1 head garlic
1 tablespoon olive oil
1 ⅓ cups dark brown sugar
1 cup pineapple juice
⅔ cup water
¼ cup teriyaki sauce
1 tablespoon soy sauce
3 tablespoons lemon juice
3 tablespoons minced white onion
1 tablespoon bourbon whiskey
1 tablespoon crushed pineapple
¼ teaspoon cayenne pepper

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Cut about 1/2-inch from the top of the garlic head. Trim the roots so the garlic sits flat. Remove some of the outer layers of papery skin from the garlic, leaving enough so that the cloves stay together. Put garlic into a small casserole dish or baking dish, drizzle olive oil over it, and cover with a lid or aluminum foil.
  • Roast garlic in preheated oven until the cloves are soft, about 1 hour.
  • Stir brown sugar, pineapple juice, water, teriyaki sauce, and soy sauce together in a saucepan and bring to a boil; reduce heat to low and keep at simmer.
  • Squeeze sides of the garlic until the pasty roasted garlic emerges. Measure 2 teaspoons roasted garlic into the saucepan and incorporate into the sauce with a whisk. Reserve remaining roasted garlic for another use.
  • Stir lemon juice, white onion, bourbon whiskey, pineapple, and cayenne pepper into the sauce; bring to a simmer and cook until the volume of the liquid reduces by half and is thick and syrup-like, 40 to 50 minutes.

1/2 cup + 2 tbsp Jack Daniel's Tennessee Whiskey
4 cloves garlic (finely chopped)
1/2 cup onion (finely chopped)
2 cups ketchup
1/3 cup white vinegar
3/4 cup fancy molasses (regular molasses will also work)
1/2 cup brown sugar
1/4 cup tomato paste
3 tbsp Worcestershire sauce
1 tsp Liquid Smoke
1/2 tsp Frank's Red Hot Sauce (add more if you like it spicy)
1/2 tsp freshly ground pepper
1 tsp Kosher salt

Steps:

  • In a large sauce pan combine 1/2 cup Jack Daniel's, onion and garlic. Saute until onions are translucent (about 7 minutes).
  • Stir in all remaining ingredients except the 2 tablespoons of Jack Daniel's whiskey.
  • Bring to a slow boil, then reduce heat and simmer on low heat uncovered for 20-30 minutes.
  • Stir in remaining 2 tablespoons of Jack Daniel's and simmer for an additional 5-10 minutes.
  • Brush onto meat, poultry, seafood of your choice for grilling.
  • Use immediately or store in refrigerator for up to one week.

1 cup pineapple juice
1/3 cup Jack Daniels Whiskey
1/4 cup unsulfered molasses
1 tablespoon soy sauce
1 teaspoon onion powder
1 teaspoon garlic powder

Steps:

  • Combine all the ingredients in a medium saucepan and bring to a boil over medium-high heat.
  • Reduce heat and simmer for 40-50 minutes, until thickened.
  • Refrigerate - Allow the sauce to cool for about 1 hour then transfer it to an airtight container and refrigerate for up to 3 weeks.
  • Freeze - Allow the sauce to cool for about 2 hours then transfer it to a freezer-safe container and freeze for up to 3 months. Thaw overnight in the refrigerator.

1/2 large onion, minced
4 garlic cloves, minced
3/4 cup Jack Daniels Whiskey
2 cups catsup
1/3 cup vinegar
1/4 cup Worcestershire sauce
1/2 cup brown sugar, packed
3/4 cup molasses
1/2 teaspoon black pepper
1/2 tablespoon salt
1/4 cup tomato paste
2 tablespoons liquid smoke
1/3 teaspoon Tabasco sauce

Steps:

  • Combine onion, garlic, and Jack Daniel's Whiskey in a 3-quart saucepan.
  • Saute' until onion and garlic are translucent, approximately 10 minutes. Remove from heat and light mixture; flame for 20 seconds.
  • Add all remaining ingredients.
  • Bring to a boil, then turn down to a medium simmer.
  • Simmer 20 minutes, stirring constantly.
  • Run sauce through a medium strainer to remove onion and garlic bits if you prefer a smoother sauce.
  • Cool and enjoy.
  • NOTE: This sauce gets better with age. If time permits, keep it in the refrigerator a day or so to develop a deeper, richer taste.

Sweet, spicy, and flavored with Jack Daniels whiskey. Great on chicken and pork chops. I came up with this recipe after experimenting in my kitchen. Ketchup may be replaced by your favorite bottled barbeque sauce. You may have to adjust the ingredients to suit your taste. The key is adding just enough whiskey to flavor, not overpower, the dish.

1 cup ketchup
2 tablespoons steak sauce
1 teaspoon garlic salt
2 teaspoons liquid smoke flavoring
1 teaspoon onion powder
3 tablespoons brown sugar
2 teaspoons lemon juice
4 drops hot pepper sauce, or to taste
4 dashes Worcestershire sauce
2 tablespoons whiskey

Steps:

  • In a saucepan combine ketchup, steak sauce, garlic salt, liquid smoke, onion powder and brown sugar. Add lemon juice, pepper sauce, Worcestershire sauce and whiskey. Warm over medium low heat until simmering.
  • Refrigerate for at least one hour before using, to let flavors mingle. Brush on meat during the last few minutes of grilling or baking.
  • Not recommended for marinating unless you omit the lemon juice, as the acid makes the chicken grainy.

1 bottle of either Jack Daniel's Smokey Sweet Glaze or Jack Daniel's Hot Chilli Barbecue Sauce
Two sides/racks Baby Back Ribs approx 500 -600grms each
2 Tablespoons olive oil
20 ml salt
10 ml freshly ground black pepper
10 ml lemon pepper
20 ml cayenne pepper
20 ml mild chilli powder
10 ml dry mustard
10 ml brown sugar
5 ml garlic powder
5 ml cinnamon

Steps:

  • Ask your butcher to prep and remove the membrane on the rack of ribs. Thoroughly combine all the dry ingredients in a mixing bowl to make Barbecue rib rub. Apply a very small amount of olive oil to both sides of the ribs. Season the ribs lightly on both sides with Barbecue rib rub mix. Place in baking tray and leave covered with foil in fridge for 1hr or overnight to infuse. Pre-heat the oven to 180oC. Place tray of foiled ribs in middle oven shelf for 2hrs. The ribs are done when the meat begins to shrink back from the bones a little. They should be nearly tender enough to tear apart with your fingers. Drain the ribs and allow to cool. The ribs can be oven baked the day before and stored in fridge for use the next day. Place the ribs with the meat side down directly over the coals if using charcoal or if you are using a gas grill over the burner for three to four minutes to sear the ribs. Turn the ribs over with the meat side up for an additional two to three minutes. Gently heat either the Jack Daniel's Smokey Sweet Glaze or the Jack Daniel's Hot Chilli BBQ sauce in a pan and allow to reduce and thicken to form a glaze. Brush glaze on to the grilling ribs and continue to grill for a few minutes. Remove from the grill and wait for 1 to 2 minutes. Brush one more time with the warmed Jack Daniel's Sauce and cut into portions of two bones each and place on a platter with a dipping bowl of the warm Jack Daniels's Smokey Sweet Glaze or Hot Chilli Barbecue Sauce. Note: Adjust the Barbecue rib rub amounts of spices to you suit your taste. It can be made in advance and stored in an airtight container for up to one year.

  • Add the ketchup, molasses, brown sugar, vinegar, tomato paste, Worcestershire sauce, salt, pepper, smoke flavoring, and Tabasco sauce.
  • Bring to boil. Reduce the heat to low and simmer, uncovered, until reduced and thickened. Stir occasionally, This will take about 15 to 25 minutes, and a spatter screen is recommended.
  • Add more Jack Daniel's whiskey if a stronger flavor is desired. Let cool for several minutes, and use immediately or store in an airtight container in the fridge for up to a week.

1/2 Cup Honey (Thick)
1/2 Cup Maple Syrup
1/2 Cup BBQ sauce (Kraft Plain BBQ Sauce or other common brand names- use the plain versions)
1/2 Tablespoon Cayenne
1/4 Cup Apple Cider Vinegar-
1 Tablespoon Corn Starch

Steps:

  • Simply mix all ingredients in a medium pot. Stir over medium/low heat for about 15 minutes stirring occasionally. I like to make sure all the ingredients mix in well so there are no lumps.
  • Once the sauce is mixed well, stir in some corn starch to thicken slightly.
  • Cool and place into squeeze bottles.
  • Refrigerate up to 30 days.
