with my Nashville-style BBQ Sauce on the side.
