The Jack Daniels® grill glaze is one of the most scrumptious sauces you will ever taste on just about any meat. Introduced in April of 1997, this glaze has become one of Friday's best-selling items. This versatile sweet-and-slightly-spicy sauce can be ordered on salmon, baby back ribs, steak, chicken, pork chops...even on chicken wings.

1 head garlic
1 tablespoon olive oil
1 ⅓ cups dark brown sugar
1 cup pineapple juice
⅔ cup water
¼ cup teriyaki sauce
1 tablespoon soy sauce
3 tablespoons lemon juice
3 tablespoons minced white onion
1 tablespoon bourbon whiskey
1 tablespoon crushed pineapple
¼ teaspoon cayenne pepper

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Cut about 1/2-inch from the top of the garlic head. Trim the roots so the garlic sits flat. Remove some of the outer layers of papery skin from the garlic, leaving enough so that the cloves stay together. Put garlic into a small casserole dish or baking dish, drizzle olive oil over it, and cover with a lid or aluminum foil.
  • Roast garlic in preheated oven until the cloves are soft, about 1 hour.
  • Stir brown sugar, pineapple juice, water, teriyaki sauce, and soy sauce together in a saucepan and bring to a boil; reduce heat to low and keep at simmer.
  • Squeeze sides of the garlic until the pasty roasted garlic emerges. Measure 2 teaspoons roasted garlic into the saucepan and incorporate into the sauce with a whisk. Reserve remaining roasted garlic for another use.
  • Stir lemon juice, white onion, bourbon whiskey, pineapple, and cayenne pepper into the sauce; bring to a simmer and cook until the volume of the liquid reduces by half and is thick and syrup-like, 40 to 50 minutes.

Simply the best steakhouse steak sauce! One of my favorite summer dishes is cooking steak on the grill with an assortment of cooked vegetables.

1 tablespoon olive oil
1 garlic clove (, minced)
1 tablespoon Worcestershire sauce
1 tablespoon balsamic vinegar or 1 tablespoon white vinegar
1 teaspoon yellow mustard
1 tablespoon soy sauce
pepper
----makes 1 cup
2/3 cup water
1 tablespoon olive oil 1
cup pineapple juice
3 tablespoons lemon juice
¼ cup teriyaki sauce
1 tablespoon soy sauce
1 tablespoon Jack Daniels Whiskey
1 1/3 cups dark brown sugar
3 tablespoons white onion (, minced)

Steps:

  • Mix all ingredients together and place steaks into freezer bag with marinade, preferably overnight.
  • Preheat oven to 325 degrees F. Cut 1/2 inch off the top of garlic head. Cut roots so that the garlic will sit flat. Remove papery skin, leaving enough so cloves stay together. In a small oven safe casserole dish, place garlic in dish and drizzle olive oil over it then cover with foil. Place in oven and allow to bake for 1 hour. Remove from oven and let cool until safe to touch. In a medium saucepan, combine water, soy sauce, teriyaki sauce, pineapple juice and brown sugar. Heat over medium/high heat, stirring occasionally until mixture boils then reduce heat until mixture is just simmering. In a small bowl, squeeze the sides of the head of garlic until the pasty roasted garlic is squeezed out. Measure 2 teaspoons into the saucepan and whisk. Add remaining ingredients to the pan and whisk to combine. Allow mixture to simmer for 40 to 50 minutes or until the sauce has reduced by 1/2 and is think and syrup like. Do not allow to boil over.

1 small head of garlic
olive oil (scant amount)
2/3 cup water
1 cup pineapple juice
1/4 cup teriyaki sauce
1 tablespoon soy sauce
1-1/3 cup brown sugar
juice of half a lemon
1 small onion, minced
1 tablespoon Jack Daniels Whiskey
1 tablespoon crushed pineapple
1/4 teaspoon cayenne pepper

Steps:

  • Preheat the oven to 325°F. Using a sharp knife, slice off about a quarter-inch off the top of the head of garlic. Don't be too concerned if the smaller cloves are still completely intact. Place in a ramekin, drizzle the top with a little olive oil, cover the ramekin with foil, and roast in the oven for 1 hour. (You might want to roast some more garlic together with this one for other purposes; just use a bigger roasting pan.) Let the garlic cool and set aside.
  • In a heavy-bottomed medium saucepan, combine all of the remaining ingredients (water to cayenne pepper). Squeeze out all the soft fleshy roasted garlic insides into a small container (just to make sure none of the garlic skins go into the sauce) and add it all to the saucepan. Give the sauce a stir and set it over medium-high heat, stirring occasionally until it comes to a boil. Reduce the heat to a simmer (very low heat) and keep simmering, stirring occasionally, for about 45 minutes, or until the sauce is reduced to a third and is thick and syrupy.
  • This glaze doesn't need to be brushed over the meat before going on the grill (the high sugar content will cause it to char). Just brush it on the meat after it's off the heat. Serve on the side as well.

6 boneless pork loin chops (3 pounds total)
2 cup orange juice
1/2 cup packed brown sugar
1/2 cup kosher salt
8 garlic cloves (pressed)
1 bunch fresh thyme
3 bay leaves
2 tbs peppercorns
1 cinnamon stick
2 tbs canola oil
3/4 cup molasses
1/4 cup apple cider vinegar
1 rosemary sprig
4 tbs cut-up unsalted butter
1/4 cup bourbon
Kosher salt and black pepper

Steps:

  • Bring orange juice, brown sugar, salt, garlic, thyme, bay leaves, peppercorns, cinnamon, and 6 cups water to a simmer in a large pot. Remove from heat. Cool to room temperature. Add pork and brine 12 hours.
  • Remove pork from brine and rinse under cold water. Pat pork dry with paper towels.
  • Preheat oven to 350F/180C. Heat oil in a large skillet over medium-high heat. Cook pork, in batches, turning once, until golden brown, 4 to 6 minutes. Transfer to a rimmed baking sheet. Bake until the internal temperature reaches 160F/70C 4 to 6 minutes. Let rest 5 minutes. Serve drizzled with glaze.
  • Make the Glaze:
  • Combine molasses, apple cider vinegar, and rosemary in a small saucepan. Cook over medium heat until reduced to 2/3 cup, 12 to 15 minutes.
  • Whisk in unsalted butter and bourbon; continue to cook until thickened, 1 to 2 minutes.
  • Season with kosher salt and black pepper.

1 head of garlic
1 Tbsp. olive oil
2/3 cup water
1 cup pineapple juice
1/4 cup teriyaki sauce
1 Tbsp. soy sauce
1 1/3 cup dark brown sugar
3 Tbsp. lemon juice
3 Tbsp. minced white onion
1 Tbsp. Jack Daniels Whiskey
1 Tbsp. crushed pineapple
1/4 tsp. cayenne pepper

Steps:

  • Preheat oven to 325F. Slice a 1/2" off the top of the garlic head. Cut the root end to sit flat. Take off some of the outer layers of skin but leave enough to hold the head together. Drizzle with olive oil and wrap in foil. Bake it for 1 hour. Let it cool enough to handle then squeeze out the garlic paste and set aside.
  • Add the water, pineapple juice, teriyaki sauce, soy sauce and brown sugar to a medium pan over medium high heat. Bring the mixture to a boil stirring occasionally. Reduce heat to a simmer.
  • Whisk in the garlic and then the remaining ingredients to the pan. Let simmer for 40-50 min. or until sauce is reduced by half. It should be thick and syrupy and coat the back of a wooden spoon.

  • Let simmer for 35-45 minutes or until sauce has reduced by 1/2 and is thick and syrupy.
  • Make sure it doesn't boil over.
  • To use, grill meat until almost done, then use the glaze otherwise it will burn.

1/2 cup Jack Daniel's whiskey (or other favorite brand of whiskey)
2 cups firmly packed brown sugar
2 beef bouillon cubes
1/4 cup Worcestershire sauce
1 tablespoon onion powder
1 tablespoon garlic powder
1 tablespoon Tabasco sauce (or less, to taste)

Steps:

  • In a small saucepan, combine the pineapple juice, whiskey, brown sugar, beef bouillon cubes, Worcestershire sauce, onion powder, garlic powder and Tabasco sauce. Bring to a boil, reduce heat and simmer for 15 minutes. Allow to cool and use as a glaze on any grilled meat.
