JACK DANIEL'S GLAZED HAM (WITH ALLSPICE & ORANGE)
I was looking for a more savory than sweet recipe to prepare my x-mas ham. I found this on another web site. I didn't need to change anything but if I don't have Jack Daniel's I will sub Southern Comfort with good results. You could also add whole cloves to the outside of the ham to intensify the flavour. I normally don't bother with the orange slices & endive but it would be a great way to decorate the ham for serving.

- Preheat oven to 325°F
- On a rack in a roasting pan, roast ham, uncovered, for 20 mins per lb, or until a meat thermometer reads 140°F
- Before ham is done, in a small saucepan, mix together the brown sugar, Jack Daniel's whiskey, orange peel, cloves & allspice. Simmer, over medium-low heat, for 15 mins, or until slightly thickened. Brush the glaze over the ham 20 mins before it is done.
- Serve the ham garnished with orange slices & endive, if desired.

This is a recipe that our family uses to glaze ham. You can also double the recipe so that you will have plenty to serve as a sauce on the side. It's a must with a holiday ham.

Steps:
- Put all the ingredients into a small saucepan and heat over a medium heat until the jam is liquified and the mixture begins to become like syrup.
- You might want to stir this mixture to make sure it doesn't stick or burn because of the high sugar content.
- Baste ham during the baking process and pour some of the glaze up into a bowl to use as a sauce on the side.

- Preheat oven to 325 degrees F (165 degrees C).
- Cut about 1/2-inch from the top of the garlic head. Trim the roots so the garlic sits flat. Remove some of the outer layers of papery skin from the garlic, leaving enough so that the cloves stay together. Put garlic into a small casserole dish or baking dish, drizzle olive oil over it, and cover with a lid or aluminum foil.
- Roast garlic in preheated oven until the cloves are soft, about 1 hour.
- Stir brown sugar, pineapple juice, water, teriyaki sauce, and soy sauce together in a saucepan and bring to a boil; reduce heat to low and keep at simmer.
- Squeeze sides of the garlic until the pasty roasted garlic emerges. Measure 2 teaspoons roasted garlic into the saucepan and incorporate into the sauce with a whisk. Reserve remaining roasted garlic for another use.
- Stir lemon juice, white onion, bourbon whiskey, pineapple, and cayenne pepper into the sauce; bring to a simmer and cook until the volume of the liquid reduces by half and is thick and syrup-like, 40 to 50 minutes.

SWEET BOURBON HAM
My dad made this ham for Christmas about 15 years ago, and we loved it. I haven't made a different ham since and haven't loved one as much.

- Preheat oven to 325 degrees F (165 degrees C).
- Remove skin and excess fat from ham, leaving a fat layer about 1/4-inch thick. Score ham in a diamond pattern with a sharp knife. Push cloves into the center of the scored diamond shapes. Place ham with cut side down into a roasting pan.
- Bake ham in the preheated oven until an instant-read meat thermometer inserted into the thickest part of the meat, not touching bone, reads 125 degrees F (52 degrees C), about 2 hours.
- Combine brown sugar, whiskey, and black pepper in a bowl until glaze is smooth.
- Raise oven temperature to 375 degrees F (190 degrees C).
- Baste ham with 1/3 the whiskey glaze. Return to oven and bake until internal temperature reaches 140 degrees F (60 degrees C), basting ham with whiskey glaze every 10 minutes. Cover ham loosely with a tent of aluminum foil if ham browns too quickly.
- Let ham rest for 15 minutes before carving.
